Looking to add protein to your morning bowl of oats? Try adding cottage cheese to your oats. It makes them extra creamy and adds a huge boost of protein!

Number Of Ingredients 6

1/2 cup old fashioned oats
1/2 banana (sliced (optional)*)
pinch of sea salt
1 1/4 cup water (milk or a blend of both)
1/2 teaspoon cinnamon + 1/2 teaspoon vanilla (optional)
1/4 cup cottage cheese + more if you'd like

Steps:

  • Add oats, banana slices and sea salt to a pot. Add water/milk and stir to combine. Add cinnamon and vanilla, if using. Heat over medium-high heat for 8-10 minutes or until all the liquid has been absorbed. Be sure to stir the oats several times while cooking to make sure the banana slices melt into the oats. You'll know the oatmeal is done when all the liquid is absorbed and the oats are thick and fluffy.
  • Remove oats from the heat and stir in cottage cheese. Start with 1/4 cup and add more if you'd like. Transfer oats to a bowl and top with your favorite oatmeal toppings. I used flaxseed, peanut butter, banana slices, almond slices and coconut flakes.

Creamy pudding with a hint of nutmeg for Breakfast. The taste of this kinda reminds me of rice pudding but with a texture kinda of cooked a cream of wheat pudding. I found this recipe in The Breakfast Book. When I made this recipe I had to make it in 2 batches due to my food processor being so small, so I mixed everything in a bowl before pouring into my baking dish. I did also add a scoop of vanilla protein powder. When I pulled this from the oven 40 minutes later this was like soup so I quickly mixed in 1/2 cup flour which did the trick and made this like a pudding. Next time I'll add the flour right from the start.

2 cups cottage cheese
2 cups cooked oatmeal
2 eggs
1 cup milk
6 tablespoons sugar
1/2 teaspoon nutmeg

Steps:

  • Preheat the oven to 325.
  • Butter a 1 1/2-quart baking or souffle dish.
  • You can use a food processor or electric mixer; or mix briskly by hand. Put the cottage cheese, oatmeal, eggs, milk, sugar, nutmeg, and salt in a processor or mixing bowl. Process or mix until the mixture is smooth.
  • Spoon into the buttered dish and bake for about 40 minutes, or until the edges are golden and set. Serve hot or cold, with milk or cream.

These are wonderful and are almost too healthy to be true. Lots of calcium, protein, fiber, etc. I usually eat them without any topping and just keep popping them in my mouth! Yum. But a good jam will do them nicely as well.

  • Blend all ingredients in blender.
