1 (16 ounce) package mini chocolate sandwich cookies (such as Oreo® Mini)
1 quart vanilla ice cream, softened
1 (6 ounce) chocolate sandwich cookie crumb crust (such as an OREO® crust)
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • Reserve 8 mini sandwich cookies for garnish. Place remaining cookies in a food processor or plastic bag and crush coarsely.
  • Stir crushed cookies into softened ice cream. Put ice cream mixture into cookie crust and place in the freezer until set, about 1 hour.
  • Pipe whipped topping around the edge of the pie and top with the reserved cookies, standing on end. Freeze for 3 to 8 hours before serving.

1/3 cup butter, softened
2 tablespoons water
1/2 cup hot fudge topping
1 quart (4 cups) cookie dough ice cream, slightly softened

Steps:

  • Blend cookie mix, butter and water; reserve 1/2 cup dough. Press remaining dough into greased and floured 9-inch pie plate. Bake at 350°F for 14 to 16 minutes or until golden brown on edge. Cool on cooling rack 10 minutes.
  • Roll reserved dough into 16-1/2-inch balls and place on ungreased cookie sheet; press slightly to flatten. Bake at 350°F 6 to 8 minutes or until set.
  • Spoon about 1/4 cup fudge topping onto bottom crust. Spoon ice cream into crust. Freeze at least 2 hours. Place cookies on pie by pressing them in at an angle. Microwave remaining 1/4 cup fudge topping uncovered 30 seconds on High; drizzle over pie.

1/2 cup gluten-free chocolate fudge topping

Steps:

  • Heat oven to 350°F. In medium bowl, stir cookie mix, butter, vanilla and egg until soft dough forms. Divide dough in half (about 2 cups in each half). With half of the dough, shape, bake and cool cookies as directed on box. Reserve for another use.
  • Meanwhile, stir cocoa into remaining half of dough. Crumble dough onto cookie sheet with sides. Bake 8 to 10 minutes until dough is baked through and just starting to turn light brown. Cool 5 minutes; toss with spatula to make crumbs.
  • In ungreased 9-inch glass pie plate, press 1 cup of the cookie crumbs. Place small scoops of ice cream in single layer over crust; sprinkle with 3/4 cup of the crumbs. Top with remaining ice cream and crumbs. Cover; freeze at least 2 hours.
  • In small microwavable bowl, microwave chocolate fudge topping on High 10 to 15 seconds. Drizzle topping over pie just before serving.

8 ounces semisweet chocolate chips
1 teaspoon instant coffee crystals
1/2 teaspoon vanilla extract
1 pint coffee ice cream
1 9-inch-diameter purchased chocolate cookie crumb crust
10 chocolate sandwich cookies, crushed coarsely (about 1 cup)
1 pint chocolate ice cream
Additional sandwich cookies

Steps:

  • Bring whipping cream to simmer in small saucepan over medium heat. Remove from heat. Add chocolate chips; whisk until chocolate is melted. Whisk in coffee and vanilla. Let sauce cool.
  • Microwave coffee ice cream on low setting at 10-second intervals until slightly softened. Spread ice cream evenly in crust. Pour 3/4 cup chocolate sauce over; sprinkle with crushed cookies. Freeze until ice cream is firm, about 20 minutes. Drizzle 1/3 cup sauce over pie. Arrange chocolate ice cream in side-by-side scoops around edge of pie. Wedge 1 whole cookie between each scoop. Freeze pie until firm, at least 2 hours and up to 1 day. Cover and chill remaining sauce.

1 1/3 cups finely ground amaretti cookies (Italian macaroons) plus 1/2 cup coarsely crushed cookies
1 tablespoon sugar
2 pinches of salt
1/4 cup (1/2 stick) unsalted butter, melted
3 pounds firm but ripe peaches, halved, pitted, cut into 3/4-inch-wide wedges
1 cup (packed) plus 1 tablespoon golden brown sugar, divided
1 1/2 tablespoons fresh lemon juice
2 1/4 quarts vanilla ice cream (9 cups)
2/3 cup chilled heavy whipping cream
Even easier: Use purchased peach ice cream instead of mixing up your own.
Ingredient info: Amaretti cookies are available at supermarkets and Italian markets.

Steps:

  • Preheat oven to 350°F. Coat 9-inch glass pie dish with nonstick spray. Mix finely ground cookie crumbs, 1 tablespoon sugar, and pinch of salt in medium bowl. Add lukewarm melted butter; mix to blend. Press crumbs onto bottom and up sides of dish. Bake until golden around edges, about 10 minutes. Cool completely in dish on rack.
  • Preheat broiler. Line rimmed baking sheet with foil. Coat with nonstick spray. Arrange peaches in even layer on sheet. Basic recipe from Woman's World 12/18/08, but I have added instructions for an Oreo pie crust. Preparation time includes chilling time. To allow advance preparation of the whipped cream topping, I use Recipe #485591 #485591. Made 12/18/13: whipped cream was unnecessary; vanilla layer did not impress, why not use chocolate mint as a contrast? Used 12 Star Light peppermint candies in clock face layout and crushed 6 candies to sprinkle over top. I recommend using a rich ice cream so that it will soften easily. Edy's Grand Peppermint was super in this.

I happened to have all the items on hand and made it for dessert last night. It was a total hit and with the after dinner nibbling it was gone by midnight. I was given "permission" to make it again anytime.

1 cup whipping cream
8 ounces semi-sweet chocolate chips
1 teaspoon instant coffee
1/2 teaspoon pure vanilla extract
1 pint coffee ice cream
1 (9 inch) chocolate cookie pie crust
10 chocolate sandwich style cookies, crushed coarsely (about 1 cup)
1 pint chocolate ice cream
additional chocolate sandwich style cookies

Steps:

  • In a saucepan bring the whipping to a mild simmer and remove from heat.
  • Whisk in the chocolate chips till they melt.
  • Add coffee and vanilla and whisk in till well mixed.
  • Let mixture cool.
  • Soften coffee ice cream to a spreadable consistency in a microwave oven.
  • Spread ice cream into the crust.
  • Cover with 3/4 of the chocolate sauce.
  • Top with the crushed cookies.
  • Freeze 20 to 30 minutes, till firm.
  • Place scoops of the chocolate ice cream all around the edge of pie.
  • Place a whole cookie between each scoop and drizzle 1/3 of the chocolate sauce over all.
  • Freeze pie at least 2 hours.
  • Cover and chill remaining sauce.
  • When ready to serve pie reheat the sauce and serve it separately to pour over the pie.

1 1/3 c finely ground amaretti cookies(italian macaroons)
1 Tbsp granulated sugar
1 pinch salt
1/4 c unsalted butter, melted
FILLING:
3 lb firm but ripe peaches, halved, pitted, cut into 3/4 inch wide wedges
1 c packed golden brown sugar, divided
1 1/2 Tbsp fresh lemon juice
2 1/4 qt vanilla ice cream( 9 cups)
TOPPING:
1/2 c coarsely chopped amaretti cookies, for garnish
2/3 c chilled heavy whipping cream
1 Tbsp golden brown sugar, packed

Steps:

  • 1. Amaretti cookies are available at supermarkets and Italian markets. For easy application of this recipe use purchased peach ice cream instead of mixing up you own. But let me tell you the roasted peaches are the best.
  • 2. Crust: Preheat oven to 350^ Coat a 9-inch glass pie dish with nonstick spray. Mix the finely ground crumbs, 1 Tablespoon of sugar. and pinch of salt in medium bowl. Add lukewarm melted butter; mix to blend. Press crumbs onto bottom and up sides of dish to form a crust. Bake in oven for 10 minutes.Cool completely on wire rack.
  • 3. Preparing peaches: (if making your own mixture- skip if using store bought peach ice cream). --- Preheat broiler. Line a jelly roll pan with foil. Coat with non stick spray. Arrange peach slices in single layer on sheet. Broil until they begin to brown about 3 to 4 minutes. Sprinkle 1/4 cup of brown sugar over peaches. Broil until sugar melts and caramelizes, rotating sheet for even cooking, 2 to 3 minutes longer. Place peaches and juices to a large bowl- do not use any burnt parts. Add 3/4 cup of brown sugar, lemon juice and salt to peaches; stir until sugar dissolves. Cover; chill until cold , about 2 hours. (I make the peaches the night before to save time.)
  • 4. Next: Slightly soften the vanilla ice cream in microwave on low power in 20 second intervals. Stir to smooth but not soup. Place ice cream in a large bowl. Fold in the yummy peach mixture. They will break apart- that's good. Spoon about 2/3 of the ice cream into the cooled crust; smooth the top. Cover and freeze pie about 4 hours.
  • 5. With the remaining ice cream - make level scoops and arrange in a circle on top of pie. (This pie can be made 2 days ahead. Cover and keep frozen). -- With your electric mixer, beat the whipping cream and the remaining 1 Tablespoon of brown sugar in a medium bowl until stiff peaks form . Sprinkle Coarsely crushed coolie crumbs over pie. Cut into wedges and serve with a dollop of brown sugar whipped cream. Eat Enjoy! This is heaven.

1/2 cup creamy peanut butter
1/4 cup honey
1 cup Keebler® Chips Deluxe® Peanut Butter Cups cookie (about 8 cookies)

2/3 cup almonds, chopped
5 tablespoons brown sugar, divided
1 tablespoon flour
6 tablespoons butter, melted

3/4 lb strawberry, sliced (about 2 cups)
1 teaspoon vanilla extract

Steps:

  • In a medium bowl, combine oats, almonds, 3 tbsp of the brown sugar, flour and melted butter; toss thoroughly.
  • Press evenly into 9-inch pie plate that has been lightly coated with non-stick cooking spray.
  • Bake in 375° oven for 12-14 minutes until lightly browned.
