FRIZZLED BRUSSELS SPROUTS WITH ROASTED ROMANESCO



Frizzled Brussels Sprouts with Roasted Romanesco image

1/2 head romanesco, florets quartered
1 lemon, juiced
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 clove garlic, smashed
Pinch of crushed red pepper flakes
1 pint Brussels sprouts, stemmed and leaves pulled apart
Pomegranate seeds

Steps:

  • Preheat the oven to 400 degrees F.
  • Toss the romanesco with half of the lemon juice, some olive oil and season with salt and black pepper. Put on a baking sheet and place into the oven. Roast until golden brown, about 10 minutes.
  • Coat a large saute pan with olive oil. Add the garlic and red pepper flakes and bring to medium heat. When the garlic has turned a lovely golden brown, 2 to 3 minutes, remove it from the pan and ditch it - it has fulfilled its garlic destiny!
  • Add the Brussels sprouts and toss to combine. Season with salt, and cook until the sprouts have wilted, 2 to 3 minutes.
  • Remove the lid, raise the heat to medium-high and let the sprout leaves brown and frizzle, about 5 minutes more. Taste and season with salt if needed.
  • Toss with the pomegranate seeds, roasted romanesco and remaining lemon juice.

ROASTED BUTTERNUT SQUASH WITH CURRY AND CORIANDER

2 tablespoons unsalted butter
2 tablespoons olive oil
1 tablespoon plus 1 teaspoon curry powder
4 pounds butternut squash, peeled and cut into 1-inch pieces (about 8 cups)
2 tablespoons minced fresh coriander

Steps:

  • In a small saucepan heat the butter with the oil, the curry powder, and salt and pepper to taste over moderately low heat, stirring, until it is melted and in a roasting pan just large enough to hold the squash in one layer toss the squash with the curry mixture until it is coated well. Roast the squash in the middle of a preheated 375°F. oven, shaking the pan occasionally, for 25 minutes, or until it is tender. Season the squash with salt and pepper, add the coriander, and toss the mixture gently.

2 tablespoons whole coriander seed
2 bay leaves, crumbled
Salt and pepper
Vegetable oil, for grill
2 small hanger steaks (3 pounds total), patted dry

Steps:

  • Seal coriander in a zip-top bag and crush using a meat mallet or small skillet. Add bay leaves and 4 teaspoons pepper and shake to combine. Coat steaks with spice mixture, pressing to adhere.
  • Heat a grill or grill pan to medium-high. Clean and lightly oil hot grill. Season steaks with salt and grill, flipping once, 8 minutes per side for medium-rare. Transfer to a cutting board and let rest 10 minutes. Thinly slice against the grain and serve.
