CRISPY SKINNED CHESAPEAKE BAY ROCKFISH WITH HAYMAN SWEET POTATO, VIRGINIA COUNTRY HAM AND BLUE CRAB HASH, MELTED LEEKS AND MEYER LEMON BUTTER

Crispy Skinned Chesapeake Bay Rockfish with Hayman Sweet Potato, Virginia Country Ham and Blue Crab Hash, Melted Leeks and Meyer Lemon Butter image

Provided by Food Network

Categories     main-dish

Time 2h5m

Yield 4 servings

Number Of Ingredients 16

12 Meyer lemons, juiced and strained
1 tablespoon heavy cream
4 tablespoons cold butter, cut into small cubes
4 tablespoons butter
6 small leeks, tough outer leaves discarded
2 Hayman or other variety sweet potatoes, peeled and cut into small dice
1 pound jumbo lump blue crab, picked over
8 ounces country ham, sliced very thin (recommended: Kite's)
2 tablespoons chopped fresh fines herbes (chervil, chives, parsley, tarragon)
Kosher salt and freshly ground white pepper, to taste
4 (7-ounce) rockfish fillets, patted dry
Salt and freshly ground white pepper
4 tablespoons clarified butter
1 tablespoon whole butter
1 small bunch fresh thyme leaves
Meyer lemon segments or slices, for garnish, optional

Steps:

  • Preheat oven to 350 degrees F.
  • For the Meyer lemon butter: In a small saucepan, reduce the Meyer lemon juice until slightly syrupy. Stir in the heavy cream. Whisk in the cold cubed butter a few pieces at a time, not allowing the sauce to become cold or too hot to touch by hand. When all of the butter is incorporated, strain the sauce. If the sauce separates, pulse with an immersion blender to emulsify. Set aside and keep warm.
  • For the hash: Bring a large pot of water to a boil over high heat, salt it generously. Trim the root end of the leek and halve lengthwise. Rinse very well under running water to flush out any grit trapped between the leaves. Slice leeks into 1/4-inch-thick pieces, put in a small strainer and dip in the boiling water. Cook until just tender, about 3 minutes, then plunge strainer and leeks in an ice water bath to cool. Drain and pat dry leeks, set aside. Repeat this procedure with the diced sweet potatoes, blanch until almost tender, about 3 minutes, then cool in the ice bath. Drain and pat dry, set aside.
  • In a large skillet, melt the butter over medium heat. Add the blanched Hayman sweet potatoes leeks, sweat until very tender about 3 to 4 minutes. Add the leeks continue to cook until heated through. Add the crab and country ham, stirring gently until heated through. Add the fines herbes at the last minute. Season, to taste, with salt and white pepper. Set aside and keep warm while you prepare the fish.
  • For the rockfish: Score the skin side of the fillets with a sharp knife, taking care not to cut too far into the flesh of the fish. Season with salt and white pepper. Heat a large skillet over medium-high heat, and add the clarified butter. Add the rockfish skin side down, sear until skin is golden and crisp, about 2 to 3 minutes. Flip, add the butter and thyme and bake until just cooked through, about 3 to 4 minutes.
  • In a bowl or plate, drizzle the warm Meyer lemon butter in a circle just inside the rim. Gently place the warm blue crab hash in the center of the plate. Place the rockfish on top of the hash with the crispy skin side up. Garnish with Meyer lemon segments or slices, if desired.

HASH BROWN AND COUNTRY GRAVY CASSEROLE

Hash Brown and country gravy casserole image

This is my version of a recipe I found on the back of a country gravy mix package. I made it for our community coffee and it was gone before I got back to take a picture. I also got quite a few requests to repeat the casserole again soon.

Categories     Breakfast Casseroles

Time 45m

Number Of Ingredients 6

1 pkg country gravy mix (makes 2 cups)
4 c frozen diced potatoes, defrosted
1 Tbsp vegetable oil
1 lb mild country sausage, browned & crumbled

  • 2. Heat oil in large skillet; brown potatoes, stirring frequently to get a nice golden brown.
  • 3. Brown the sausage well and break up into small pieces; drain well.
  • 4. In 9X13" pan place potatoes; sprinkle the sausage over the potatoes;
  • 5. Stir beaten eggs into the gravy; pour evenly over the sausage.

CHEESY HASH BROWNS WITH COUNTRY SAUSAGE GRAVY

Cheesy Hash Browns with Country Sausage Gravy image

I worked on this one a bit and played about with the ingredients, and cooking method. The country sausage gravy is pretty traditional. I got it from my ex mother-in-law, man can that lady cook. The hash browns are a bit different because we're going to make then in a waffle iron. So, you ready... Let's get into the...

Categories     Waffles

Time 35m

Number Of Ingredients 17

THE HASH BROWNS
2 medium russet potatoes, peeled, about 1 pound
1/4 medium yellow onion, about 2 ounces
1/4 c freshly shredded sharp cheddar cheese, about 1 ounce
1 large egg
1/4 c sour cream
1 Tbsp grapeseed oil
salt, kosher variety, to taste
black pepper, freshly ground, to taste
1 pinch cayenne, or to taste
1 pinch paprika, or to taste
THE COUNTRY SAUSAGE GRAVY
1 c milk, whole fat, at room temperature
1/2 lb good country sausage
2 Tbsp flour, all-purpose variety
salt, kosher variety, to taste
black pepper, freshly ground, to taste

Steps:

  • 1. THE HASH BROWNS
  • 2. Chef's Note: The amount of potatoes used in this recipe will depend on the size, and type of your waffle iron.
  • 3. Gather your ingredients.
  • 4. Using the large holes on a box grater shred the potatoes, and the onion.
  • 5. Lay them on paper towels, and press to remove as much moisture as possible.
  • 6. Add the onions, and the potatoes to a bowl, and then combine with the seasoning, ingredients: salt, pepper, cayenne, and paprika.
  • 7. Place the ingredient in the middle of a tea towel.
  • 8. Squeeze the towel to remove most of the remaining liquid.
  • 9. Chef's Note: The removal of the excess liquid is essential to producing a nice crispy hash brown.
  • 10. Return to the bowl, and carefully mix in the egg, cheddar cheese, and sour cream.
  • 11. Brush the grapeseed oil on the top and bottom portions of the waffle iron.
  • 12. Preheat the waffle iron.
  • 13. Chef's Note: If the waffle iron you are using has a heat setting, place it at 100 percent. This should give you a crispy outside and a soft inside.
  • 14. Add a generous portion of hash browns to the waffle iron.
  • 15. Close the lid and allow them to cook until crispy, about 12 to 15 minutes.
  • 16. Chef's Tip: All waffle irons are different, so the timing for yours might be longer, or shorter. Take a peek now and then.
  • 17. They should look something like this. Crisp on the outside, soft and warm on the inside.
  • 18. THE COUNTRY SAUSAGE GRAVY
  • 19. While the hash browns are cooking, gather your ingredients.
  • 20. Add the sausage to a skillet over medium heat.
  • 21. Cook, breaking up the sausage with a wooden spoon, until no longer pink, about 5 to 7 minutes.
  • 22. Whisk the flour and milk together.
  • 23. Add to the cooking sausage.
  • 24. Continue to stir the mixture as it begins to thicken, and then reduce heat to low.
  • 25. At this time begin seasoning the gravy with the salt and pepper... especially the pepper. When I can feel the kick of the pepper in the back of my throat, then I know it's ready.
  • 26. Chef's Note: You can add a lot of seasoning ingredients to a good sausage gravy; however, traditional country gravy is mostly milk, flour, sausage, salt, and pepper.
  • 27. Chef's Tip: Have a bit of extra milk, and flour on hand. Just in case you need to thicken, or thin down the gravy.
  • 28. PLATE/PRESENT
  • 29. Place the hash brown on a nice sized plate.
  • 30. Ladle a generous portion of gravy on top.
  • 31. Finish with sunny-side-up egg. Enjoy.
  • 32. Keep the faith, and keep cooking.

COUNTRY-STYLE SAUSAGE HASH

Number Of Ingredients 9

4 tablespoons canola or vegetable oil, divided
3/4 (1-pound) package Jimmy Dean Premium Pork Sausage
4 cups frozen hash brown potatoes, thawed

COUNTRY HASH

Country Hash image

Not everything Feniger serves at her restaurant is typical street food, and here's a delicious case in point. The intriguing combination of shredded brisket, diced root vegetables, and apples is based on a recipe that Feniger's grandmother Sylvia Morgan often made for family meals in Toledo, Ohio. Roasted poblano chiles, a nod to the chef’s days at Santa Monica's Border Grill, add a spark of heat, and a fried egg makes it enormously satisfying.

Yield Makes 6 servings

Number Of Ingredients 11

Braised beef brisket
1/4 cup Dijon mustard
3 tablespoons Worcestershire sauce
2 medium fresh poblano chiles (1/2 pound total)
1 medium Yukon Gold potato (1/2 pound)
1 medium rutabaga (1/2 pound)
1 medium Fuji or Gala apple
1 stick plus 3 tablespoons unsalted butter, divided
1 small white onion, finely chopped
1 medium red bell pepper, cut into 1/2-inch pieces
6 large eggs

Steps:

  • Finely shred brisket and transfer to a bowl, then mix with mustard and Worcestershire sauce until combined well.
  • Roast poblanos on their sides on racks of gas burners over medium-high heat, turning with tongs, until skins are blistered and slightly charred, 4 to 6 minutes. (Or broil on rack of a broiler pan about 2 inches from heat.) Immediately transfer to a large bowl and cover tightly, then let stand 10 minutes. Carefully rub off skins from poblanos. Cut open lengthwise and remove stems and seeds, including attached ribs. Wipe poblanos clean with a paper towel if necessary, then cut into 1/4-inch dice and transfer to a large bowl.
  • Peel potato, rutabaga, and apple and cut into 1/2-inch cubes, then cook in 1/2 stick butter with 3/4 teaspoon salt and 1/4 teaspoon pepper in a 12-inch heavy skillet over medium heat, stirring occasionally, until golden in spots and just tender, 10 to 12 minutes. Transfer to bowl with poblanos.
  • Cook onion in 3 tablespoons butter with 1/2 teaspoon salt and 1/4 tsp pepper in same skillet, stirring occasionally, until golden, about 8 minutes. Add bell pepper and cook, stirring occasionally, until just tender, 6 to 8 minutes more. Transfer to bowl with poblano mixture. Stir brisket into hash until combined.
  • Preheat oven to 250°F with rack in middle.
  • Heat 1 tablespoon butter in a 12-inch nonstick skillet over medium-high heat until foam subsides. Add half of hash to skillet and cook, turning portions occasionally, until browned and crisp in spots, 12 to 14 minutes. Transfer to a large (17-by 11-inch) 4-sided sheet pan and keep warm in oven. Cook remaining hash in same manner in 1 tablespoon butter. Transfer to sheet pan in oven.
  • Rinse and wipe out skillet. Fry eggs in 2 batches with 1 tablespoon butter per batch over medium heat. Serve eggs over hash.

COUNTRY QUICHE WITH IDAHO POTATO HASH BROWN CRUST

Country Quiche With Idaho Potato Hash Brown Crust image

An absolutely delicious brunch choice that can be made a day in advance & served at room temp or reheated. Found in The Times-Picayune where it was noted this recipe was adapted from Chef Lou Aaron of Westside Catering to suit Louisiana palates.

Provided by Busters friend

Categories     Savory Pies

Time 50m

Yield 6 serving(s)

Number Of Ingredients 21

1 1/2 cups potatoes, peeled, diced (Idaho russet)
1/4 cup onion, minced
1/4 cup red bell pepper, chopped
1/4 cup green bell pepper, chopped
1 egg, beaten
2 teaspoons parsley, chopped
salt, to taste
black pepper, freshly ground
hot sauce, to taste
2 teaspoons mozzarella cheese, shredded
1/4 cup onion, chopped
1 1/2 cups shrimp, boiled & chopped
1 cup half-and-half
4 eggs
1 teaspoon Dijon mustard (Creole fine too)
1 pinch of grated nutmeg
salt, to taste
black pepper, freshly ground, to taste
hot sauce, to taste
1 cup swiss cheese, shredded
6 tomatoes, slices

Steps:

  • To make the crust: Preheat the oven to 375 degrees. Coat a 9-inch quiche or pie pan with cooking spray. Combine in a bowl all the crust ingredients except mozzarella. Season with salt, pepper, and hot sauce. Stir to mix. Press the mixture evenly on the bottom and up the sides of the baking pan. Bake for 10 to 12 minutes. If the edges of the crust begin to brown, cover with a piece of aluminum foil.
  • Remove from the oven and immediately sprinkle the crust evenly with the cheese. Return to the oven and bake just until the cheese melts, about two minutes. Remove from the oven and set aside. (You may want to run a thin, small knife around the edges of the crust to loosen it a bit.).
  • To make the filling: Sprinkle the onions on the bottom of the crust. Arrange the shrimp evenly on the crust. Combine the half-and-half, eggs and mustard and whisk to blend. Season with salt, pepper and hot sauce. Pour the mixture into the prepared shell and top with the Swiss cheese. Bake for 20 to 25 minutes, arrange the tomatoes evenly over the pie filling and bake for another five to eight minutes, or until a toothpick inserted in the middle of the quiche comes out clean.
  • Cool a bit before slicing to serve.

COUNTRY HAM AND HOMINY HASH

Country Ham and Hominy Hash image

A good hash is like soup: you can toss together all the odds and ends from your fridge and pantry and end up with something rustic and hearty that is much more than the sum of its parts.

Yield serves 4 to 6

Number Of Ingredients 13

One 4-ounce piece country ham
1 bay leaf
3 or 4 black peppercorns
2 russet potatoes (about 1 pound), peeled and chopped
2 cups cooked hominy, rinsed and drained
1 onion, chopped
2 tablespoons chopped fresh parsley
Sea salt and freshly ground black pepper
2 tablespoons olive oil, plus more if needed
1 tablespoon unsalted butter
2 teaspoons distilled white vinegar
Pinch of sea salt
1 or 2 large eggs per person

Steps:

  • Place the ham in a pot with the bay leaf and peppercorns. Cover with water and simmer for about 1 hour, until the ham is fork-tender (see Know-how, page 172). Add the potatoes and simmer for 10 minutes more, until the potatoes are just beginning to get tender. Strain the ham and potatoes from the pot, reserving about 1/4 cup of the liquid, removing and discarding the bay leaf, and set aside.
  • Using two forks, shred the ham into bite-size pieces and place in a large bowl. Add the potatoes, hominy, and onion. Stir in the reserved cooking liquid and parsley and season to taste with salt and pepper. (Country ham is salty, so be sure to taste before adding any extra salt.)
  • Heat the olive oil and butter in a large nonstick or cast-iron skillet over medium-high heat until hot. Add the ham-potato mixture and spread into a flat cake. Cover with a splatter screen or lid and cook until crispy, 4 to 5 minutes. Flip and re-form the cake. Cover and cook, adding a little more oil if needed, until crispy on the other side. Remove from the heat and cover.
  • Fill a large skillet with water about 2 inches deep and bring to a boil. Add the vinegar and salt and reduce the heat to a simmer.
  • Add the eggs one at a time and poach for 2 to 3 minutes, until the whites set and a thin, translucent film forms over the yolks (see Know-how, page 86). Use a slotted spoon to gently transfer the eggs to a paper towel-lined platter to drain.
  • Divide the hash evenly between individual serving plates, place 1 or 2 eggs on top of each, and serve hot.
  • For a more rustic interpretation of this dish, make a hole in the hash, crack the eggs in the hole, and cover to fry, rather than poach, to your liking. For a sweet-and-savory combination, substitute sweet potatoes for the russets, and for a crispy finish, scatter fried oysters on top. Or, make a cheesy variation by layering the hash mixture with Gruyère cheese in a skillet to form one large cake and sauté until brown and crispy. Slide the cake out of the skillet and cut into 4 to 6 wedges, then assemble the dish as for the main recipe.
  • Hominy is the name for corn kernels that have been hulled to remove the bran and germ. Lye hominy is hulled by soaking the corn kernels in a weak lye solution-a very traditional, centuries-old Native American method-and pearl hominy is hulled mechanically. It is then dried and either ground to make our beloved hominy grits or boiled whole to make what New Orleansians call "big hominy." You can buy hominy canned, meaning precooked, or dried, in which case it will need to be presoaked and boiled in the same manner as dried beans.
