If you like your bread pudding full of custard after baking, make the same amount of custard in this recipe and use less bread (or use the same amount of bread and use more custard), because the bread will soak up most of the liquid. Refer to above post for more info.

450 g/16oz/16 slices 2-inch thick/one loaf day-old bread*
1 cup pecans ((or raisins, chocolate chips, cranberries, etc.))
6 large eggs
1 cup (200 g/7 oz) granulated sugar
4 cups heavy cream ((or milk, half & half, or a combination))
1 tablespoon vanilla extract

Steps:

  • Grease a 9x13-inch pan, and set aside.
  • Cut bread into 2-inch cubes. In a large bowl, mix together bread cubes and pecans. Place the mixture evenly in the pan.
  • In a large bowl, whisk eggs and sugar. Add cream and vanilla extract, and whisk to combine. Pour cream mixture over bread mixture in the pan until completely covered. Gently press down the bread cubes to fully cover with custard. It's best to let the casserole sit for 1 hour, covered, at room temperature, but if you're in a hurry, bake it right away.
  • Preheat oven to 325F/160C. Bake for 40-50 minutes or until custard has set and the top is golden brown. If the top is browning too fast, cover loosely with aluminum foil. Don't over bake or the bread will be dry. Let the pudding cool slightly before serving.
  • Bread pudding can be served warm or cold. It is best the same dat it's made.

1 loaf day-old challah bread (cubed into 1-inch pieces)
5 large eggs (lightly beaten)
1 cup (200 grams) granulated sugar
4 cups (960 ml) whole milk
1 teaspoon pure vanilla extract
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon

Steps:

  • Spray a 9x13 baking dish with nonstick cooking spray. Place the cubed challah bread into the prepared baking dish and spread it around into an even layer. Set aside.
  • In a very large mixing bowl, whisk together the eggs, sugar, milk, vanilla, nutmeg, and cinnamon until fully combined. Pour the mixture evenly over the bread in the prepared baking pan, making sure all of the bread is coated. Allow to sit and soak up the mixture for about 15 minutes.
  • Meanwhile, preheat the oven to 350°F (177°C). Once the 15 minutes is over, place the bread pudding in the oven and bake for 45 to 50 minutes or until the top is set.
  • Remove from the oven and allow to cool slightly before serving.

This recipe is here to give you a new lease on the classic dessert. It's almost too easy, but yields utterly decadent results. The key is in the ratio of bread to custard base; this recipe calls for quite a bit of bread, but also has an adequate amount of liquid components to balance it out.

1 cup light brown sugar

2 tablespoons white sugar

Steps:

  • Prepare the pudding. Whisk eggs in a large mixing bowl to beat lightly. Whisk in milk, 1 cup white sugar, 1 cup brown sugar, heavy cream, butter, vanilla extract, and salt until evenly combined.

1 long loaf of French Bread
1 cup raisins

½ cup dark rum or whisky ((can use rum extract or skip it altogether))
½ cup salted butter, (melted and cooled)
2 cups powdered sugar

Steps:

  • Preheat the oven to 350F degrees. Spray a 2-quart casserole dish with nonstick cooking spray.
  • Cut or rip the french loaf into bite size pieces.
  • In a large skillet over medium heat, melt the 1/2 cup of butter and brown the bread. The bread should absorb all of the butter in the pan. Stir continuously.
  • When all the butter is absorbed, pour the bread into a 2-quart casserole dish. Sprinkle the raisins evenly over the bread.
  • In a large bowl mix the milk, eggs, sugar, extract, and rum.
  • Pour over the bread and raisins in the casserole dish.
  • Bake for 1 hour, checking at the 40 minute mark. The casserole is done when the liquid is set, top has browned, and is pulling away from the sides of the casserole dish.
  • To make the glaze, combine ingredients with a whisk and pour over the warm bread pudding. Then serve.

4 lbs coarsely chopped bread
1 teaspoon ground cloves
1 teaspoon ground nutmeg
1 tablespoon ground cinnamon
1 lb brown sugar (2 1/4 cups, tightly packed)
1/4 lb real butter (Melted)
1 quart pasteurized egg
1 quart half-and-half cream
1 quart heavy whipping cream
1/8 cup bourbon vanilla extract
1/2 cup jack daniel's Bourbon
15 -16 ounces raisins

Steps:

  • Pre-heat oven at 325°. Cut bread into squares. Place in large container and allow to "dry" during the remaining processing.
  • In a large container, combine brown sugar, ground cloves, nutmeg and cinnamon. With a soft spatula, mix well until large lumps and dry seasonings are blended.
  • Add pasteurized eggs, melted butter, half & half, heavy whip cream, bourbon vanilla and Jack Daniel's. Using a wire whip, mix well until all brown sugar, etc... are blended.
  • Add cubed bread to wet mixture. Using a soft spatula, gently mix bread cubes into the mixture. Half way through this process, add the raisins.
  • Spray 4 inch deep full size hotel pan with spray release. Pour bread mixture into coated pan. Use a soft spatula to remove all ingredients from the container. Do NOT pat to level mixture. "Rock" pan back and forth to even mixture in the pan. The surface should remain "jagged".
  • Place immediately into the pre-heated 325° oven. Set a timer for 40 minutes. Reset for an additional 5 minutes if needed. Pudding is ready when a toothpick can be stuck in and pulled out of the middle of the pudding clean and moist.
  • Do not overcook the pudding or it will be dry.

Steps:

  • For the bread pudding: Butter a 13-by-9-inch baking dish with 1 tablespoon butter. Put the bread cubes in the dish.
  • Whisk together the half-and-half, 3/4 cup of the sugar, vanilla, 1 teaspoon of the cinnamon, salt and eggs in a large bowl. Pour this mixture over the bread. Cover and refrigerate for 1 hour.
  • Preheat the oven to 325 degrees F. Melt the remaining 3 tablespoons butter in a microwave or on the stove and drizzle over the top of the bread pudding. Combine the remaining 2 tablespoons sugar and 1/2 teaspoon cinnamon and sprinkle over the top.

  • Serve the bread pudding with a drizzle of sauce. Garnish with additional berries and a scoop of vanilla ice cream or whipped cream.
