I tried this one morning when I was out of blueberries (my usual favorite) and it is surprisingly good! I am posting it because, like me, I am sure not too many people would think to put strawberries in oatmeal, but it actually has become one of my favorite ways to eat oatmeal (a daily staple for me!) Also, fruit measurements are estimates, as I usually just use whatever I have.

1/2 cup quick-cooking oats
1 cup milk (I prefer vanilla soymilk) or 1 cup soymilk (I prefer vanilla soymilk)
1/2 cup strawberry
1/2 banana (optional)
sugar or artificial sweetener, if desired

Steps:

  • Add milk to oats in a deep bowl and microwave 3-5 minutes, depending on your microwave wattage and desired thickness. Watch carefully so it doesn't spill over the sides!
  • While oatmeal is cooking, wash and slice strawberries. Soft strawberries work well, so you may want to mash them a little bit, but that is up to you.
  • When cereal is done, stir strawberries and sliced banana (if using) into oatmeal. If desired, add a little sugar or splenda.
  • NOTE: It is also good with a little vanilla extract if you are using plain milk, just to give it some flavor. ALSO, You may need to re-heat oatmeal a little before eating if your strawberries cool it down too much.

I love Quaker Strawberries and Cream Instant Oatmeal but HATE the additives so I decided to make it with fresh ingredients.

Number Of Ingredients 7

3/4 cup chopped strawberries or 4 large strawberries
1 tablespoon turbinado sugar, if you like it sweeter (or more, can substitute white or light brown)
1/4 cup water
3/4 cup whole milk
1/2 cup organic quick oats
1 dash salt
1/4 teaspoon pure vanilla extract

Steps:

  • Chop the berries and coat them with the sugar, set aside.
  • In a small pot bring the water and milk to a simmer.
  • Add in the berry/sugar mixture and bring to a boil.
  • Add the oats and salt, cook 4 minutes.
  • Add the vanilla and cook another minute or until desired consistency.

1 cup old-fashioned oats
1 tablespoon flax seeds
1 tablespoon chia seeds
1/2 cup shredded coconut
1 cup diced strawberries
1 cup diced apples
3/4 cup whole milk
1/2 cup half-and-half or heavy cream
1/4 cup coconut milk
2 tablespoons heavy cream
1/4 cup brown sugar
1 tablespoon vanilla extract
Pinch of kosher salt

Steps:

  • Layer the oats, flax seeds, chia seeds, coconut, strawberries and apples into two 1-pint jars.
  • In a pitcher, mix up the milk, half-and-half, coconut milk, heavy cream, sugar, vanilla and salt. Pour over the seeds and fruit in the jars. Put the lids on the jars, shake them and place them in the fridge for at least 5 hours, but preferably overnight.
