This tasty and refreshing coleslaw is really easy to make and has the perfect balance of crunch, sweetness, and tang. There is no overwhelming soupy dressing with this coleslaw, and it is a great dish to serve at a summer meal alongside your favorite entrees!

2 tablespoons mayonnaise
1 tablespoon apple cider vinegar
1/2 teaspoon honey
1/4 teaspoon salt
Fresh ground black pepper
125 g shredded cabbage (any combination of green or purple)
1/4 crisp apple, (peeled, cored, and cut into matchsticks)
1/2 medium sized carrot, (peeled and grated)

Steps:

  • In a medium or large mixing bowl, combine all the dressing ingredients. Whisk well.
  • Add shredded cabbage, apple matchsticks, and grated carrot to the bowl and mix well with the dressing.
  • Refrigerate for at least 30 minutes.
  • Mix coleslaw again before serving. Best eaten the same day.

1/4 cup cider vinegar
1 cup mayonnaise
1/3 cup poppy seeds
1/3 cup honey
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 medium cabbage, cored, finely shredded
2 large carrots, peeled, julienne
1 bunch scallions, thinly sliced
1/2 cup finely minced parsley leaves, optional
4 Fuji apples, peeled, cored, julienne

Steps:

  • Prepare the Poppy Seed Dressing. In a medium bowl, combine all the ingredients together until well blended. Set aside.
  • Prepare the salad. In a large bowl, combine the cabbage, carrots, scallions, parsley, and apples. Pour in the reserved dressing and toss until well blended. Refrigerate at least 1 hour before serving, mixing the salad at least once to evenly distribute the dressing.

1 head green cabbage, cored and shredded
2 tart apples, peeled, cored and diced
2 carrots, peeled and shredded
6 green onions, chopped
1 green bell pepper, seeded and cut into thin strips
1/3 cup vegetable oil
1/2 cup vinegar
2 tablespoons Dijon mustard
1 1/2 tablespoons white sugar
1 teaspoon celery seed
3/4-1 teaspoon salt
1/2 cup crumbled feta cheese, divided

Steps:

  • Put cabbage, apple, carrot, onion, green peppers, and ONLY 1/4 cup of the feta in large bowl. Toss to mix.
  • Make dressing in a seperate bowl by combining oil, vinegar, mustard, sugar, celery seeds, salt and pepper; whisk to blend well.
  • Pour dressing over cabbage mixture and toss together to coat well.
  • Cover with plastic wrap and chill for 2 - 3 hours; toss again and sprinkle top with remaining 1/4 cup feta cheese.

ZOE'S FETA COLE SLAW

This is a little different from most coleslaws because it is vinegar based and has feta cheese in it. I love the slaw at Zoe's so I tried to re-create it and think I came pretty close. Not sure of the exact measurements so I just estimated them on here. Great for as a side for a BBQ. The cook time includes refrigeration.

1 small head of cabbage, thinly sliced
1 (6 ounce) package crumbled feta
6 -7 green onions, chopped
1/4 cup red wine vinegar (I used a splash of white vinegar along with this)
1/2 cup extra virgin olive oil
salt
pepper
1 -2 teaspoon sugar

Steps:

  • Combine shredded cabbage, feta and chopped green onions in a large bowl.
  • In a separate bowl whisk together vinegar, salt, pepper, sugar, and EVOO.
  • Pour over the slaw and toss.
  • Refrigerate until ready to serve. It's best if you let it refrigerate for a few hours so you may want to make it the day before.

1 cup walnut halves
DRESSING:
1/3 cup olive oil

2 garlic cloves, minced
1/2 teaspoon sugar
1/4 teaspoon dried oregano
1/8 teaspoon salt
1/8 teaspoon dried parsley flakes
1/8 teaspoon pepper
2 tablespoons finely chopped onion
SALAD:
5 cups torn romaine
5 cups torn red leaf lettuce
1 medium green apple, chopped
1 medium red apple, chopped
1/2 to 1 cup crumbled feta cheese

Steps:

  • Preheat oven to 350°. In a small skillet, melt butter over medium heat; stir in sugar and pepper. Add walnuts; toss to coat. Spread evenly onto a baking sheet. Bake until lightly browned, about 15 minutes, stirring every 5 minutes. Cool on a wire rack., Place dressing ingredients in a blender; cover and process until blended. Place salad ingredients in a large bowl; toss with dressing. Top with walnuts. Serve immediately.
