1/2 cup white vinegar
1/4 cup light brown sugar
1 tablespoon kosher salt
1/4 cup granulated sugar
2 tablespoons orange zest
2 teaspoons garlic powder
1 chicken bouillon cube
2 tablespoons vegetable oil, for grill
2 chicken breasts, cut in half, pounded 1/2 '' thin
4 hamburger buns, split and toasted
2 tablespoons butter, melted
1/2 head green leaf lettuce
1 tomatoes, sliced
4 slices colby-monterey jack cheese
8 slices smoked bacon, cooked according to package directions

Steps:

  • In a medium bowl whisk together ingredients for brine.
  • Add chicken, making sure to coat evenly. Allow chicken to marinate for 20 minutes. Remove chicken and pat dry with paper towels.
  • Heat grill to high, oil lightly. Grill chicken turning once until grill marks have appeared and chicken is opaque throughout, about 3 to 4 minutes a side.
  • Brush toasted buns with butter. Dividing evenly top each bun with lettuce, tomatoes, chicken, cheese, and bacon. Top with remaining bun halves. Serve hot.

1 chicken breast, butterflied
½ cup apple cider vinegar
½ cup water
½ tablespoon onion powder
½ tablespoon garlic powder
½ tablespoon smoked paprika
¼ cup orange juice
1 tablespoon grape juice
¼ cup chicken stock
1 tablespoon molasses
1 tablespoon salt
2 multigrain buns (or wheat if you can't find them)
2 pieces green leaf lettuce
4 slices tomato

Steps:

  • Butterfly the chicken breast.
  • Combine apple cider vinegar, water, onion powder, garlic powder, smoked paprika, orange juice, grape juice, chicken stock, molasses, and salt.
  • Add chicken to in marinade and refrigerate for a minimum of 4 hours.
  • Heat grill pan to medium-high.
  • Add safflower oil (or light flavorless oil) to grill pan.
  • Cook chicken for 3 minutes on grill. To assure sear marks, lightly press the chicken with a small sauce pan. Flip chicken and cook other side for an additional three minutes,
  • Add multi-grain (or wheat) buns to a separate pan, split-side down, set on the low, and cook for three minutes.
  • To the toasted bottom bun, add green leaf lettuce, two tomatoes to cover the entire bun, and chicken. Follow with optional sauce, and the top bun.

½ cup white vinegar
¼ cup light brown sugar
1 tbsp salt
2 tsp garlic powder
1 tsp orange zest
¼ cup granulated sugar
2 boneless skinless chicken breasts

Steps:

  • Marinade: Whisk together white vinegar, brown sugar, salt, sugar, garlic powder and orange zest until well-mixed; add chicken pieces. Soak chicken pieces in the marinade mixture for 30 minutes, moving them to the refrigerator to keep cool.
  • Grill Chicken: Remove chicken from brine and pat dry with a paper towel. Place on a hot grill at 400F (gas or charcoal work well). Watch the chicken as it cooks. When it starts to appear white around the edge, it is getting done and is ready to be flipped over so that the other side can cook. Cook until a meat thermometer inserted at the thickest part reads 165F.
  • Toast Buns: For the last few minutes, while the chicken is still on the grill, spread soft butter on both halves of the bun. Warm them on the grill face down. It doesn't take long for them to brown, so be sure to watch them attentively.

1/2 cup pickle juice
1/2 cup whole milk
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
3 cups all-purpose flour
1/4 cup powdered sugar
2 tablespoons baking powder
1 tablespoon kosher salt
1 tablespoon paprika
2 teaspoons chili powder
4 boneless skinless chicken thighs
1 egg
6 cups peanut oil
4 hamburger buns, split and toasted
2 tablespoons butter, melted
8 pickle chips from 1 jar of pickle chips (16oz)

Steps:

  • In a medium bowl whisk together wet ingredients, add chicken, making sure to coat evenly. Allow chicken to marinate for 20 minutes. Meanwhile, in a medium sized pot, over medium-high, heat oil to 350°F While oil heats, in a medium bowl, whisk together dry ingredients.
  • Reserving the marinade, remove the chicken to a plate. Whisk the egg into the marinade. Dip the chicken into the egg mixture, one piece at a time, shaking off excess egg mixture. Dredge chicken piece in flour mix, making sure to coat evenly on both sides. Repeat the breading process (egg mixture to flour mix) one more time, set chicken aside. Line a baking sheet with paper towels.
  • Once oil is heated, cook chicken until golden brown on each side, about 2 to 3 minutes a side. Chicken should be opaque in the center. Place cooked chicken on prepared baking sheet to drain.
  • Brush toasted buns with butter, place two pickle slices on each bun and top with chicken.
