2 tablespoons vegetable oil
1 tablespoon garlic, coarsely chopped
2 tablespoons red curry paste
1/2 lb ground beef or 1/2 lb ground pork
1 cup mushroom, sliced
3 cups chicken broth
1 cup green beans, cut into 1-inch lengths
2 medium zucchini or 2 long Japanese eggplants, halved longwise and cut into 1-inch lengths
4 wild fresh lime leaves, cut into quarters (optional)
3 tablespoons fish sauce
1 tablespoon sugar
1/2 teaspoon salt
holy Thai basil, handful

Steps:

  • Heat oil in large skillet over medium heat, add garlic, toss well. Add curry paste and cook, mashing and stirring to dissolve it, until fragrant and softened, about 2-3 minutes.
  • Crumble in ground beef and then add mushrooms. Cook, tossing often, until meat and mushrooms are browned and seasoned with curry paste, 2-3 minute.
  • Add chicken broth, green beans, zucchini, lime leaves (if using), fish sauce, sugar, and salt and bring to gentle boil. Cook 3-5 minutes, until veggies are tender and meat is cooked through. Stir in basil leaves and remove from heat. Transfer to serving dish & serve hot or warm.

1 small onion, diced
1 pound ground beef
2 medium tomatoes, chopped
1 tablespoon curry powder

1 cup water, or as needed
2 ounces fatback, sliced into small rectangles
2 cubes chicken bouillon
1 ½ teaspoons onion powder
1 teaspoon garlic powder
1 teaspoon seasoned salt
½ teaspoon ground black pepper

Steps:

  • Empty canned green beans with liquid into a large saucepan. Add enough water to just cover beans. Stir in fatback, bouillon, onion powder, garlic powder, seasoned salt, and pepper until well combined; bring to a boil.
  • Boil for 10 minutes, then reduce heat to low and simmer for 30 more minutes.

Some of the ingredients may be difficult to find, but they really are essential. This goes very well with rice as a vegetarian entree or alone as a side dish.

1 tablespoon vegetable oil
1 onion, sliced
1 serrano peppers, thinly sliced
1 clove garlic, crushed
5 fresh curry leaves
1 tablespoon curry powder
½ teaspoon fenugreek seeds
¼ teaspoon ground turmeric
salt to taste
1 pound fresh green beans, trimmed
½ cup coconut milk
2 tablespoons lime juice

Steps:

  • Heat the oil in a saucepan over medium-high heat. Cook the onion, serrano pepper, garlic, and curry leaves in the oil until the onions are golden brown. Stir in the curry powder, fenugreek seeds, turmeric, and salt; cook another 3 minutes. Add the green beans to the mixture and stir until evenly coated. My mom made this all the time. My dad and I loved it. It is so simple to make it was one of the first things I made on my own. The basic recipe has only four ingredients.You can customize to your own taste. I would try it first the way it is and modify as you see fit. I sometimes add onion and garlic when browning meat. I also have some nice hot curry that I mix with my regular curry to spice it up a bit.

1 lb ground beef
1 (10 3/4 ounce) can tomato soup (I use Campbell's )
1 (15 ounce) can dark red kidney beans (undrained)
1 tablespoon curry powder (very the amount depending on your taste)

Steps:

  • Brown the ground beef in a 2 1/2 to 3 quart pot. Drain Fat.
  • Stir in curry powder and heat for one minute.
  • Add tomato soup and kidney beans.
  • Simmer all for about 10 minutes stirring occasionally.
  • Serve alone in a bowl like chili or over rice.
