This copycat McAlister's tortilla soup is so easy to make at home. It can be made in just 30 minutes! It is a delicious and comforting soup that is loaded with flavor.

2 tbsp unsalted butter
1 yellow onion (minced)
2 cloves of garlic (minced)
1 carton chicken broth or stock (about 32 ounces)
1 can cream of chicken (about 10.5 ounces)
2 cups shredded rotisserie chicken
1 can creamed corn (about 14.75 ounces)
1 can diced tomatoes (about 14.5 ounces)
2 tsp ground cumin
3 tsp chili powder
2 tsp paprika
1 tsp onion powder
1/8 tsp cayenne powder
1 cup half and half
salt and pepper (to taste)
shredded Monterey Jack
sliced avocado
tortilla strips
sour cream
pico de gallo

Steps:

  • In a large pot or dutch oven, melt the butter on low and then add the garlic and onion.
  • Move the heat to medium and saute until the onions begin to brown.
  • Reduce the heat and then add the remaining ingredients except for the half and half. Stir well.
  • Let simmer for about 20 to 25 minutes. Reduce the heat and stir in the half and half.
  • Top with shredded cheese and other desired toppings such as sour cream, fresh avocado, tortilla strips, fresh lime juice, and pico de gallo.

3 garlic cloves, minced
1 onion, chopped
3 tablespoons margarine
2 tablespoons all-purpose flour
3 (14 ounce) cans chicken broth
4 cups half-and-half
1 (10 3/4 ounce) can condensed cream of chicken soup
1 cup salsa
1 (15 ounce) can creamed corn
3 cooked boneless skinless chicken breasts
2 teaspoons ground cumin
2 1/2 tablespoons fajita seasoning mix
3 tablespoons fresh cilantro, chopped
16 ounces tortilla chips
8 ounces monterey jack cheese, shredded
1/8 cup green onion, chopped

Steps:

  • In a large pot over medium heat, saute the garlic and onion in the butter or margarine for 5 minutes.
  • Add flour and stir well, cooking for 1 minute more.
  • Add the broth and half-and-half. Bring to a boil and reduce heat to low. Add the soup, salsa, corn, chicken, cumin, fajita seasoning and 2 tablespoons cilantro. Stir and continue to heat for 15 minutes.
  • Crumble tortilla chips into individual bowls, add 1/2 ounce shredded cheese to each bowl and ladle in soup. Top each bowl with more crumbled chips, remaining 1/2 ounce cheese and remaining 1 tablespoon cilantro, few chopped green onions and serve.

3 tablespoons olive oil
1 medium onion, diced
4 ounces diced green chilies
1 ounce taco seasoning, packet
4 (14 ounce) cans chicken broth
1 (15 ounce) can black beans, drained
3 (15 ounce) cans navy beans, drained
1 (15 ounce) can corn, drained
3 cups chicken, cooked
1 cup heavy cream

Steps:

  • Heat the olive oil in a large pot, add the onions, and cook until translucent.
  • Drain the cans of beans and corn.
  • Next, add the green chilies, the taco seasoning packet, all the canned items, and the chicken.
  • Bring to a boil, then allow to simmer for several minutes until heated through.
  • Lastly, add the cream and heat for 5-10 more minutes.
