Here's what you need: mayonnaise, sour cream, lemon juice, apple cider vinegar, honey, salt, pepper, green cabbage, purple cabbage, large carrot

½ cup mayonnaise
½ cup sour cream
½ tablespoon lemon juice
2 tablespoons apple cider vinegar
2 teaspoons honey
1 teaspoon salt
½ teaspoon pepper
3 cups green cabbage, very thinly sliced, 1/2 small head
3 cups purple cabbage, very thinly sliced, 1/2 small head
1 large carrot, peeled and grated

Steps:

  • In a large bowl, whisk together the mayonnaise, sour cream, lemon juice, vinegar, honey, salt, and pepper.
  • Add the green cabbage, red cabbage, and carrot, and toss to coat. Cover and chill until ready to serve.
  • Enjoy!

I don't like sweet coleslaw nor does anyone in my immediate family, so I found a recipe in BH&G cookbook and since the book has been packed away for moving, I had to make up my own.

1/2 head cabbage
1 medium carrot
1/2 cup onion (diced)
2 cups mayonnaise
2 tablespoons white vinegar
2 teaspoons sugar
2 teaspoons celery seeds

Steps:

  • Shred the cabbage (how you like it, I usually do mine fine) and carrot. Dice the onion. In a separate bowl, mix the mayo, vinegar, sugar and celery seed. Mix dressing with cabbage, carrot and onion and allow to marinate in the fridge for an hour up to a day or so and enjoy.
  • I don't/have not substituted any alternative sweeteners other than honey or xylitol for the sugar as a great deal of the "other" sweeteners happen to be neuro-toxins. The honey does give it a different flavor of sorts, but was still OK. the Xylitol version tasted just the same and can be perfect for the diabetic in your family.
  • For a little more bite, you can up the vinegar content and/or up the celery seed content.

¼ cup vegetable oil
¼ cup vinegar
¼ cup white sugar

Steps:

  • In a large bowl, combine cabbage, carrot, onion, vegetable oil, vinegar and sugar. Stir until the ingredients are well mixed. Chill in the refrigerator until serving.

I got this from my MIL on Labor Day - one of the best dishes she's ever brought to share. It's fun to mix half a red cabbage and half a green for more color. Great with BBQ meals, fried chicken, and more! Take it easy on the salt, you can always add more after it sits in the fridge.

1 head cabbage, shredded (use a mandolin or food processor as you choose)
1 medium onion, finely chopped
1/2 cup sour cream
1 1/2 cups mayonnaise (I use Beach Girl's Homemade Mayonnaise made with extra light tasting olive oil: http -- or /www.food)
1 teaspoon salt (to taste)

Steps:

  • Mix everything in a large bowl and refrigerate for at least an hour.
  • Enjoy!
