CORN, HOMINY, AND BLACK BEAN TACO SOUP

A nice, hearty soup, perfect for a cold day. Feel free to sprinkle the top of the bowl with shredded cheese and a dollop of sour cream. It's also good with crushed tortilla chips mixed in.

Number Of Ingredients 12

2 teaspoons olive oil
1 large onion, diced
1 lb lean ground beef
3 cups frozen sliced carrots (or 2 -3 fresh carrots, sliced)
2 (1 ounce) packets taco seasoning
1 (15 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
4 cups water
2 cups frozen corn
1 (15 ounce) can hominy
1 (15 ounce) can black beans
Tony Chachere's salt-free cajun spice

Steps:

  • Heat oil over medium-high heat in a large soup pot and saute onion for a couple of minutes.
  • Add beef and brown.
  • Add tomatoes, tomato sauce, water, seasoning and carrots. Reduce heat to medium-low and simmer for 45 minutes.
  • Add corn, hominy, and beans and simmer for 15 minutes.

CROCK POT CHICKEN TACO CORN SOUP

This is something I made that is based on the Chicken Taco Crock Pot recipies found here. While I was making it, I found that this proved to be better as a soup than as tacos. Maybe because I used too much chicken broth. Still, the result was tasty, so here it is. This is based on a crock pot that only has on/off as a setting, so timing may vary from pot to pot

3 boneless skinless chicken breasts, cut into three pieces
2 tablespoons taco seasoning mix
1 (16 ounce) package frozen corn
1 (15 ounce) can low sodium chicken broth
low-fat cheddar cheese, grated (optional)
low-fat sour cream, to taste (optional)

Steps:

  • Combine 2 TB of taco seasoning mix with the 15 ozs of chicken broth.
  • Cut chicken breasts into three pieces.
  • Dump everything into the crock pot for 4-6 hours or until chicken is ready.
  • When chicken is tender, shred with two forks.
  • Dump frozen corn into pot, heat for one hour.
  • Serve with Cheddar Cheese and/or sour cream on top, if desired.

If you need a meal in a hurry, this fast recipe fills the bill! When I have time, I like to make "edible bowls" of bread to serve the soup in- it makes for a unique presentation and a hearty main dish!

1 pound ground beef
1/4 cup chopped onion
2 cups fresh or frozen corn
1 can (15-1/2 ounces) kidney beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, drained
1 can (8 ounces) tomato sauce
1 envelope (1-1/4 ounces) taco seasoning
Corn chips, shredded cheddar cheese and/or sour cream, optional

Steps:

  • In a large saucepan, brown ground beef and onion; drain. Add corn, kidney beans, tomatoes, tomato sauce and taco seasoning. Cover and simmer for 15 minutes, stirring occasionally. Serve with corn chips, cheese and/or sour cream if desired.

2 pounds ground beef
1 medium onion, chopped
2 cans (15 ounces each) Italian tomato sauce
1 can (16 ounces) kidney beans, rinsed and drained
1 can (14-1/2 ounces) stewed tomatoes
1 can (12 ounces) whole kernel corn, undrained
Shredded cheddar cheese
Tortilla chips

Steps:

  • In a large saucepan, cook beef and onion over medium heat until the meat is no longer pink; drain. Add the tomato sauce, beans, tomatoes and corn; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Sprinkle with cheese. Serve with tortilla chips.
