1 (16 ounce) can refrigerated biscuit dough
1 cup shredded Cheddar cheese, divided
6 eggs
½ cup milk
4 teaspoons salt
½ teaspoon ground black pepper
1 (15 ounce) can HORMEL® Mary Kitchen® Corned Beef Hash
4 cups prepared country-style gravy

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with non-stick cooking spray.
  • Cut biscuits into quarters; arrange them to cover bottom of prepared baking pan. Bake in preheated oven until biscuits have started to cook but are not done, about 5 minutes. Sprinkle with 1/3 cup shredded Cheddar cheese.
  • Whisk eggs, milk, salt, and black pepper together in a mixing bowl.
  • Place a non-stick skillet over medium to medium-high heat. Spoon in the corned beef hash. Cook and stir until hot and beginning to crisp up, 5 to 8 minutes. Remove from heat. Pour in egg mixture and continue to stir until eggs have started to cook but are not set, about 30 seconds.
  • Spread egg and hash mixture evenly over biscuits. Sprinkle with remaining Cheddar cheese. Spread prepared country gravy over the top and bake until cooked through, about 45 minutes.

This unusual combination of ingredients in a pot came to us through a friend by way of her mother. Our friend's mom takes food to families who have suffered a death in the family. They take all sorts of things but this always goes first. It is tasty. She uses kielbasa but we use brats. We also use Splenda instead of sugar. It freezes and reheats well.

2 tablespoons butter, divided
1 onion, chopped
1 pound fresh bratwurst, cut into 2-inch pieces
1 head cabbage, cored and quartered
1 pound green beans, trimmed and cut into 2 inch pieces
½ teaspoon granular no-calorie sucralose sweetener (e.g., Splenda)
½ teaspoon salt
ground black pepper to taste

Steps:

  • Melt 1 tablespoon of butter in a skillet over medium heat. Add onions; cook and stir until tender. Place the green beans into a large pot with about 1 inch of water. Bring to a boil, and cook for 5 minutes.
  • Add the cabbage to the pot, and top with the cooked onion. Season with sweetener and salt, then top with bratwurst. Dot with remaining butter. Cook uncovered over low heat for 30 minutes. Stir, and serve.

3/4 cup butter
2 -3 medium onions, diced
9 -12 lasagna noodles

Steps:

  • Cook noodles as directed on package to al dente.
  • Saute onions in 1 stick of butter (may use more if desired).
  • Butter 13x9 inch pan with remaining 1/2 stick butter.
  • Mix sauteed onions with mashed potatoes.
  • Layer noodles, then potatoes, then cheese, and repeat, ending with cheese.
  • Cover with foil and bake in a 350° oven for 25-30 minutes or until cheese is melted.

  • Preheat oven to 350 degrees.Spray baking dish with non-stick spray.

This recipe came about after reading a thread about Spam and Velveeta, so I thought I would come up with this, not bad if I say so myself (but I like Spam and Velveeta :)). The prep time might be a little shorter or longer, had to guess at it.

1 (12 ounce) can Spam, diced
1 (8 ounce) package pasta (any style)
1 1/2 ounces Velveeta cheese (cut in small cubes)
1 (15 ounce) can of drained peas
6 tablespoons canola oil
1/3 cup of shredded carrot (peeled and washed)
1/4 cup finely chopped white onion
1 cup milk
1/4 cup flour (self-rising)
salt and pepper
cooking spray

Steps:

  • In a large saucepan, cook pasta according to package directions.
  • In a medium sized skillet over medium heat add oil when oil is hot, add Spam, carrots and onion. Stir until Spam is brown and onion and carrots are softened, about 10 to 15 minutes.
  • Remove from heat, in same skillet add pasta and peas mix well. In a lightly sprayed 8 by 11 inch dish, add pasta and Spam mixture. In a medium saucepan over medium heat add milk, Velveeta and flour. With wire whisk, whisk until smooth and slightly thickened. Pour over the pasta and Spam mixture, salt and pepper to taste then mix well. Evenly sprinkle shredded cheese over the top bake at 350­° until top is golden brown, about 25 to 30 minutes.

I remembered how it tasted but lacked the patience to actually stuff cabbage so I came up with an easier version.

1/2 head cabbage
1 lb ground beef
1 onion, chopped
1 bell pepper, chopped
2 stalks celery, chopped
1 tablespoon garlic, minced

2 cups cooked white rice
3 cups cheese, grated

Steps:

  • Chop cabbage and place in bottom of large buttered casserole dish, put aside.
  • Saute onion, pepper, celery & garlic in a little olive oil for a couple of minutes or so add ground beef and continue to cook until beef is browned. Remove from heat and pour off all oil. Fold in tomatoes, cooked rice and 1/2 can tomato sauce.
  • Spoon 1/2 rice mixture over cabbage. Sprinkle 1/2 of cheese on top. Layer remaining 1/2 of rice mixture. Pour remaining tomato sauce over mixture and top with remaining grated cheese. Bake at 350F for 45 minutes to one hour.

PLAN/PURCHASE
2 Tbsp grapeseed oil, for sautéing
2 medium chicken thighs with legs attached, bone in and skin on
salt, kosher variety, to taste
black pepper, freshly ground, to taste
1 medium yellow onion, chopped
2 clove garlic, minced
1 c brown rice
1/2 c dry white wine
1 1/2 c chicken stock, not broth
14 oz (1 can) chopped tomatoes, with juices
1/2 tsp ground cumin
1 pinch cayenne pepper, or to taste
6 oz button mushrooms, stemmed and quartered
1/2 c green peas, frozen variety

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your ingredients.
  • 3. Salt and pepper the chicken on both sides.
  • 4. Place 2 tablespoons of grapeseed oil in a heavy-bottomed pot, over medium heat.
  • 5. When the oil begins to shimmer, place the chicken, skin side down in the pot.
  • 6. Chef's Note: Allow the chicken to cook in the pot without moving for 3 to 5 minutes, or until the skin begins to crisp.
  • 7. Turn over and allow the chicken to cook without moving for an additional 3 to 5 minutes.
  • 8. Chef's Tip: When you place the chicken into the hot pan, it will have a tendency to stick to the surface, after several minutes of cooking without moving the chicken will easily release from the pot.
  • 9. Remove the chicken from the pot, and reserve.
  • 10. Add the onions and a pinch of salt, and cook until softened, about 7 to 10 minutes.
  • 11. Add the garlic and stir until fragrant, about 30 seconds.
  • 12. Add the rice, and the white wine.
  • 13. Stir until the wine has mostly evaporated, about 3 to 5 minutes.
  • 14. Add the tomatoes (including juice), and the chicken stock to the pot.
  • 15. Stir the sauce, and add the cayenne pepper, and ground cumin.
  • 16. As the liquid returns to a simmer, season with additional salt and pepper, if needed.
  • 17. Stir in the mushrooms, add the reserved chicken, and push them into the sauce.
  • 18. Bring this dish up to a simmer, and then cover the pot.
  • 19. Reduce the heat to medium low, and allow the ingredients to cook, and the rice to soften, about an hour.
  • 20. Remove from heat, and allow the chicken to rest for an additional 5 minutes.
  • 21. PLATE/PRESENT
  • 22. Serve the chicken with some of the rice and veggies, along with a nice Chardonnay. Enjoy.
  • 23. Keep the faith, and keep cooking.

HAMBURGER "COMFORT FOOD" CASSEROLE

Since I love casseroles I tried to modify my usual hamburger/potatoe casserole and I think I made it a little better this time with the additon of the rotel tomatoes and an addition of the vegetable soup. Since this juices up well you may need a thickener at the end. I added extra cheese and let it sit for about 15 minutes last time and that worked well. Hope you enjoy.

4 medium potatoes, peeled and chopped

1 cup shredded mozzarella cheese

Steps:

  • Fry hamburger with onion,and garlic,drain well.
  • Add chopped potatoes to hamburger mix and put in lightly greased 9x13 baking dish.
  • Combine next 7 ingredients and stir well.
  • Cover dish with foil and place in 375 oven for about 1 hour.
  • Doesn't hurt to remove foil and stir the casserole once during the cooking process.
  • Take out of oven and top with shredded cheese and place back in oven till bubbly.

1/3 cup finely chopped green pepper
1 tablespoon finely chopped onion

  • place 1 inch of water in a small saucepan. Add carrots, bring to a boil then simmer until crisp tender. drain and set aside.
  • In a small skillet, saute green peppers and onions in tbs of butter til tender. stir in flour, salt and pepper until smooth. Gradually add milk whisking to stop lumps. Bring to a boil, cook and stir 2 minutes until thickened.
  • Stir in jalapeno, parsley, savory and carrots. Transfer to a 2 cup baking dish coated with non stick spray.
  • In small pan, melt remaining butter add breadcrumbs. Cook and stir until toasted. Sprinkle over casserole. Bake uncovered at 350 for 15-20 minutes until bubbling.

Comforting roasted garlic mashed potatoes, layered with cheese and salami.

3 1/2 lbs russet potatoes
2 heads garlic
1 onion, sliced in half, cut side down
2 c. heavy cream
2 eggs
Salt, pepper, nutmeg to taste
1/4 lb provolone or mozzarella cheese, shredded
1/4 lb sharp cheddar cheese, shredded
1/4 lb thin-sliced Italian salami, cut in 1 inch pieces (try Genoa, Mortadella, or Soprassata)
1/2 c. breadcrumbs
1/2-1 c. grated Parmesan cheese

Steps:

  • Preheat oven to 350. Slice 1/3 off the top of the garlic heads, brush with olive oil and wrap each head individually in foil. Butter and bread-crumb 2 qt. casserole dish with high sides (6 inches or higher).
  • Pierce the potatoes with a fork or knife tip and place on a baking sheet along with the garlic and onion. Bake for one hour, or until potatoes are soft. Mash potatoes in a large bowl or use a standing mixer.
  • Add squeezed-out garlic and onion and mix till fairly smooth. Add cream, eggs, salt, pepper and nutmeg. Grate Parmesan, shred other cheeses.
  • Spoon about 2/3 of the potatoes into the prepared casserole dish, pressing potato mixture up sides. Layer salami, soft cheeses, half the Parmesan and half the breadcrumbs on top of the potatoes.
  • Season with salt and pepper. Top with remaining potato mix, sprinkle with rest of breadcrumbs and Parmesan cheese. Bake on cookie sheet one and a half hours. Let cool a bit before spooning out.

Comfort Spinach Casserole
•1/3 cup finely diced onion
•1 tablespoon extra-virgin olive oil
•2 cups ricotta cheese
•2 10-ounce packages frozen chopped spinach, thawed and drained
•1/2 cup shredded fontina cheese
•3 beaten eggs
•1/4 cup butter, softened
•3 tablespoons all-purpose flour
•1 teaspoon pepper
•2 tablespoons grated parmesan cheese

Steps:

  • Preheat oven to 350 degrees. Heat olive oil in skillet, then add onion and saute about 5 minutes, till soft. Press thawed and drained spinach in a clean towel or paper towels, eliminating almost all moisture. In a large bowl, combine ricotta cheese, spinach, fontina cheese, eggs, butter, flour and pepper. Add sauteed onion and transfer to a greased 1.5 quart casserole. Bake, uncovered in a 350 oven for 45 minutes. Check center for doneness. It should spring back; a food thermometer (or meat thermometer) inserted in the center should read 165 degrees. Cook for an additional 5-10 minutes if necessary. Sprinkle parmesan cheese over the top and serve warm.

1 lb. sausage
A pinch of savory seasonings: sage, thyme, and marjoram
2 heaping c. drained sauerkraut
6 medium russet potatoes (substitute half with sweet potatoes for a few extra vitamins)
Grated Parmigiano Reggiano cheese

Steps:

  • Brown sausage. Add a pinch of the savory seasonings. Drain. Set aside. Peel potatoes. Cut into quarters and boil till soft. Drain. Mash with milk, butter, and salt and pepper to taste. In an 8"x 8" pan, spread the drained sauerkraut on the bottom. Spread sausage evenly over the sauerkraut. Top with mashed potatoes, making sure to seal the mash to the sides of the pan. Grate Parmesan on top. Bake at 325 for 45 minutes.

3 (10 ounce) packages frozen chopped spinach
1 (8 ounce) package cream cheese, softened
1/4 cup butter

2 tablespoons parmesan cheese, grated

A number of years ago in a village in Spain I was served a dish similar to this recipe and thought of it as true comfort food.It was baked in a clay oven. It's been a while but this is my version of it. It was served for breakfast but I think of it more as a one dish dinner meal. It is an easy recipe with minimal preparation. You can make it ahead, reheat adding the eggs for the last 10 minutes. It can be as spicy or as tame as you like simply by choosing a type of sausage that you like. If you can get Portuguese Linguica sausage they would be perfect. I used Spanish Corizo-a very robust sausage full of smoke & flavor, You may even try Ham slices instead of sausage. The cook time is for making the recipe straight through-for "do ahead" allow another 40 minutes

2 tablespoons vegetable oil
1/3 cup mixed sweet red and green pepper, chopped
1 celery rib, chopped

1 (7 ounce) can tomato sauce
3/4 cup canned peas and carrots, drained (14 oz can will give you left overs to use in something else or fresh Peas and Carrots, cooked)
4 -6 red potatoes, cooked,left whole if small or quartered if larger
10 ounces smoked sausage, cut in 3/4 " pieces (Portuguese Linguica, Spanish Chorizo or sausage of your choice)
2 teaspoons hot paprika
1/4 cup white wine
2 tablespoons lemon juice
2 -4 eggs (at least one egg per person)

Steps:

  • Preheat oven to 375°F
  • Saute the onion & garlic in the vegetable oil until the Onion is translucent and the garlic is aromatic apprx 5 minutes
  • Add peppers & celery, cook a further 2 minutes
  • Add tomato sauce, sausage, potatoes & lemon juice
  • Sprinkle in the Paprika
  • Add drained peas & carrots & wine
  • Bring to a simmer
  • Transfer to a casserole dish with a lid
  • You may now continue to finish the dish or refrigerate it until 1 hour before serving bringing it to room temperature before placing it in the oven, If you have made this as a "do-ahead" allow 30 minutes at 375F to heat it to simmering
  • If you are continuing with the recipe without "doing ahead" place the casserole in the 375F oven and bring the contents to a bubbling simmer 5-10 minutes
  • Make a depression for each egg, crack in the eggs, cover and place back in the oven
  • Cook for apprx 10-15 minutes or until the eggs are done to your liking
  • Have one or two eggs on top of the sausage/vegetable mixture on each plate or bring the whole caaserole to the table

LISA'S COMFORT HEARTY GRAIN CASSEROLE image

Number Of Ingredients 13

1 tbsp olive oil, plus more for greasing pan
3 cups cooked whole grains (I use bulgar mostly)
2 cooked Italian-style chicken sausages, diced (I frequently sub black or garbanzo beans for this. I like to make it vegetarian)
1 cup grated provolone
1 15 oz can of diced tomatoes with liquid
1 large red bell pepper, seeded and diced
1/3 chopped fresh parsley or basil
1/4 cup pine nuts
1/4 cup grated Romano cheese
1 tsp minced garlic
1 tsp dried oregano
1/4-1/2 tsp crushed red pepper flakes
salt and pepper to taste

Steps:

  • Preheat oven to 375. Grease an 8 inch square baking pan. In a large bowel combine all of the ingredients, holding back 1/4 cup provolone. Place in pan, cover with foil and bake until hot (30-35 min) Uncover and sprinkle the remaining cheese on top. Baike until cheese is melted and caserole is bubbly, 3-5 min.
