FAMOUS COTTAGE CHEESE DIP
This is a recipe I developed to copy a tasty dip that came from our favorite local mexican restaurant when my husband and I were in college at Michigan State University. It's pretty close to the real thing! A very simple and easy dip to serve with tortilla chips and salsa.

- Mix all above ingredients together in a medium sized bowl.
- For best results, use regular cottage cheese and sour cream, rather than reduced fat.
- This will help form a thicker dip.

- 1. The morning you're going to serve this, combine all ingredients and refrigerate. This gives the flavors time to blend and mellow. Check the seasoning before serving. If you've used fresh dill, garnish with a few sprigs before serving. This was served at the Inn with ridged potato chips. It also goes well with crudité or any of your favorite things to dip.
POLISH COTTAGE CHEESE DIP (GZIK)
This is a simple dip with infinite possibilities. The classic version, called gzik, comes from the Wielkopolska province in Poland. It's built from a farmer's cheese called twarog, which is essentially a dry version of what Americans know as cottage cheese. The cheese, which comes molded into a thick disc, is mashed with a fork, then loosened with a few tablespoons (or more, depending on the dryness of the cheese) of yogurt or cream. Radishes and some members of the allium family, most often chives or onions, add flavor; dill or other herbs sometimes make an appearance. The classic way to eat it is on boiled or baked potatoes still in their jackets, but gzik on buttered rye bread is a popular breakfast dish. Although you can use any style of cottage cheese for this recipe, smaller curds work better than large because the dip should be slightly smoother than cottage cheese.

- Preheat the oven to 300 degrees F (150 degrees C).
- Bring a large pot of salted water to a boil. Blanch potatoes, zucchini, and bell pepper separately in the boiling water for about 1 minute each. Remove and rinse under cold water, then drain on paper towels.
- Whisk eggs, cream, Parmesan cheese, and rosemary together in a bowl until well combined. Season with salt and pepper.
- Transfer cooled, blanched vegetables into a round, fluted tart pan. Spread egg mixture evenly over the vegetables. Spoon cottage cheese evenly over the egg mixture.
- Bake in the center of the preheated oven until the center is no longer jiggly and the edges are golden brown, about 40 minutes. Remove from the oven.
- Mix Greek yogurt, cucumber, radishes, garlic, lemon juice, salt, and pepper for dip together until well combined.
- Serve frittata over arugula with dip on the side.

DILLY PESTO COTTAGE CHEESE DIP
I found the Pesto Cottage Cheese dip on Facebook but didn't have every ingredient on hand so I decided to tweek the recipe and make it my own and this is the delicious result. My sons do not like cottage cheese at all but my oldest son tried it and actually enjoyed it. I love this dip with my pita chips.
