Makes a pretty, tasty side dish to go with any menu. I have used this several times when having guests and it is always a hit! It is very easy to prepare.

1 1/4 cups long grain rice
1 (13 ounce) can chicken broth
1 cup water
1 teaspoon salt
1 small carrot, chopped fine
1/2 cup frozen green pea
2 tablespoons butter, melted
1/4 teaspoon onion powder

Steps:

  • Place rice, chicken broth, water, salt and carrots in saucepan and cook for approximately 20 minutes or until rice is done.
  • Lightly stir in peas, melted butter and onion powder.

1 cup(s) uncle ben's rice
1 can(s) campbell's cream of mushroom soup
1 can(s) chicken noodle soup
- salt & pepper to taste

Steps:

  • When water starts to boil add rice. Cover. Simmer for 20 minutes. Remove from stove. Stir in soups. Mix well. Salt & Pepper for taste. Serve. That simple....enjoy! A side dish that compliments any meal.

3/4 cup pine nuts
3 tablespoons orange juice
1 cup dried currant
1 cup brown rice
1 cup white rice
2 tablespoons grated orange zest
2 tablespoons snipped parsley
4 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon white pepper
1 (3 ounce) package grated parmesan cheese

Steps:

  • Spread out pine nuts over baking sheet, and bake at 250 degrees for 10 minutes stirring once.
  • Remove from oven and set aside.
  • Pour orange juice over currants and set aside.
  • Cook brown rice and white rice according to package directions, and mix well in a seperate bowl.
  • Add pine nuts, currants, orange zest, parsley, olive oil, salt, and pepper to rice mixture, and mix well.
  • Spoon mixture into sprayed baking dish, cover with foil and bake at 350 degrees for 15-20 minutes, until well heated.
  • Sprinkle parmesan cheese and fresh parsley over top.
