MONSTER COOKIE ICE CREAM SANDWICHES

A fun summer slumber party treat, make these monster cookie ice cream sandwiches with oatmeal cookies, vanilla ice cream, chocolate chips and peanut butter.

1 pouch Betty Crocker™ oatmeal cookie mix
1/2 cup butter, softened
1 tablespoon water
1 egg
1/2 cup raisins
3 cups vanilla ice cream
1/4 cup M&M's® chocolate candies
1/4 cup semisweet chocolate chips
3 tablespoons creamy peanut butter

Steps:

  • In medium bowl, stir together ice cream, chocolate candies, chocolate chips and peanut butter. Freeze until firm, about 1 hour.
  • Meanwhile, heat oven to 375°F (350°F for dark or nonstick cookie sheets). In large bowl, combine cookie mix, butter, water and egg; stir just until combined. Stir in raisins.
  • Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
  • Bake 11 to 13 minutes or until light golden brown. Cool 1 minute on cookie sheets. Transfer cookies to cooling racks; cool completely, about 30 minutes.
  • Onto bottom side of half of the cooled cookies, place scant scoop of ice cream mixture. Top with another cookie, bottom side down. Place sandwich cookies on cookie sheet. Freeze until firm, about 1 hour, before serving.

I got this recipe from my friend Caroline. My autistic son is a HUGE Cookie Monster fan and this is his favorite snack. The other children also like it.

2 c heavy cream
1 (14 oz.) can(s) sweetened condensed milk
1 Tbsp vanilla
1/2 tsp blue food coloring
20 oreos
15 chocolate chip cookies

Steps:

  • 1. Break 15 Oreos and 10 chocolate chip cookies into chunks and set aside.
  • 2. Combine the heavy cream, vanilla and food coloring. Whip until stiff peaks form.
  • 3. Add the milk and beat until the color is uniform. Add more food coloring if needed.
  • 4. Gently fold in the broken cookies.
  • 5. Transfer into a loaf pan.
  • 6. Break up the remaining 5 Oreos and 5 chocolate chip cookies.
  • 7. Sprinkle them over the top of the pan.
  • 8. Cover the pan and place in the freezer for at least 5 hours.
