A CLASSIC CHEESE AND ONION FLAN



A Classic Cheese and Onion Flan image

Do not confuse classic cheese and onion flan with quiche. It is much softer in texture and is so, so easy to make.

For the Pastry:
200 grams plain flour (or all-purpose flour)
110 grams butter (or an equal mix of butter and lard; cubed)
1 pinch salt
2 to 3 tablespoons water (very cold)
For the Filling:
55 grams butter
2 tablespoons extra-virgin olive oil (or sunflower oil)
1 large yellow onion (peeled, finely sliced, and sautéed)
3 to 4 large eggs (200 ml)
75 grams mature cheddar cheese (coarsely grated)
2 to 3 tablespoons flat-leaf parsley (chopped)
1 cup milk
Salt (to taste)
Freshly ground black pepper (to taste)

Steps:

  • Gather the ingredients.
  • Place the flour, butter (or butter and lard mix), and salt into a large, roomy mixing bowl. Rub the butter into the flour until it resembles sand.
  • Add the water a little at a time and bring the mixture together to create a soft dough.
  • Form the pastry into a disc, wrap in plastic wrap, and chill in the refrigerator for 30 minutes.
  • While the pastry is resting, prepare the filling.
  • Heat the butter and oil in a saucepan. Once melted, add the sliced onion and sauté over medium heat to soften (but not brown). Place the softened onion onto a dinner plate and leave to cool.
  • Preheat the oven to 400 F / 204 C. Roll the pastry to 5 millimeters thickness and line a greased, 10-inch loose-bottomed tart tin. Chill in the refrigerator while you make the remaining filling.
  • Put the eggs into a large measuring jug and whisk them. Add the cooled onion, grated cheese, and parsley. Stir in the milk. Season with a little salt and black pepper.
  • Take the pastry case from the refrigerator, place it on the middle shelf of the preheated oven, and carefully pour in the egg-cheese mixture until it is two-thirds full. Do not overfill as the flan will rise while cooking.
  • Bake for 25 to 40 minutes until the top is golden brown and set, but not completely solid when gently pressed in the center.
  • Remove from the oven and rest for 5 minutes before serving.
  • The flan is lovely warm but can also be eaten cold.

COTTAGE CHEESE QUICHE LORRAINE



Cottage Cheese Quiche Lorraine image

This quiche has a totally different texture than normal ones. Even quiche and cottage cheese haters love it!

16 ounces cottage cheese (fat free to full fat, it all works)
4 eggs
1 cup shredded swiss cheese
6 slices vegetarian bacon (or regular)
salt and pepper
1 pie crust

Steps:

  • Cook "bacon" until crispy. Lay pie crust in pie pan and cover with swiss cheese. Crumble bacon on top. Beat eggs and then mix with cottage cheese. Pour over bacon and swiss in pie shell. Bake 40-50 minutes at 350°F Quiche will appear a tad liquidy (but not jiggly), but it's done and moisture will disappear after sitting to cool a bit.
  • Alternative use 3 pieces of bacon in the quiche and keep 3 to crumble on top of quiche after removing from the oven.

300 g cottage cheese
100 g grated cheese
150 g whole grain oats (not 'instant')
1 large onion, finely chopped
2 large eggs
50 ml oil (optional)
1 1/2 tablespoons soy sauce
1 1/2 teaspoons yeast extract (Vegemite, Marmite etc.)
1 teaspoon mixed herbs (e.g. Italian herb mix)

Steps:

  • Mix all ingredients well together.
  • Press into a greased flan dish.
  • Bake at 180 C for approximately 45 minutes to an hour, until brown.

1 cup sugar
1 vanilla bean, split lengthwise
1 (14 ounce) can sweetened condensed milk
1 (12 ounce) can evaporated milk
1 1/2 cups whole milk
5 extra-large eggs
5 ounces cream cheese
1/4 teaspoon almond extract

Steps:

  • Preheat the oven to 250 degrees.
  • Melt the sugar in a saucepan over medium-high heat and cook until it turns into a smooth dark amber caramel.
  • Pour into the bottom of an 8-inch souffle dish or other round mold.
  • Using the back of a knife, scrape the seeds from the vanilla bean and add to a blender.
  • Add the three milks, eggs, cream cheese and almond extract.
  • Blend until smooth, then pour through a strainer into the caramel-lined mold.
  • Set the mold into a larger baking pan and pour enough very hot water into the pan to come halfway up the sides of the mold.
  • Bake until the flan has set, 2 1/2-3 hours-- a toothpick inserted in the center should come out clean.
  • Let cool, then cover the mold and refrigerate overnight.
  • When you are ready to serve, run a knife along the inside of the mold to loosen the flan.
  • Pour about 1/2 inch of hot water in a pan large enough to hold the mold and set the mold in it for 10 minutes, so it will unmold more easily.
  • Remove it from the water, wipe dry and place a shallow bowl or a small platter over the top.
  • Invert the flan into the bowl, and serve.

I love this for dessert and find that it is always well received. It is like a cross between cheese cake and flan. A nice finish to a Mexican dinner or to celebrate Cinco de Mayo. Recipe from Kraft. Cook time also includes time in the fridge.

2 cups sugar, divided
1 (12 ounce) can evaporated milk
1 (8 ounce) package Philadelphia Cream Cheese, cut up, softened
5 eggs
1 teaspoon vanilla
1 dash salt

Steps:

  • PREHEAT oven to 350°F Place 1 cup of the sugar in small heavy saucepan; cook on medium heat until sugar is melted and deep golden brown, stirring constantly with wooden spoon. Remove from heat. Immediately pour into 9-inch round baking pan; tilt pan to evenly cover bottom of pan with syrup. Set aside.
  • PLACE milk and cream cheese in blender; cover. Blend until smooth. Add remaining 1 cup sugar, the eggs, vanilla and salt; cover. Blend just until smooth; pour into prepared baking pan. Place filled baking pan in larger baking pan; add enough hot water to larger pan to come halfway up side of smaller pan.
  • BAKE 50 minute to 1 hour or until knife inserted near center comes out clean. Cool. Carefully remove flan from water. Cool on wire rack.
  • REFRIGERATE several hours or unti chilled. When ready to serve, run a knife along the edge of the pan. Then, invert pan onto serving plate to unmold flan. If some caramel is stuck to the bottom of the pan, you can place the bottom of the pan in a sink full of hot water to heat it, and then spoon it over flan. Store any leftovers in refrigerator.
