Cottage Cheese Salad with Egg and Radish image

My mother made this often when I was growing up. Lovely for breakfast, brunch, or light lunch. Serve this alongside a couple slices of good quality bakery bread, toasted and buttered. Keeping hard-cooked eggs in the fridge makes this easy and quick. You can adjust the amounts of chives and radishes, or even add an extra egg, depending on your taste.

1 (16 ounce) container cottage cheese
1 hard-cooked egg, diced
2 tablespoons chopped fresh chives
3 radishes, chopped
salt to taste

Steps:

  • Stir cottage cheese, egg, chives, radishes, and salt together in a bowl.

My son loves egg salad sandwiches and he especially likes when I make it this way. My mother shared this recipe with me, of which I tweaked. I hope you try it sometime. Enjoy!

Number Of Ingredients 8

4 - hard boiled eggs - peeled and cut in half and yolks removed
5 tablespoon(s) mayonnaise
1 cup(s) cottage cheese - i used small curd
squirt - dijon mustard
1 tablespoon(s) minced sweet onion or more
1 tablespoon(s) dried dill
Kosher - salt & pepper to taste
toasted - bread

Steps:

  • Place yolks in a small bowl and mash. To the yolks add the mayonnaise & mix well together until smooth. Add the dill and mustard. Combine well.
  • Chop the egg whites. In another bowl, mix the egg whites with the cottage cheese. Now mix the cottage cheese mixture with the yolk mixture. Blend well. Add salt and pepper to taste.
  • Spread desired amount on toasted bread. Can add a lettuce leaf if desired. Enjoy!

Cassie posted this recipe on JAP and I thought it sounded great. A unique way to make egg salad. My husband did not like it because he likes the Miracle whip taste so I changed the recipe a bit by leaving out the butter and replacing it with Miracle whip. It was a hit. The cottage cheese gives the egg salad a different texture. It's really good. Thanks Cassie

4 large eggs boiled
1/2 cup(s) miracle whip
1 cup(s) small curd cottage cheese
1 small shallot chopped
1 teaspoon(s) whole grain mustard
1 tablespoon(s) dill weed
1 teaspoon(s) paprika
- salt and pepper

Steps:

  • Peel the eggs and chop them up. Add all ingredients and mix well. Serve in between two pieces of bread
