1 tablespoon butter
3-1/3 cups fresh corn or 1 package (16 ounces) frozen corn
1 plum tomato, chopped
1 tablespoon lime juice
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/3 cup minced fresh cilantro

Steps:

  • In a large cast-iron or other heavy skillet, heat butter over medium-high heat. Add corn; cook and stir until tender, 3-5 minutes. Reduce heat to medium-low; stir in tomato, lime juice, salt and cumin. Cook until heated through, 3-4 minutes. Remove from heat; stir in cilantro.

This is a recipe I have been making for years. It is the number one dish people ask me to bring to parties. It is great with tortilla chips or on top of grilled chicken or steak. It also makes a wonderful filling for vegetarian tacos.

2 ears corn on the cob, husks and silk removed
2 tomatoes, chopped
2 avocados - peeled, pitted, and diced
½ bunch cilantro, stems cut off and leaves chopped
1 white onion, chopped
3 tablespoons chopped garlic
2 tablespoons olive oil
2 tablespoons red wine vinegar
kosher salt to taste

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Cook corn on the preheated grill until the kernels are lightly charred but still firm, 3 to 5 minutes per side, turning often. Cut kernels off the cobs, transfer to a large salad bowl, and let cool.
  • Mix in tomatoes, avocados, cilantro, white onion, garlic, olive oil, and red wine vinegar; season with kosher salt.

8 to 10 ears of corn on the cob (yellow or white corn)
3 tablespoons unsalted butter
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Remove the husks and the silk from the corn and cut the kernels off as close to the husk as possible without removing any of the husk. You should have about 7 cups of kernels.
  • Melt the butter in a large, heavy saute pan. Add the corn, salt, and pepper and saute uncovered on medium-low heat for 8 to 10 minutes, stirring occasionally, until all the starchiness in the corn is gone. Taste, for salt and pepper, and serve.

This recipe comes out of a Betty Crocker "Grill It!" magazine. It is sooo good! And sitting the corn in water for 2 hours is definitely the trick to nice crunch kernals of corn, instead of mush.

6 ears corn, in husks
1/3 cup butter or 1/3 cup margarine, softened
2 tablespoons chopped fresh cilantro
1/2 teaspoon lime zest
1/4 teaspoon garlic salt
1/4 teaspoon ground cumin
1/4 teaspoon black pepper

Steps:

  • Place corn (in husks) in large container; cover with cold water. Let stand 2 hours.
  • Make Garlic CIlantro Butter by mixing all ingredients. Cover and refrigerate until serving.
  • Heat coals or gas grill for direct heat. Cover and grill corn in husks 4 to 6 inches from medium heat 20 to 30 minutes or until corn is tender. Remove husks. Serve corn with Garlic Cilantro Butter.

1/2 teaspoon grated lime peel
1/4 teaspoon garlic salt
1/4 teaspoon ground cumin
1/4 teaspoon black and red pepper blend or black pepper

Steps:

  • Place corn (in husks) in large container; cover with cold water. Let stand 2 hours.
  • In small bowl, mix Garlic-Cilantro Butter ingredients. Cover; refrigerate until serving.
  • Heat gas or charcoal grill. Place corn (in husks) on grill over medium heat. Cover grill; cook 20 to 30 minutes, turning occasionally, until corn is tender. Remove husks from corn. Serve corn with Garlic-Cilantro Butter.
