- Preheat oven to 350°. Mix first six ingredients; transfer to a greased 11x7-in baking dish. Prepare stuffing mix according to package directions. Spread over pea mixture. Bake, uncovered, until lightly browned, 20-25 minutes.

DEEP DISH PEA AND VEGETABLE CASSEROLE
A creamy deep-dish casserole featuring everyone's favorite: PEAS! Don't be afraid of these little green morsels of goodness. And consider this one for a change-up this Thanksgiving instead of the same-old same-old green bean and soggy deep-fried onion casserole.

Steps:
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower and carrots, cover, and steam until tender, 4 to 6 minutes. Drain and set aside.
- Preheat oven to 350 degrees F (175 degrees C).
- Melt 2 tablespoons butter in a large skillet over medium heat. Stir flour into butter to make a smooth mixture; cook for 1 minute. Stir milk, sugar, salt, and black pepper into the flour mixture; continue cooking and stirring until the sauce thickens, 2 to 3 minutes. Fold cauliflower, carrots, peas, onion, green beans, green bell pepper, and garlic into the sauce to coat. Mix 1 cup Cheddar cheese into the vegetable mixture. Transfer the mixture to a 2 1/2-quart casserole dish. Sprinkle remaining Cheddar cheese over the dish.
- Bake in preheated oven until top is golden and cheese is bubbly, about 30 minute.

- In a small skillet, saute the corn, mushrooms and onion in butter until mushrooms are tender. Stir in flour until blended; gradually add broth. Bring to a boil. Cook and stir for 1-2 minutes or until thickened. Remove from the heat. Add the cream, salt and pepper; stir in peas and cheese.

Steps:
- Place the peas and corn in a microwave safe casserole dish. Sprinkle the vegetables with 1/4 cup water.
- Cover the casserole with plastic wrap or the lid, pull back one corner to vent, and microwave the vegetables on high for 6 minutes. Stir the vegetables gently. Then microwave the peas and corn, uncovered, for 2 minutes longer.
- Drain the vegetables well and return them to the casserole dish. Add the butter and seasonings to the vegetables. Stir gently, then microwave, uncovered, for one minute longer, or until the butter is melted and the vegetables are hot. Let stand for 2 minutes on a solid surface so the heat distributes evenly, stir gently, and serve immediately.

CORN AND PEA CASSEROLE
My family loves this side dish to go along with holiday dinners, ham, turkey or lamb. It goes with everything.

- In an electric skillet, saute onions and celery in butter until tender and starting to turn brown. Add corn and peas mix well and heat together for 10 minutes on low. Add cream cheese and sour cream, stir until well blended. Add salt and pepper to taste. Pour into a 2 qt casserole dish (oven safe) and bake at 350 degrees for 30 minutes.
COLORFUL CORN & VEGGIE CASSEROLE
This is an easy side or vegetarian main. Lots of vegetables and gooey cheese baked into a yummy casserole. I use a frozen mixed vegetable with corn, diced carrots, peas, & green beans. This is good served with roasted chicken or baked fish. Add a green salad & dinner is ready!

Steps:
- Heat oven to 350. Spray rectangular glass casserole pan with cooking spray.
- Place margarine & frozen mixed vegetables into glass mixing bowl. Microwave 2 minutes until vegetables are thawed & butter is melted.
- Add everything except the cheese & tomatoes. Stir until blended.
- Stir in 6 oz of the cheese. Pour mixture into prepared pan.
- Top with thin slices of tomatoes in a pretty pattern. Sprinkle with reserved cheese.
- Bake in the center of the oven 25-30 minutes or until casserole is set and cheese is melted.
- Let set 5 minutes before cutting.
