1 medium ear sweet corn, husks removed
3 large red tomatoes, sliced
3 large yellow tomatoes, sliced
3/4 teaspoon kosher salt, divided
1/2 teaspoon pepper, divided
2 medium ripe avocados, peeled and sliced
1/4 cup olive oil
2 tablespoons red wine vinegar
1 tablespoon minced fresh basil, plus more for garnish
1/3 cup crumbled feta cheese

Steps:

  • Grill corn, covered, over medium heat 10-12 minutes or until lightly browned and tender, turning occasionally. Cool slightly. Cut corn from cob., Arrange tomato slices on a large serving platter. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Top with avocado slices. Whisk together the oil, vinegar, basil and remaining salt and pepper; drizzle half over the tomatoes and avocado. Top with grilled corn and feta; drizzle remaining dressing over top. Garnish with additional chopped basil.

2 pints cherry, grape, or pear tomatoes, halved (or quartered if large)
1 avocado, halved, pitted, peeled, and diced
2 scallions, thinly sliced
2 tablespoons fresh lime juice
1 tablespoon vegetable oil, such as safflower

Steps:

  • Stand ear in a large wide bowl; with a sharp knife, carefully slice downward to release the kernels. Discard cob. Add tomatoes, avocado, scallions, lime juice, and oil to bowl. Season with salt and pepper, and toss gently to combine.

Coarse salt and freshly ground black pepper
6 to 8 ears sweet corn, husks removed
3 tablespoons olive oil
1 pound baby heirloom tomatoes, halved
1/2 bunch cilantro, chopped
1 jalapeno, seeded and finely chopped
4 cups arugula
Juice of 2 limes
3 tablespoons red-wine vinegar
1/4 cup extra-virgin olive oil, plus more for drizzling
2 avocados, pitted, peeled, and sliced

Steps:

  • Bring a large pot of salted water to a boil over high heat. Prepare an ice-water bath; set aside. Add corn to boiling water and cook, 3 to 5 minutes. Drain and immediately transfer to ice-water bath. Drain and pat dry.
  • Preheat a grill pan over medium-high heat. Brush corn with olive oil and season with salt and pepper; cook, turning, until lightly charred on all sides, 2 to 3 minutes per side.
  • Let corn cool slightly; cut kernels from cobs. Transfer corn to a large bowl, along with tomatoes, cilantro, jalapeno, arugula, lime juice, red-wine vinegar, and olive oil; season with salt and pepper. Toss to combine.
  • Transfer corn mixture to a serving platter and arrange avocado slices around salad; season with salt and pepper and drizzle with olive oil before serving.

3/8 cup extra virgin olive oil

Steps:

  • Preheat the oven to 400ยบ F. Soak the corn in the sink or a bowl filled with cold water for 10 to 15 minutes. Place on a baking sheet with sides and roast for 20 to 25 minutes, until the kernels are tender. Cool to room temperature, then pull off and discard the husks and silks. Cut the kernels off the cob into a large bowl.
  • Add the mozzarella, avocados, tomatoes, basil, salt and pepper to the bowl with the corn. Drizzle 1⁄2 cup of the vinaigrette over the salad and toss gently. Be careful not to over-mix or mash the avocado. Season with more salt, pepper or vinaigrette to taste. Serve on a bed of the arugula or baby greens.

  • Combine the vinegar, mustard, lemon zest and juice, basil, oregano, and parsley in a small bowl, and stir to mix. 1 can black beans, rinsed
1 1/4 cups corn
1 red pepper, diced
1 cup cherry tomatoes (I used half red, half yellow)
1/2 cup packed fresh cilantro, chopped

Steps:

  • Place the cucumber, black beans, corn, red pepper, cherry tomatoes, and chopped cilantro in a bowl. Squeeze the fresh juice from the lime onto the salad, and stir well. 3/4 cup bottled roasted red pepper, chopped (or 1 c fresh red bell pepper)
4 -5 tablespoons cilantro, chopped, plus additional for garnish

Serves 4 to 6. **COOK's NOTES: I was in a rush, so I used two cans of mexi corn, but I'm sure fresh would be better. I also didn't make the dressing separately and instead drizzled the olive oil and squeezed half a lime over this. That did mean that I had to add the avocado last so it wouldn't get crushed when I tossed the salad.

SALAD INGREDIENTS
1 bag(s) frozen corn
5 campari tomato
1 avocado
1 1/2 tsp salt
1 1/2 tsp black pepper
1 tsp onion powder
DRESSING
1/2 c olive oil
3 Tbsp red wine vinegar
1 garlic clove, minced
1 pinch white sugar
6 basil leaves, minced

Steps:

  • 1. Drizzle casserole pan, or cookie sheet, with olive oil. Arrange frozen corn on pan, spreading into the corners. Broil in oven for about 15 minutes, or until corn is slightly charred.
  • 2. (if corn is over charred, it will be gummy!)
  • 3. Whisk together all dressing ingredients. Set aside.
  • 4. After corn is charred, set aside for 5-10 minutes to allow it to cool.
  • 5. Mix together corn, tomato, salt, pepper and onion powder.
  • 6. Pour in dressing.
  • 7. Place in fridge to cool, about 20-30 minutes.
  • 8. When you take it out of the fridge, it would be optional if you want to drain out the excess dressing. Taste and add salt / pepper if need to. Add sliced avocado on top. Yum!
  • 9. Also, you can add this salad to a regular tossed salad. Double yum!

1 (1 1/4 ounce) envelope Good Seasons Italian dressing (and oil & vinegar to make it)
2 limes, juice of
15 ounces canned black beans, rinsed
15 ounces canned corn, drained (southwest mix with bell peppers)
1 small red onion, diced
2 -3 ripe tomatoes, diced
2 -3 ripe avocados, diced
1 small can roasted green chilies (optional)
2 jalapenos, diced (optional)

Steps:

  • In a liquid measuring cup, whisk Good Seasons salad dressing following directions on the pouch, but substitute water for the juice of 2 limes.
  • Layer ingredients into a large bowl.
  • Pour salad dressing on top and gently toss.
  • Let sit, covered, in fridge for a couple hours - if you can wait that long!

2 bacon slices, halved
1/4 c low-fat buttermilk
1 T finely chopped fresh chives
1 T finely chopped fresh basil
2 T canola mayonnaise
2 t cider vinegar
1 garlic cloves, minced
1/4 t freshly ground pepper, divided
2 ears shucked corn
2 large beefsteak tomatoes, cut into 8 slices total
2 globe tomatoes, cut into 8 slices, total (1/2")
1/8 t kosher salt
1/2 ripe peeled avocado, thinly sliced
4 t. olive oil

Steps:

  • Preheat grill to high heat. Heat a large nonstick skillet over medium heat. Add bacon and cook 8 minutes or until crisp, tossing occasionally to curl. Drain on paper towels. Combine buttermilk and next 5 ingredients (through garlic) stirring with a whisk. tir in 1/4 t pepper. Coat corn with cooking spray Place on grill and cook 8 minutes or util well marked, turning occasionally. Remove fro grill, cook slightly and remove from cobs. Sprinkle tomato slices with salt. Alternate layers of tomato and avocado on each of 4 plates. Scatter corn evenly onto plates. Drizzle each stack with about 1 1/2 T buttermilk dressing and 1 t oil. Sprinkle remaining 1/4 pepper over salads. Top each salad with 1 bacon piece.
