MINI MEATBALL SANDIES

1/4 cup finely crushed corn cereal (such as Corn Flakes)
1 tablespoon chopped fresh flat-leaf parsley
1 large egg, lightly beaten
1/2 tablespoon olive oil
1 tablespoon ketchup, plus more for serving
2 tablespoons grated Romano cheese
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
8 ounces 96-percent lean ground beef
Twelve 2 1/2-inch diameter sweet dinner rolls, halved, such as King's Hawaiian

Steps:

  • Put an oven rack in the center of the oven. Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper and set aside.
  • In a medium bowl, stir together the cereal, parsley, egg, oil, 1 tablespoon ketchup, cheese, salt, and pepper. Add the ground beef and gently stir to combine. With damp hands, roll the mixture into 12 mini meatballs. Arrange the meatballs on the prepared baking sheet and bake until cooked through, about 15 minutes Cool for 10 minutes.
  • Make an indentation in the center of the bottom half of a roll. Slice a meatball in half and put in the indentation. Add about 1 teaspoon of ketchup to the meatballs and cover with the top half of the roll. Repeat with the remaining rolls and filling.
  • Arrange the sandies on a platter and serve.

Found on Kellog's web site and placed on Zaar for safekeeping. Sounds like the basis for a great meal with buttered noodles or rice. An easy sandwich or appetizer for football games too. OAMC adaptable because I am sure this will freeze well. Kelloggs had a 30 minute preparation time which must be inaccurate, so I guess-timated something that seems more reasonable.

2 cups corn flakes
2 tablespoons ketchup
1 egg, slightly beaten
1 lb lean ground beef
1 (15 ounce) can tomato sauce
1/2 cup ketchup
1/4 cup firmly packed brown sugar
1/4 cup finely chopped onion
2 tablespoons pickle relish
1 tablespoon Worcestershire sauce
2 teaspoons vinegar
1/4 teaspoon pepper

Steps:

  • In large mixing bowl, combine corn flakes, ketchup and egg.
  • Mix in ground beef.
  • Shape in 1 1/4-inch meatballs.
  • Place in single layer, in shallow baking pan, coated with cooking spray.
  • Bake at 400° F for 12 minutes or until browned.
  • In 4-quart saucepan, combine remaining ingredients.
  • Simmer over low heat 15 minutes, stirring frequently.
  • Add meatballs.
  • Continue cooking 15 minutes.

2 large eggs, lightly beaten
1 cup cornflake crumbs
1/3 cup ketchup
2 tablespoons dried minced onion
2 tablespoons soy sauce
1 tablespoon dried parsley flakes
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds ground pork
SAUCE:
1 can (14 ounces) jellied cranberry sauce
1 cup ketchup
3 tablespoons brown sugar
1 tablespoon lemon juice

Steps:

  • Preheat oven to 350°. Mix first 8 ingredients. Add pork; mix lightly but thoroughly. Shape into 1-in. meatballs. Place on a greased rack in a 15x10x1-in. pan. Bake until a thermometer reads 160°, 20-25 minutes. Drain meatballs on paper towels. , In a large skillet, cook and stir sauce ingredients over medium heat until blended. Stir in meatballs; heat through.

1/2 cup corn flake crumbs
1 small onion, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic salt
1 (8-ounce) can tomato sauce

Steps:

  • Preheat oven to 350 degrees. In a large bowl, combine all ingredients except tomato sauce. Shape mixture into 16 meatballs. Place meatballs into a greased 9 x 13-inch pan. Pour tomato sauce over the top. Bake for 1 hour.
