Corn is my three boy's favorite vegetables, so we eat a lot of it. This recipe has been a favorite for years. My husband, Bob, and the boys really enjoy it.

Number Of Ingredients 10

6 bacon strips
1/2 cup chopped onion
2 tablespoons all-purpose flour
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup sour cream
3-1/2 cups fresh or frozen whole kernel corn
1 tablespoon chopped fresh parsley
1 tablespoon minced chives

Steps:

  • In a large skillet, cook bacon until crisp. Drain, reserving 2 tablespoon of drippings. Crumble bacon; set aside. , Saute onion in drippings until tender. Add flour, garlic, salt and pepper. Cook and stir until bubbly; cook and stir 1 minute more. Remove from heat and stir in sour cream until smooth. Add corn, parsley and half of the bacon; mix well. , Pour into a 1-qt. baking dish. Sprinkle with remaining bacon. Bake, uncovered, at 350° for 20-25 minutes or until heated through. Sprinkle with chives.

1 Reynolds® Slow Cooker Liner
4 (10 ounce) packages frozen whole-kernel corn, thawed*
1 ½ cups half and half, light cream, or whole milk
1 cup chopped onion
½ cup finely shredded Parmesan cheese
¼ cup butter, cut up
½ teaspoon salt
¾ cup shredded Monterey Jack cheese
6 thick slices peppered bacon, crisp-cooked and chopped
½ cup chopped tomato
2 tablespoons snipped fresh basil

Steps:

  • Line a 5- to 6-quart slow cooker with a Reynolds® Slow Cooker Liner.
  • Place 2 packages of the corn in a blender with the cream or milk. Cover and blend until smooth. Transfer to prepared slow cooker.
  • Stir remaining corn, onion, Parmesan cheese, butter, and salt into the corn mixture in cooker. Stir gently with a rubber spatula to combine.
  • Cover and cook for 2 hours on high or for 4 hours on low. Transfer to a serving dish.
  • Sprinkle with Monterey Jack cheese, bacon, tomato, and basil.

2 (15 ounce) cans cream-style corn
2 eggs, beaten
½ cup chopped onion
½ cup chopped bell pepper
1 cup milk
16 crushed saltine crackers

Steps:

  • Preheat oven to 350 degrees F (175 degrees C), and grease a 9x13 inch baking dish.
  • Cook the bacon in a large skillet over medium-high heat, turning occasionally until crisp and brown, about 10 minutes. Drain the bacon slices on a paper towel-lined plate, and crumble when cool enough to handle.
  • Mix corn, crumbled bacon, eggs, onion, bell pepper, milk, and crushed crackers in prepared baking dish, and bake in the preheated oven for 1 hour, until the casserole is thickened and bubbling.

1 1 Egg, 1 Egg, beaten

1/2 1/2 1/2 cup Melted Butter
1/2 1/2 1/2 cup Diced Onion
1/4 1/4 1/4 cup Real Bacon Bits, i use ones from a jar
1 1 1 cup Dried Sweetened Cranberries
1 1 (7 Oz) Pkg 1 (7 Oz) Pkg of Mexican Cornbread Mix
1 1 1 cup Shredded Monterey Jack Cheese
1 1 (4 Oz.) Can 1 (4 Oz.) Can Mild Green Chilies, drained

Steps:

  • Preheat oven to 350 degrees. In large bowl combine corn (thawed, if frozen), creamed corn, egg, sugar, butter, onion, bacon bits & cranberries. Mix well. Add cornbread mix and cheese. Mix well. Fold in green chilies, red peppers and cilantro. Pour into a large, greased 11x14" baking dish and bake for 45 minutes or until golden brown.

Saute onion in drippings until tender and then add the flour, garlic, salt and pepper and cook and stir until bubbly then cook and stir 1 minute more. Take this from the heat and stir in the sour cream until smooth and then add the corn, parsley, and half of the bacon and mix well. Pour this mixture into a 1 quart baking dish and sprinkle with the remaining bacon. Put this Bacon And Corn Casserole uncovered into a 350 degree oven and bake for 20 minutes or until heated through. Take out of the oven and sprinkle with chives.
