These green beans and potatoes are a spectacular dish. I have been making them for years in large quantities for special events at my church. - Place the turkey tails and onion into a 4 quart Dutch oven and fill half way full with water. Season with salt, pepper and garlic powder. Bring to a boil, then cover and simmer over low heat until meat falls off the bones, about 2 hours. Remove the bones and skin; return the meat to the pot. Discard bones and skin.
- Add the green beans to the Dutch oven and simmer for 20 minutes, then add the potatoes. Simmer for 10 to 15 minutes more, or until they can be easily pierced with a fork.

- Preheat the oven to 350 degrees F. Spray an 8-by-8-inch flameproof baking dish with cooking spray.
- In a skillet over medium heat, melt the butter. Add the onions and saute until translucent, 3 to 4 minutes. Add the flour and stir until combined. Cook 1 to 2 minutes to remove the raw flour taste. Add the garlic, 1 teaspoon salt, 1 teaspoon pepper, the cayenne and mustard powder. Whisk in the milk. Allow to cook and thicken slightly, about 3 minutes. Remove from the heat.
- Line the baking dish with a crisscrossed layer of country ham, then a layer of slightly overlapping potatoes, then about 2/3 cup sauce. Repeat the layering until all the ingredients are used. You should have a total of 3 sets of layers, ending with the sauce on top. Top with the Gruyere and cover with foil. Bake until the potatoes are tender, about 1 hour.
- Remove the foil and spoon off any fat that has pooled in the baking dish, if needed. Switch the oven to broil and broil until light golden brown, 3 to 5 minutes. Garnish with green onions before serving.

- 1. Wash, peel and cut up potatoes. Place in microwave-safe bowl and cover with water. Add about 1/2 to 1 teaspoon salt. Microwave on high for about 8 minutes. Drain well.

- 1. In a large soup pot add all ingredients except potatoes - heat over medium heat until it comes to a boil. You want to have enough liquid to just barely cover the beans. Reduce heat and simmer another 2 - 3 hours.
- 2. Check for seasoning and adjust as needed. If it tastes a little salty it's OK, the potatoes will soak some of that up. The beans should be very tender and beginning to fall apart.
- 3. Add the new potatoes and push them down into the beans so that they're covered with liquid. If more liquid is needed add more chicken stock or water.
- 4. Raise heat to medium and bring liquid to a boil - cover and boil for 20 minutes or until potatoes are done. Taste again and adjust seasoning as needed. Enjoy!
- 5. NOTES: The beer and the bacon grease make all the difference in the taste so don't leave that out.

- 1. Peel and chunk potatoes into large chunk pieces. Place them in a large pot, cover with water and cook for 10 minutes only. Potatoes should be still firm to touch and not completely cooked through.
- 2. I used my electric skillet for the recipe this time, but I also love using a cast Iron skillet for it's even temperature cooking. Add in the corn syrup, vanilla Bean Paste, Brown Sugar, VIETNAMESE CINNAMON & soften butter, heat just until butter melts, then stir to blend mixture together.
- 3. Once butter is melted and mixture begins to slowly simmer, add in the orange juice, apple juice or water, and stir.
- 4. Now add in the partially cooked potatoes, lower the heat setting to low, and continue to cook slowly.
- 5. Continue cooking and stir to prevent potatoes from sticking to bottom of skillet, REMEMBER YOU MUST COOK SLOWLY, SO BE PATIENT. Glaze will gradually begin to caramelize and thicken, continue glazing and coating the potatoes, moving in skillet to prevent sticking to the bottom. Should take between 45 minutes to an hour, to peak at the optimum point.
- 6. Serve while still hot. You will not believe how much flavor these potatoes have.
- 7. NOTE: Vietnamese Cinnamon is also called Saigon Cinnamon, it has a higher oil content , is sweeter, and much more aromatic, & has a stronger flavor, you will notice the difference in how aromatic it is right away. My next project is Cinnamon Rolls.

- WASH 3-4 medium russet or red potatoes (or PEEL if desired); dice to 3/4-1 inches; SET aside.
- CHOP 1/2 mild medium yellow or red onion; SET aside (also chop about 1/2 cup of tri-color bell peppers into 3/4 inch squares if desired); SET aside.
- REMOVE leaves from 2-3 sprigs fresh rosemary and 2-3 sprigs fresh thyme and roughly chop (about 1 teaspoon of each); SET aside (also finely chop 1/2 teaspoon fresh sage if desired); SET aside.
- TOSS potatoes in a bowl or on a large cutting board with 1/2 teaspoon paprika, 1/8 teaspoon freshly ground black pepper, and 1 pinch ground cumin.
- HEAT 3 tablespoons light olive oil or canola oil in a very large non-stick saute pan over medium-high heat.
- ADD potatoes into skillet and fry, turning occasionally with a spatula until lightly golden; REDUCE heat to medium.
- SPREAD chopped onion over potatoes (and bell peppers if using) and cook, turning as needed until softened.
- SPRINKLE fresh rosemary, thyme and parsley over mixture, and cook, turning as needed until potatoes are golden brown and crisp; REMOVE from heat.
- DRAIN potatoes on paper towels; SPRINKLE with fine sea salt to taste, tossing potatoes to distribute seasoning evenly.

GARLIC MASHED POTATOES (COOK'S COUNTRY METHOD)
From Cook's Country TV. Some notes: 1) This method is to avoid the washed-away flavor of boiled potatoes. 2. - 1. Steam or boil green beans until almost tender. They will cook longer in the skillet, so you don't want them mushy.
- 2. In my cast iron skillet, I add the bacon and cook until not quite crisp.
- 3. Add the onion, potatoes, garlic, salt, pepper and water. Place a lid over the skillet and cook on med for 10 - 12 minutes. Stirring occasionally. Remove lid and add the beans and more water if going dry. Remain cooking until potatoes are tender and beans are as well.
- 4. Serve hot. Gram would always make a huge skillet of these and usually would serve with fresh corn on the cob and sweet juicy tomato slices fresh from her garden. Enjoy!
