I usually never set out to make corn fritters-it's almost always an afterthought following an overzealous session of cooking corn-on-the-cob.

3/4 c. All-purpose Flour
1 tbsp. Sugar
1 tsp. Baking Powder
2 whole Eggs
1/2 c. Milk, More To Thin If Necessary
1 tsp. Kosher Salt
1/2 tsp. Cayenne Pepper
4 c. (generous) Corn Kernels: Fresh, Frozen, Or Canned
3 tsp. Chopped Fresh Chives
Canola Oil, For Frying
Powdered Sugar (optional)
Maple Syrup (optional)

Steps:

  • Mix flour, sugar, and baking powder. Add eggs, milk, salt, and cayenne pepper. Stir together to make a batter.Add corn and chives to batter. Fold together to combine.Heat canola oil to 365 degrees. When oil is heated, drop spoonfuls of batter and cook, flipping to the other side, until golden brown.Drain on a towel-lined plate. Serve alone, with dipping sauces, or sprinkled with powdered sugar or drizzled with maple syrup.Divine!

It's a side dish, it's a party appetizer, it's brunch; it's Corn Fritters! Each bite will burst with fresh corn kernels. Crispy on the outside, warm and soft on the inside, these fritters put a smile on anyone's face.

1 ½ cups all-purpose flour (all purpose)
1 tablespoon sugar (granulated)
½ teaspoon salt (or to taste)
1 teaspoon baking powder
3 cups corn kernels (fresh, frozen, or canned (drained))
2 large eggs (lightly beaten)
⅔ cup half and half (10%MF, use more half and half if mixture is too dry)
¼ cup vegetable oil (or more if needed, for frying)
1 tablespoon chives (chopped )
sour cream (to serve)

Steps:

  • Dry ingredients: Whisk the flour, sugar, salt, and baking powder together in a large mixing bowl. Add the corn and stir to coat in the flour mixture.
  • Batter: Mix the cream and eggs together, then pour into the mixing bowl. Stir everything together until a wet batter forms. It should be a thick batter. See recipe notes.
  • Fry: Add enough vegetable oil to fully coat the bottom of your skillet. You'll have to do this in batches. Drop 2-4 quarter cup portions of batter, as many as your skillet can handle, and cook for 2-3 minutes over medium heat or until the bottom turns golden brown. Flip and cook for another 2-3 minutes. Adjust the heat as necessary. Repeat with remaining batter.
  • Serve: Serve sprinkled with chives and a dollop with sour cream.

1/3 cup all-purpose flour
1/8 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon paprika
1 egg, separated
3/4 cup frozen corn, thawed
Oil for deep-fat frying

Steps:

  • In a bowl, combine the flour, salt, baking powder and paprika. In another bowl, beat egg yolk; stir in corn. Add to flour mixture and mix well. Beat egg white until soft peaks form; fold into flour mixture. , In a deep-fat fryer, heat oil to 375°. Drop batter by heaping tablespoonfuls into oil; fry for 3-4 minutes or until golden brown. Drain on paper towels.

I usually deep fry my corn fritters, decided to try out the pancake version of cooking them and they turned out great!

15 ounces corn kernels (1 Can)
4 eggs
1 tablespoon baking soda
1 teaspoon salt
1 teaspoon black pepper
1 cup all-purpose flour
6 sprigs chives, chopped
oil (for frying)

Steps:

  • Sift flour, baking soda, salt and pepper together.
  • In a seperate bowl add all eggs and lightly beat.
  • Combine dry and wet ingredients together and mix until you have a pancake mix consistency.
  • Add corn and stir until blended.
  • Add chopped chives and blend.
  • Preheat girdle to 350 degrees F.
  • Drop mixture by tablespoons fills onto pre-heated girdle. Cook on one side for 4 - 5 minutes or until golden then flip to do the other side for 4 - 5 minutes.
  • Turn heat down to 200 and flip again for 1 minute on each side.
