Yum! Melissa's apple cake recipe has simple ingredients and doesn't require any fancy equipment. We love those types of old-fashioned recipes. This cake uses shredded apples that add a lot of moisture to the cake. Full of cinnamon flavor, it's dense and tender at the same time. Pecans add a nice crunch, but if you don't love nuts...

4 c peeled and shredded apples (any kind sweet or tart depending on your taste) I leave the skin on my apples
2 c sugar
2 c all-purpose flour
1 1/2 tsp baking soda
3 tsp cinnamon
1 tsp salt
2 eggs
3/4 c oil
1c pecans chopped (optional)
(options) powder sugar to sprinkle on top, caramel to drizzle, ice cream, Cool Whip

Steps:

  • 1. Stir shredded apples and sugar in a large bowl.
  • 2. Add dry ingredients (flour, baking soda, cinnamon, and salt).
  • 3. Stir in the egg mixed with the oil into a measuring cup.
  • 4. Pour into the dry ingredients.
  • 5. Mix until thoroughly moist (do not overmix).
  • 6. Stir in nuts.
  • 7. Pour into a 9X13 pan sprayed with butter flavor no-stick spray.
  • 8. Bake at 350 for 50 minutes.
  • 9. It springs when pressed when done.
  • 10. Options for topping: Sprinkle with powdered sugar. Drizzle with caramel. Serve with Cool Whip. Serve ala mode with vanilla ice cream.

4 cups very thinly sliced peeled apples

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In small bowl, mix topping ingredients with pastry blender or fork until crumbly; set aside.
  • In large bowl, beat all cake ingredients except apples with electric mixer on medium speed 3 minutes, scraping bowl frequently. Spread batter in pan. Arrange apple slices evenly over batter. Sprinkle evenly with topping.
  • Bake 55 to 60 minutes or until toothpick inserted in center comes out clean. Serve warm with ice cream or whipped cream.

1 teaspoon vanilla extract
1/2 cup oil
1/2 cup sugar
1 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cups apples, peeled and sliced
1/2 cup pecans, chopped
1/2 cup brown sugar, packed
4 tablespoons butter or 4 tablespoons margarine
1/4 cup milk
1/2 teaspoon vanilla extract
pecan halves

Steps:

  • Beayt together eggs, vanilla and oil until well combined. Stir in half of the following; sugar, flour, salt and baking soda. Mix remaining half with the apples and chopped nuts. Combine the 2 mixtures by hand until well mixed.
  • Grease a 9" pie plate and spread mixture into pan. Bake at 350 degrees for 30-35 minutes.
  • Topping: Combine brown sugar, butter and milk in a saucepan; bring to a boil over medium heat. Remove from heat and stir in vanilla. Drizzle topping over cake and garnish with pecan halves.

3 large eggs
2 cups shredded peeled apples
3 cups all-purpose flour

1 package (12 ounces) pitted dried plums (prunes), chopped

Steps:

  • In a large bowl, beat sugar, oil and eggs for 2 minutes at medium speed; blend in apples. Combine dry ingredients; gradually beat into egg mixture. Stir in plums and nuts. 1 teaspoon baking powder
125 g sugar
125 g butter
3 -4 cooking apples, peeled cored and roughly chopped
1 egg, beaten
1/3 cup milk

Steps:

  • Preheat oven to 180°C.
  • Grease a 20cm round cake tin.
  • Sift together the flour, baking powder and the sugar.
  • Cut in the butter roughly with a knife (do not rub it in).
  • Add the apples.
  • Stir in the egg and milk to make a fairly stiff mixture. The batter will appear fairly lumpy.
  • Pour the mixture into the prepared cake tin.
  • Bake for about 1 hour.
  • Serve hot with custard or ice-cream.
  • This cake can be cooked ahead and reheated in the microwave as needed.

6 ounces cream cheese, room temperature
1 1/2 cups sugar

1 lemon, zest of, grated
1 tablespoon butter
3 cups golden delicious apples, peeled, cored and sliced crosswise (about 2.5)
3/4 cup flour
3/4 cup sugar

6 tablespoons butter, cut into 1/4 inch pieces

Steps:

  • Heat oven to 350 degrees.
  • Lightly butter a 9 inch square pan and dust with flour (you can also use nonstick spray).
  • For the topping, melt 1 tbsp butter in a skillet. Add the apple slices and saute over medium high heat for 2 minutes (stir often). Move the slices to a plate and allow to cool while preparing the cake.
  • For the cake, sift the flour, baking powder, and salt into a medium bowl; set aside.
  • With an electric mixer, cream the butter (1/2 cup) and cream cheese in a large bowl.
  • Gradually add in the sugar, 1/2 cup at a time.
  • Add in the eggs one at a time, beating well after each addition.
  • Add the flour, a third at a time, blending well after each addition.
  • Add the vanilla and lemon zest.
  • Pour the batter into the prepared pan and smooth it with a spoon.
  • To finish the topping, combine the flour, sugar, cinnamon, and salt in a large bowl.
  • Rub the butter into the dry ingredients until you have uniform crumbs.
  • Sprinkle half of the crumbs over the batter, then add the apple slices.
  • Top with the apples with the remaining crumbs.
  • Bake the cake on the center rack for 50-60 minutes. When the cake is done,it will pull away from the sides and the top will be golden brown.
  • Cool the cake in the pan on a wire rack.

5 medium eggs
200g granulated sugar
100ml vegetable oil
175g plain flour
2 tbsp cocoa powder
1 tsp baking powder
½ tsp cinnamon
½ tsp mixed spice
½ tsp ground ginger
5 eating apples , peeled, cored and diced, about 600g
1 tsp each icing sugar and ground cinnamon, for dusting

Steps:

  • Heat oven to 180C/160C fan/gas 4. Line a 23cm loose-bottomed cake tin with baking parchment. In a large bowl, beat together the eggs and sugar until thick and pale, about 5 mins. Pour in the oil and stir well to combine.
  • Sieve in the dry ingredients and fold through until the mixture is smooth and well combined before adding the apples.
  • Carefully pour the mixture into the tin and bake for 45-50 mins. Leave to cool slightly before turning out onto a cooling rack. Once the cake is cool, dust with icing sugar and cinnamon.

But the recipes are absolutely wonderful and this one was a Pillsbury Bake-Off winner. I've made this recipe over and over and everyone eats it right up! Enjoy!

1 1/2 cups chopped peeled apples
10 ounces biscuits
1/3 cup brown sugar, firmly packed
1/2 cup pecan pieces
1/4 teaspoon cinnamon
1/3 cup light corn syrup
1 1/2 teaspoons whiskey
1 egg
1/3 cup powdered sugar
1/4 teaspoon vanilla
1 -2 teaspoon milk

Steps:

  • Preheat oven to 350 degrees.
  • Using 1 tablespoon of the butter, grease bottom and sides of a 9-inch round cake pan.
  • Spread 1 cup of the apples in pan.
  • Separate the biscuits.
  • Cut each one into 4 pieces.

1/4 tsp cinnamon
1/3 c light corn syrup

1/2 c pecan halves or pieces
glaze
1/3 c powdered sugar
1/4 tsp vanilla extract
1-2 tsp milk

Steps:

  • 1. Heat oven to 350 degrees. Using 1 tbsp of the butter, generously grease 9 in round cake pan or 8 inch square pan. Spread 1 cup of the apples in the pan.
  • 2. Seperate biscuits and cut each into quarters. Arrange biscuit pieces, points up over apples. Top with remaining apples.
  • 3. In a small bowl combine 1 tbsp of butter, brown sugar, cinnamon, corn syrup, whiskey and egg. Beat 2-3 minutes or till sugar is partially dissolved. Stir in pecans. Spoon over biscuits and apples.
  • 4. Bake for 35-45 minutes or till golden brown. In a small bowl, blend the glaze ingredients, adding enough milk for desired drizzling consistancy. Drizzle over warm cake.

8 ounces whole meal flour
1 teaspoon ground mixed spice

1 tablespoon clear honey
1 tablespoon light brown sugar

Steps:

  • Grease and line a deep 7" round cake tin with greaseproof paper (waxed paper).
  • Cream the butter and sugar together until pale and fluffy. Add the eggs, a little at a time, beating well after each addition. Add the flour, spices and baking powder and mix well. Fold in the apples and enough milk to make a soft dropping consistency.
  • Turn the mixture into the prepared tin and bake at 325F for 1 1/2 hours, until well risen and firm to the touch. Turn out on a wire rack to cool.
  • When the cake is cold, brush with the honey and sprinkle with the light brown sugar to decorate.

1/2 cup brown sugar, firmly packed
1/2 cup butter
1/2 cup whipping cream
1 teaspoon vanilla
vanilla ice cream (optional) or whipped cream (optional)

Steps:

  • Heat oven to 350 degrees F.
  • Spray 13x9 pan with nonstick cooking spray. In a large bowl, combine oil and eggs; beat well. Add quick bread mix, apple pie filling, cinnamon, nutmeg; stir 50-75 strokes with spoon until mix is moistened. Stir in nuts from foil packet and 1/2 c chopped walnuts. Spoon into sprayed pan; spread evenly.
  • Bake at 350 degrees F for 43-50 minutes or until cake is deep golden brown and toothpick inserted in center comes out clean. Cool 30 minutes.
  • Meanwhile, in medium saucepan, combine sugar, brown sugar, butter and whipping cream; mix well. Bring to a boil, stirring occasionally. Remove from heat; stir in vanilla.

  • High altitude (above 3500 feet): add 1/4 cup flour to dry quick bread mix. Bake as directed above.

3 c apple pie filling (from two 21 oz. cans)

1/2 c chopped walnuts
sauce and topping:
1/2 c sugar
1/2 c firmly packed brown sugar
1/2 c butter
1/2 c whipping cream
1 tsp vanilla
vanilla ice cream or whipped cream if desired

Steps:

  • 1. HEAT oven to 350°F. Spray 13 x 9-inch pan with no-stick cooking spray. Combine oil and eggs in large bowl; beat well. Add quick bread mix, apple pie filling, cinnamon and nutmeg; stir 50 to 75 strokes with spoon until mix is moistened. Stir in nuts from foil packet and 1/2 cup chopped walnuts. Spoon into prepared pan; spread evenly.
  • 2. BAKE 43 to 50 minutes or until cake is deep golden brown and toothpick inserted in center comes out clean. Cool 30 minutes while making sauce.

3/4 cup Gold Medal™ whole wheat flour
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/2 cup cold butter or margarine
1 1/2 cups Gold Medal™ whole wheat flour
1 1/2 cups Gold Medal™ all-purpose flour
1 1/2 cups granulated sugar
3 teaspoons baking powder
1 teaspoon salt
1 1/4 cups milk
3/4 cup butter or margarine, softened
1 1/2 teaspoons vanilla
3 eggs
4 cups very thinly sliced peeled apples

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In small bowl, mix topping ingredients with pastry blender or fork until crumbly; set aside.
  • In large bowl, beat all cake ingredients except apples with electric mixer on medium speed 3 minutes, scraping bowl frequently. Spread batter in pan. Arrange apple slices evenly over batter. Sprinkle evenly with topping.
  • Bake 55 to 60 minutes or until toothpick inserted in center comes out clean. Serve warm with ice cream or whipped cream.

2 tablespoons oil
2 eggs
1 (15.4-oz.) pkg. Pillsbury® Nut Quick Bread & Muffin Mix
3 cups apple pie filling (from two 21-oz. cans)
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 cup chopped walnuts
1/2 cup sugar
1/2 cup firmly packed brown sugar
1/2 cup butter
1/2 cup whipping cream
1 teaspoon vanilla
Vanilla ice cream or whipped cream, ifdesired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with nonstick cooking spray. In large bowl, combine oil and eggs; beat well. Add quick bread mix, apple pie filling, cinnamon and nutmeg; stir 50 to 75 strokes with spoon until mix is moistened. Stir in nuts from foil packet and 1/2 cup chopped walnuts. Spoon into sprayed pan; spread evenly.
  • Bake at 350°F. for 43 to 50 minutes or until cake is deep golden brown and toothpick inserted in center comes out clean. Cool 30 minutes.
  • Meanwhile, in medium saucepan, combine sugar, brown sugar, butter and whipping cream; mix well. Bring to a boil, stirring occasionally. Remove from heat; stir in vanilla.
  • To serve, cut warm cake into squares; place on individual dessert plates. Top each serving with warm sauce and ice cream.
