3 zucchini, cut in half lengthwise
1 (8 ounce) package shredded Mexican cheese blend, divided
1 (15 ounce) can corn, drained
1 egg
salt and ground black pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Scrape the seeds and some of the meat from each zucchini and transfer to a bowl; add 3/4 of the Mexican cheese blend, corn, egg, salt, and pepper and mix well. Spoon corn mixture into the hollowed-out zucchini shells and arrange on a baking sheet.
  • Bake in the preheated oven for 20 minutes. Sprinkle the remaining cheese over each stuffed zucchini and continue baking until cheese is melted, about 5 minutes.

Stuffed Zucchini Bites with Black Beans and Corn image

These zucchini bites are filled with sauteed black beans and corn, then topped with Cotija for an easy vegetarian lunch or dinner.

1 pound zucchini, sliced crosswise into 1 1/2- to 2-inch rounds
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
2 scallions, chopped
2 cloves garlic, minced
8 ounces canned black beans, rinsed and drained
1 ear corn, kernels removed
Grated Cotija, for garnish

Steps:

  • Preheat the oven to 375 degrees F. Using a melon baller, carefully scoop out a little spot in the center of each zucchini round for the filling to sit, making sure to leave about a 1/2-inch "floor" at the bottom. Put the scooped zucchini centers on a cutting board, season with salt and pepper and chop.
  • Heat the oil in a large skillet over medium heat. Add the scallions and cook, stirring occasionally, until softened, about 2 minutes. Add the garlic and cook, stirring frequently, until fragrant, 30 seconds to 1 minute. Add the beans, corn and chopped zucchini centers. Cook, stirring frequently, until the zucchini begins to soften, 2 to 3 minutes.
  • Stuff the zucchini cups with the filling and bake on a rimmed baking sheet until the zucchini is cooked through, 25 to 30 minutes. Top with grated Cotija and serve.

1 small zucchini, finely chopped
1/4 cup fresh or frozen corn, thawed
3 tablespoons grated Parmesan cheese, divided
2 boneless skinless chicken breast halves (6 ounces each)
1 teaspoon olive oil
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a small bowl, combine the zucchini, corn and 2 tablespoons cheese. Cut a pocket in each chicken breast. Stuff each with 1/2 cup zucchini mixture; secure with toothpicks., Transfer to an 8-in. square baking dish coated with cooking spray. Drizzle with oil; sprinkle with salt, pepper and remaining cheese. Spoon remaining zucchini mixture around chicken. Bake, uncovered, at 350° for 30-35 minutes or until a thermometer reads 170°.

This recipe is one of only a handful of ways that I will eat zucchini. Corn, cheese and zucchini are just made for each other...a perfect combination for summer time meals. I don't bake this too long because I like it to just be crisp-tender.

2 long zucchini
1 cup corn kernel, fresh or frozen
2/3 cup ricotta cheese
2 tablespoons chopped chives or 2 tablespoons scallions
salt and pepper
1 pinch cayenne pepper
3/4 cup grated cheddar cheese
1/2 cup chopped fresh cilantro (to garnish)

Steps:

  • Blanch squash in boiling salted water for 5 minutes.
  • Place under cold water and drain.
  • Halve and scoop out the seeds, forming a hollow boat.
  • Coarsely puree the corn, chives and ricotta cheese in a food processor and season with cayenne, salt and pepper.
  • Fill the squash halves with the mixture, mounding slightly.
  • Cover with the grated cheese.
  • Place in a buttered casserole and bake, covered, in a preheated 350 degree F.
  • oven for 15 minutes.
  • Uncover and bake 20 minutes more or longer until the squash is tender and the topping is browned.
  • Serve topped with fresh cilantro.

This recipe came out of a 1974 Southern Living cookbook. Great for the fresh veggies that we all harvest during the summer.

3 fresh small zucchini
3 slices bacon
2 cups fresh corn, cut off the cob (can use frozen)
1 cup water
salt and pepper

Steps:

  • Preheat oven to 350°F.
  • Cut the zucchini in half and remove the pulp.
  • Cook in boiling, salted water until almost done (beginning to get for tender) then drain.
  • Fry the bacon in a skillet until crisp, drain on paper towel, and crumble.
  • Add the corn, salt, pepper and 1 cup water to drippings in skillet and cook over low heat, stirring frequently, until water has evaporated, approximately 15 minutes.
  • Stir in bacon.
  • Place zucchini in baking pan with a small amount of water in pan.
  • Stuff the zucchini with the corn mixture.
  • Bake for 30 minutes.

4 medium zucchini
4 ears corn, husks removed
2 tablespoons unsalted butter
2 tablespoons chopped fresh cilantro leaves
1 tablespoon chopped fresh mint leaves
1 clove garlic, minced
Salt and freshly ground black pepper
2 to 3 ounces grated Parmesan

Steps:

  • Preheat the grill to medium. Slice the zucchini lengthwise, scoop out seeds and pulp and discard. Grill the corn until charred, then remove them from the grill and cut the kernels off the cobs. In a medium bowl add the corn and the butter and toss to coat. Add the herbs and garlic and season with salt and pepper, to taste. Stir in 1 to 2 ounces of the grated Parmesan. Stuff the zucchini with the corn mixture and grill over medium heat until warm. Sprinkle with the remaining Parmesan and serve when the cheese melts.

4 medium zucchini (about 8 ounces each), washed
Salt and ground black pepper
4tablespoons olive oil
1 medium Red Bliss potato (about 5 ounces), cut into 1/2-inch cubes
1 medium onion, chopped fine
1cup corn kernels, (fresh) cut from 2 medium ears
5large cloves garlic, minced
3 chipotle chiles en adobo, minced (about 3 tablespoons)
2 medium tomatoes (about 12 ounces), seeded and chopped
1 can (16 ounces) black beans, drained and rinsed (about 1 1/2 cups)
1/3cup fresh cilantro leaves chopped
6ounces Monterey Jack cheese, shredded (about 1 1/2 cups)

Steps:

  • 1. Adjust one oven rack to upper-middle position and second oven rack to lowest position, then place a rimmed baking sheet on each rack and heat oven to 400 degrees. 2. Meanwhile, halve each zucchini lengthwise. With small spoon, scoop out seeds and most of flesh so that walls of zucchini are 1/4 inch thick. Season cut sides of zucchini with salt and pepper, and brush with 2 tablespoons oil; set zucchini halves cut-side down on hot baking sheet on lower rack. Toss potatoes with 1 tablespoon olive oil, salt, and pepper in small bowl and spread in single layer on hot baking sheet on upper rack. Roast zucchini until slightly softened and skins are wrinkled, about 10 minutes; roast potatoes until tender and lightly browned, 10 to 12 minutes. Using tongs, flip zucchini halves over on baking sheet and set aside. 3. Heat remaining tablespoon oil in 12-inch skillet over medium heat until shimmering but not smoking, about 2 minutes. Add onion and cook, stirring occasionally, until softened and beginning to brown, about 10 minutes. Increase heat to medium-high; stir in corn and cook until almost tender, about 3 minutes. Add garlic and chipotle chiles; cook until fragrant, about 30 seconds. Stir in tomatoes, black beans, and cooked potatoes; cook, stirring occasionally, until heated through, about 3 minutes. Off heat, stir in cilantro and 1/2 cup cheese and salt and pepper to taste. 4. Divide filling evenly among squash halves on baking sheet, spooning about 1/2 cup into each, and pack lightly; sprinkle with remaining cheese. Return baking sheet to oven, this time to upper rack, and bake zucchini until heated through and cheese is spotty brown, about 6 minutes. Serve immediately.

3/4 cup frozen (thawed) whole kernel corn or cooled cooked fresh corn kernels
2 tablespoons diced red bell pepper
1 tablespoon chopped fresh or 1/2 teaspoon dried basil leaves
2 medium green onions, thinly sliced (2 tablespoons)
2 teaspoons olive or canola oil
1/8 teaspoon salt

Steps:

  • Cut zucchini lengthwise in half; place zucchini and water in rectangular microwavable dish, 11x7x1 1/2 inches. Cover with plastic wrap, folding back one edge or corner 1/4 inch to vent steam.
  • Microwave on High 3 to 5 minutes or until zucchini is crisp-tender. When cool enough to handle, scoop centers from zucchini, leaving 1/4-inch shells. Discard centers.
  • Mix remaining ingredients. Spoon about 2 tablespoons corn mixture into each zucchini shell.

1 fresh poblano chile pepper, seeded and finely chopped*
1/4 cup finely chopped onion
2 cloves garlic, minced
1/2 cup fresh or frozen whole kernel corn
1/3 cup chopped tomato (1 small)
1/3 cup canned no-salt-added black beans, rinsed and drained
1/2 cup shredded reduced-fat Monterey Jack cheese (2 ounces)
2 tablespoons snipped fresh cilantro

Steps:

  • Preheat oven to 400 degrees F. Trim ends of zucchini; cut each zucchini in half lengthwise. Using a melon baller or a small measuring spoon, scoop out and discard pulp, leaving 1/4-inch-thick shells. Place zucchini shells, cut sides up, in a shallow baking pan. In a large nonstick skillet, heat oil over medium heat. Add chile pepper and onion. Cook about 6 minutes or until tender, stirring occasionally. Add garlic; cook and stir for 1 minute more. Stir in corn, tomato, and black beans. Cook about 2 minutes or until heated through, stirring occasionally. Remove from heat. Stir in 1/4 cup of the cheese and the cilantro. Using a small spoon, divide bean mixture evenly among zucchini halves, packing filling lightly and mounding as needed. Sprinkle with the remaining 1/4 cup cheese. Bake, uncovered, about 20 minutes or until zucchini is tender. Makes 2 servings (2 zucchini halves each)
