2 (18 ounce) bottles barbeque sauce
1 onion, quartered
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Place spareribs in a large stock pot with barbeque sauce, onion, salt, and pepper. Pour in enough water to cover. Bring to a low boil, and cook approximately 40 minutes.
  • Preheat grill for high heat.
  • Lightly oil grate. Remove spareribs from the stock pot, and place on the prepared grill. Use the barbeque sauce in the saucepan to baste ribs while cooking. Grill ribs, basting and turning frequently, for 20 minutes, or until nicely browned.

  • Preheat oven to 250 degrees F (120 degrees C).
  • In a shallow baking pan or roaster, place ribs in a single layer; salt if desired. Spread the garlic on the ribs, then place the lemon slices on top. 2 teaspoons liquid smoke, optional
1/2 teaspoon salt
1 cup water
BARBECUE SAUCE:
2/3 cup chopped onion
1 tablespoon canola oil
3/4 cup each water and ketchup
1/3 cup lemon juice
3 tablespoons sugar
3 tablespoons Worcestershire sauce
2 tablespoons prepared mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon liquid smoke, optional

Steps:

  • Place ribs in an 11x7-in. baking dish coated with cooking spray. Sprinkle with liquid smoke if desired and salt. Add water to pan. Cover and bake at 350° for 1 hour., Meanwhile, in a saucepan, saute onion in oil until tender. Add the remaining sauce ingredients; bring to a boil. My Grandma's recipe for country style pork ribs baked in the oven are literally fall-off-the-bone tender and topped with jammy sweet onions in a homemade BBQ sauce.

5 pounds bone-in country style pork ribs
kosher salt and freshly ground black pepper
1/4 cup all-purpose flour
2 tablespoons canola oil
2 medium yellow onions (, sliced 3/8" thick)
3/4 cup ketchup
3/4 cup water
1/2 cup granulated sugar
1/3 cup dry sherry wine
2 tablespoons apple cider vinegar
1 1/2 tablespoons soy sauce
1 1/2 tablespoons Worcestershire sauce
2 cloves garlic (, pressed or minced)
1 teaspoon kosher salt
3/4 teaspoon paprika
3/4 teaspoon chili powder

Steps:

  • Line a baking sheet with a cooling rack. Working in batches, season the pork ribs on all sides with kosher salt and black pepper and lightly toss in flour. Transfer the ribs to the baking sheet and set aside.
  • Add 1 tablespoon of the oil to a large cast iron skillet or dutch oven (with a lid) over medium/medium high heat. When the oil is warm and shimmering, brown the ribs in batches, turning on all sides until golden, about 15-20 minutes per batch. Be careful not to overcrowd the pan or the ribs will steam and won't get that delicious golden crust.
  • Transfer the browned ribs back to the baking sheet and wipe any burned pieces out of the pan. Add the remaining oil, and continue browning the rest of the ribs.
  • While the ribs are cooking, mix the BBQ sauce ingredients together and preheat the oven to 325°F.
  • Add all of the ribs back to the dutch oven, snuggling them evenly together. Scatter the tops with the sliced onions. Whisk the BBQ sauce and pour evenly over the onions and ribs.
  • Cover tightly with the lid and bake for 1 1/2 to 2 hours or until the onions are soft and jammy and the pork is tender. Midway through cooking, I usually open the oven and spoon the sauce over the ribs and onions.
  • Skim any excess fat from the sauce if needed (depending on how fatty the ribs are) and serve hot with au gratin or mashed potatoes with the sauce and onions spooned on top.

Country-style ribs are not actually ribs. This cut of meat comes from the shoulder of the pig, where it is sliced in half under the blade bone and then cut into long strips to resemble ribs. As a result, much like other tough cuts of meat, country-style ribs benefit from any type of low and slow cooking. Tender, tangy, and accented with just a hint of bourbon, these ribs are a messy, saucy affair. Bone-in country-style ribs are recommended for this recipe since it's the bones that are packed with the most flavor (you can use boneless ribs, but they may require less cooking time).

1 1/2 cups ketchup
1/2 cup cola (not diet)
3 tablespoons tomato paste

2 tablespoons American spicy ketchup-based sauce (such as Heinz brand chili sauce) or homemade chili sauce
2 tablespoons good-quality bourbon
2 tablespoons cider vinegar

1 teaspoon Worcestershire sauce
1 teaspoon chili powder

Steps:

  • Trim any excess fat from the ribs and cut into approximately 5-inch-long pieces. Lightly season the ribs with salt and pepper.
  • Heat a large sauté pan on the stovetop over medium-high heat. Add the oil, then the ribs, and brown well on all sides. (To avoid overcrowding the pan, you may have to do this in batches.)
  • While the ribs are searing, spray the inside of the slow cooker with cooking spray. Add the ketchup, cola, tomato paste, garlic, brown sugar, chili sauce, bourbon, cider vinegar, sorghum syrup, Worcestershire sauce, chili powder, and cayenne. Stir well. 4 -5 lbs country-style spareribs
1 tablespoon olive oil
2 (5/8 ounce) packets Italian salad dressing mix (I use Good Season's Zesty Italian)
1 cup brown sugar, firmly packed
1 cup apple cider vinegar
3/4 cup catsup
2 tablespoons honey
1 (12 ounce) jar chili sauce
2 tablespoons Worcestershire sauce
2 tablespoons lemon juice
1/2 teaspoon dry mustard
1 minced garlic clove
1 tablespoon frank's hot sauce (more or less to taste)

Steps:

  • Preheat oven to 325°F.
  • Place spare ribs in a large bowl or gallon size zip-lock bag.
  • Add olive oil and zesty Italian dressing packets.
  • Mix well. Refrigerate and marinade for at least 1 hour. (You can leave it in the marinade over night if you want).
  • Microwave on high for 10-15 minutes, or until ribs are brown, but not cooked through. I microwave them in the bag but you can put them in a microwave safe dish if you prefer. (I use a freezer bag which is thicker and holds up to the heat. I open the seal to vent and place it in a bowl or on a plate - just in case - but have never had a problem).
  • While ribs are in microwave, combine the remaining ingredients in a medium saucepan and cook over medium heat until well dissolved and heated through.
  • Remove ribs from bag and place in a deep 9 x 13 pan that has been prepared with non-stick cooking spray.
  • Pour sauce over ribs, covering evenly.
  • Bake for 1 hour, until ribs are cooked through.
  • Baste occasionally, if desired.
  • NOTE:***These can also be cooked on the grill with delicious results, just baste them frequently and watch them carefully so they do not burn.
