- Grill corn, covered, over medium heat 10-12 minutes or until lightly browned and tender, turning occasionally. Cool slightly. Cut corn from cob., Arrange tomato slices on a large serving platter. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Top with avocado slices. Whisk together the oil, vinegar, basil and remaining salt and pepper; drizzle half over the tomatoes and avocado. Top with grilled corn and feta; drizzle remaining dressing over top. Garnish with additional chopped basil.

- Bring a large pot of salted water to a boil over high heat. Prepare an ice-water bath; set aside. Add corn to boiling water and cook, 3 to 5 minutes. Drain and immediately transfer to ice-water bath. Drain and pat dry.
- Preheat a grill pan over medium-high heat. Brush corn with olive oil and season with salt and pepper; cook, turning, until lightly charred on all sides, 2 to 3 minutes per side.
- Let corn cool slightly; cut kernels from cobs. Transfer corn to a large bowl, along with tomatoes, cilantro, jalapeno, arugula, lime juice, red-wine vinegar, and olive oil; season with salt and pepper. Toss to combine.
- Transfer corn mixture to a serving platter and arrange avocado slices around salad; season with salt and pepper and drizzle with olive oil before serving.

- Preheat the oven to 400ยบ F. Soak the corn in the sink or a bowl filled with cold water for 10 to 15 minutes. Place on a baking sheet with sides and roast for 20 to 25 minutes, until the kernels are tender. Cool to room temperature, then pull off and discard the husks and silks. Cut the kernels off the cob into a large bowl.
- Add the mozzarella, avocados, tomatoes, basil, salt and pepper to the bowl with the corn. Drizzle 1⁄2 cup of the vinaigrette over the salad and toss gently. Be careful not to over-mix or mash the avocado. Season with more salt, pepper or vinaigrette to taste. Serve on a bed of the arugula or baby greens.

- Combine the vinegar, mustard, lemon zest and juice, basil, oregano, and parsley in a small bowl, and stir to mix. - Place corn in a large bowl. Add avocado, halved cherry tomatoes, and red onion. In a separate bowl, whisk together olive oil, lime juice, lime zest, cilantro, salt and freshly ground black pepper. Stir the vinaigrette into the salad and serve. Serves 4 to 6. **COOK's NOTES: I was in a rush, so I used two cans of mexi corn, but I'm sure fresh would be better. I also didn't make the dressing separately and instead drizzled the olive oil and squeezed half a lime over this. That did mean that I had to add the avocado last so it wouldn't get crushed when I tossed the salad.

- 1. Drizzle casserole pan, or cookie sheet, with olive oil. Arrange frozen corn on pan, spreading into the corners. Broil in oven for about 15 minutes, or until corn is slightly charred.
- 2. (if corn is over charred, it will be gummy!)
- 3. Whisk together all dressing ingredients. Set aside.
- 4. After corn is charred, set aside for 5-10 minutes to allow it to cool.
- 5. Mix together corn, tomato, salt, pepper and onion powder.
- 6. Pour in dressing.
- 7. Place in fridge to cool, about 20-30 minutes.
- 8. When you take it out of the fridge, it would be optional if you want to drain out the excess dressing. Taste and add salt / pepper if need to. Add sliced avocado on top. Yum!
- 9. Also, you can add this salad to a regular tossed salad. Double yum!

- Preheat grill to high heat. Heat a large nonstick skillet over medium heat. Add bacon and cook 8 minutes or until crisp, tossing occasionally to curl. Drain on paper towels. Combine buttermilk and next 5 ingredients (through garlic) stirring with a whisk. tir in 1/4 t pepper. Coat corn with cooking spray Place on grill and cook 8 minutes or util well marked, turning occasionally. Remove fro grill, cook slightly and remove from cobs. Sprinkle tomato slices with salt. Alternate layers of tomato and avocado on each of 4 plates. Scatter corn evenly onto plates. Drizzle each stack with about 1 1/2 T buttermilk dressing and 1 t oil. Sprinkle remaining 1/4 pepper over salads. Top each salad with 1 bacon piece.
