This if from the cornstarch box. It takes me back to the good ol' days of seventh grade homemaking class. Very easy and a nice treat.

Number Of Ingredients 6

3 tablespoons cornstarch
1/8 teaspoon salt
1/3 cup sugar
1/2 cup milk
1 1/2 cups milk
1 teaspoon vanilla

Steps:

  • Place cornstarch, salt, and sugar in mixing bowl, and mix well.
  • Add 1/2 cup milk, and stir until smooth.
  • Scald 1 1/2 cups milk in top of double boiler, and add cornstarch mixture slowly, stirring constantly.
  • Place over boiling water in bottom of double boiler, and cook slowly, stirring constantly until smooth and thickened.
  • Cover, and cook for 15 minutes longer, stirring occasionally.
  • Add vanilla and stir.
  • Pour into individual molds which have been rinsed in cold water.
  • Chill until firm.
  • Unmold and serve with maple syrup, cream, chocolate sauce, sliced peachs, or sliced apricots as desired.
  • Chocolate: Add 1 square unsweetened chocolate, melted, at the same time vanilla is added.
  • Coconut: Add 1/2 cup shredded coconut to scalded milk.

This is from my husband's home economics class from 1979. We love it. I especially love to eat it warm.

1/2 cup sugar
1/3 cup cornstarch
1/2 teaspoon salt
4 cups milk
2 eggs
1 teaspoon vanilla

Steps:

  • Mix sugar, cornstarch and salt in double boiler.
  • Gradually stir in milk, stir well.
  • Place the mixture over boiling water stirring constantly for 12 minutes, until it begins to thicken.
  • Cover and let cook for ten minutes.
  • Beat 2 eggs with an electric beater.
  • Stir 1/2 cup of the cooked mixture into the beaten eggs very gradually while continuing to beat mixture with electric mixture.
  • Repeat 3 times.
  • Stir well and cook for 2 more minutes.
  • Remove from heat.
  • When slightly cooled, stir gently, and add vanilla.

3 -4 tablespoons unsweetened cocoa powder, sifted
4 tablespoons cornstarch
1 pinch salt
1 3/4 cups milk
1 cup half-and-half cream (or use 2-3/4 cups milk)

Steps:

  • In a saucepan combine the first 4 dry ingredients.
  • Add in milk and half and half cream; cook over medium heat stirring/whisking until thickened and just at a slight bubble (do not boil hard) remove from heat.
  • Immediately pour into serving dishes allow to sit at room temperature until cooled.
  • Enjoy warm or refrigerate until cold.

1/4 cup Gluten Free flour (King Arthur Gluten Free)
1/2 cup (100 g) sugar
4 tablespoons (20 g) Dutch-processed unsweetened cocoa powder
1/4 teaspoon kosher salt
3 cups (24 fl. oz.) milk (any kind), at room temperature
3 egg yolks (90 g total), at room temperature
5 ounces dark chocolate, chopped (or your favorite chocolate)
1 teaspoon pure vanilla extract

Steps:

  • In a medium-sized bowl, place the flour blend, sugar, cocoa powder and salt, and whisk to combine well. Add 1/2 cup (4 fl. oz.) of the milk, and then the egg yolks, whisking to combine after each addition. Set the mixture aside. In a medium-sized heavy-bottom saucepan, place the remaining 2 1/2 cups (20 fl. oz.) milk and bring to a simmer over medium-high heat. Once the milk reaches a simmer, remove the saucepan from the heat and add the hot milk to the bowl with the egg and chocolate mixture in a slow trickle, whisking constantly to combine. The purpose of adding the hot milk slowly is to avoid cooking the egg yolks by bringing them up to temperature slowly. Once all of the hot milk has been added, pour the whole mixture back into the saucepan and return to the heat. Cook, whisking constantly, over medium-high heat until thickened enough that the whisk leaves a visible trail in the pudding as you whisk it (2 to 3 minutes). Remove the pan from the heat, add the chopped chocolate and the vanilla, and stir until the chocolate is melted and the pudding is smooth. Pour the pudding into 8 small, heat-safe containers and allow to cool. Serve chilled or at room temperature. The pudding will thicken as it cools.

OLD FASHIONED CORNSTARCH PUDDING

1/3 cup cornstarch
1/2 teaspoon salt
3/4 cup sugar
1 cup milk
2 1/2 cups milk, scald
2 tablespoons butter
1 teaspoon vanilla extract
fresh, crushed strawberries or any favorite sauce

Steps:

  • Mix cornstarch, salt, and sugar together. Add milk and mix until smooth. Scald milk in top of double boiler. Add cornstarch mixture and cook until thick. Add butter and vanilla. Pour into molds or custard cups. Chill. Unmold and serve with fresh crushed strawberries or any favorite sauce.
