THREADGILL'S COTTAGE CHEESE CUCUMBER SALAD
This refreshing salad from Threadgill's brings back fond memories of iced tea, live music, fried catfish, and other delights from the Austin, TX restaurant. The dish can be served as a side salad, or, for a low-calorie lunch, serve on a bed of lettuce with some tomato wedges sprinkled with salt & pepper. I clipped the recipe from the Austin American Statesman many years ago. The original called for fresh parsley, but I like it with the dill.

Steps:
- Peel the cucumber and slice lengthwise into halves. Scrape out the seeds and discard, then chop the cucumber.
- In a medium bowl, mix together the cottage cheese, cucumber, dill, and green onion. Fresh dill is best, but if you must substitute, use only 1 tsp of dried.
- Sprinkle on some black pepper and 3 dashes of Tabasco, stir again, and taste. Add more pepper and Tabasco to your taste. If you wish, skip the Tabasco and let everybody add it to their own serving.
- Serve immediately.
COTTAGE STYLE CUCUMBER SALAD
Here's a healthy, tasty & low-fat variation on a cucumber salad that provides the creamy texture w/o the use of mayo or sour cream. It uses cottage cheese to do that & my DH has come to like it nearly as well as the mayo or sour cream varieties. This works well as the salad part of a dinner meal, a light lunch & even travels well for a picnic or camping trip. Enjoy!

- Prepare & combine all veggie ingredients. Add sugar & then seasoning salt & black pepper to taste.
- Refrigerate 2 hrs to allow flavours to blend & pour off any watery liquid that has formed before final step.
- Fold in cottage cheese gently, mix just enough to get a good distributional mix & serve immediately.
- NOTE: Altho not part of the "basic" recipe, I often add diced avocado for its colour & complimentary flavour.

- Peel and halve cucumber; remove the seeds. Shred and pat dry; set aside. In a bowl, combine gelatin and salt with boiling water; stir until dissolved. Add mayonnaise and cottage cheese; mix well. Stir in the onion and shredded cucumber. Pour into an oiled 5-cup mold. Refrigerate until firm. Unmold onto a serving platter. Garnish with cucumbers and parsley if desired.

this recipe sounds kind of strange, but once you try it, you will make it again. It is a savory jello salad.

Peel and grind cucumber, onion , drain excess liquid, put cottage cheese through sieve and drain excess liquid; dissolve the jello in hot water and the vinegar and mayonnaise to the jello mixture, add the cucumber mixture, and cottage cheese and stir together, add pecans and fold into mixture, chill and serve.
