2 cups nonfat cottage cheese or 2 cups low fat cottage cheese
1 cup buttermilk
1 tablespoon red wine vinegar
2 tablespoons parsley, chopped
10 garlic cloves, chopped
1/4 teaspoon salt

Steps:

  • In blender or food processor, mix cottage cheese until smooth.
  • Add remaining ingredients and blend.

This is an old Frugal Gourmet recipe from the early years. The Frugal Gourmet (Jeff Smith) is no longer with us but his very nice and unique salad dressing lives on. Serve it over multi-green salad when you want to impress someone special with both flavor and eye appeal!

1/2 cup cottage cheese
1/2 cup mayonnaise
1/2 cup milk
1 tablespoon olive oil
2 tablespoons white wine vinegar
1/8 teaspoon sugar
1 fresh garlic clove, minced
1 teaspoon dried dill weed
1/8 teaspoon salt
1/8 teaspoon cracked pepper

Steps:

  • Blend and refrigerate for at least an hour prior to serving.
  • Also low-fat/low-salt mayonnaise and cottage cheese can be used. For best results, I recommend Hellman's new olive oil recipe mayonnaise for this particular recipe. It has a much better flavor than their original mayo.

This refreshing salad from Threadgill's brings back fond memories of iced tea, live music, fried catfish, and other delights from the Austin, TX restaurant. The dish can be served as a side salad, or, for a low-calorie lunch, serve on a bed of lettuce with some tomato wedges sprinkled with salt & pepper. I clipped the recipe from the Austin American Statesman many years ago. The original called for fresh parsley, but I like it with the dill.

16 ounces low fat cottage cheese
1 cucumber
2 tablespoons chopped fresh dill
1/4 cup chopped green onion
pepper
Tabasco sauce

Steps:

  • Peel the cucumber and slice lengthwise into halves. Scrape out the seeds and discard, then chop the cucumber.
  • In a medium bowl, mix together the cottage cheese, cucumber, dill, and green onion. Fresh dill is best, but if you must substitute, use only 1 tsp of dried.
  • Sprinkle on some black pepper and 3 dashes of Tabasco, stir again, and taste. Add more pepper and Tabasco to your taste. If you wish, skip the Tabasco and let everybody add it to their own serving.
  • Serve immediately.

2 teaspoons Worcestershire sauce

Steps:

  • Whisk mayonnaise and sour cream in medium bowl until smooth; stir in remaining ingredients; season to taste.
  • cover and chill 1 hour to blend flavours.
