BEEFY CORNBREAD CASSEROLE
To stretch our grocery budget, we eat a lot of soups and pots o' beans. This satisfying Mexican corn bread always livens up the meal. Like many of my recipes, this one came from a church cookbook. -Patty Boling Seymour, Tennessee

- In a large skillet, cook the beef, onion and peppers over medium heat until meat is no longer pink; drain and set aside. In a small bowl, combine the cornbread mix, salt, baking soda, corn, milk, oil and eggs., Pour half in a greased 13x9-in. baking dish. Layer with half of the cheese and all of the beef mixture. Top with remaining cheese. Carefully spread remaining batter over top. , Bake, uncovered, at 350° until a toothpick inserted in the center comes out clean, 40-45 minutes.

- Heat oven to 350°.
- Cook beef in 10-inch ovenproof skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain.
- Stir in tomatoes, beans, tomato sauce, corn and chili powder; heat to boiling. Immediately top with corn bread twists left in round shape (do not unwind), pressing down gently.
- Bake uncovered 35 to 40 minutes or until corn bread is golden brown.

- Preheat the oven to 425 degrees F (220 degrees C).
- Heat olive oil in a skillet over medium-high heat. Add onion and red bell pepper; saute until softened, 5 to 7 minutes. Add ground beef, garlic, chili powder, cayenne pepper, salt, and black pepper. Cook and stir until beef is browned and crumbly, 5 to 7 minutes.
- Mix corn into the beef mixture and toss to defrost, about 3 minutes. Drain and discard fat. Add about 1/4 of the shredded Mexican cheese blend and mix well. Pour meat sauce into a 9x13-inch casserole dish. Cover meat with a thin layer of salsa.
- Combine cornmeal, salt, and baking soda in a large bowl. Add milk and eggs; stir until well blended. Pour cornmeal mixture on top of salsa layer and top with remaining shredded Mexican cheese blend.
- Bake in the preheated oven until browned on top, about 30 minutes.

- Pre-heat oven to 400 degrees.
- Brown the ground beef.
- mix corn bread mix, eggs, and milk while the ground beef is cooking.
- drain ground beef.
- return to heat ground beef, taco seasoning, corn, black beans, and Rotel.
- Once, beef mixture is heated through, pour into baking dish.
- Sprinkle on a layer of shredded cheese.
- pour corn bread mixture on top and spread around evenly.
- Bake for 20 minutes.

- Preheat oven to 425f degrees. Spray a 9x13 baking dish with Crisco no-stick cooking spray.
- In a large pan, brown ground beef with onions and garlic. Drain excess grease.
- Put back in pan and stir in salsa.
- Prepare one packet of Martha White Yellow Cornbread mix with ⅔ cups water. Stir well then add ½ can cream style corn.
- Mix well then pour evenly into prepared baking dish.
- Spread ground beef mixture on top of cornbread mixture.
- Prepare second packet of Martha White Yellow Cornbread mix with ⅔ cups water. Stir well then add ½ can cream style corn. Mix well then pour evenly on top of ground beef mixture.
- Top with shredded cheese. Then evenly place pickled jalapeno slices on top.
- Cover with aluminum foil and cook for 15 minutes.
- Then remove foil and cook for an additional 10 minutes.
- Slice and serve with sour cream, pico de gallo or salsa!

- Preheat the oven to 375 degrees F.
- In a large skillet over medium heat, heat the oil until shimmering, about 2 minutes. Add the onion and saute until soft, about 5 minutes. Add the ground beef to the onion and saute, breaking it up with a spoon, until browned and cooked through, 8 to 10 minutes. Drain off any excess fat. Stir in the salsa, corn, vegetable broth, chili powder, cumin, 1 teaspoon salt and 1/2 teaspoon pepper. Transfer the mixture into a 9-by-13-inch baking dish, smoothing into an even layer.
- In a large bowl, mix together the corn muffin mix with about 1 1/2 cups milk, or just enough to make it easy to spread. Spread it thinly over the chili mixture. Bake until browned to top, 30 to 35 minutes. Remove from the oven and set aside for 10 minutes to allow the casserole to set. Top with the Cheddar and sour cream before serving.
