This coleslaw omits carrots to keep the carbs at a minimum. The creamy low carb dressing is sweetened with stevia.

4 cups cabbage (, finely shredded)
1/4 cup mayonnaise ((preferably avocado oil mayo))
1/4 cup cider vinegar
1/2 teaspoon SweetLeaf stevia drops (or 2 tablespoons other sugar equivalent sweetener)
1 teaspoon ground celery seed

Steps:

  • Mix cider vinegar with stevia (or other low carb sweetener) packets.
  • Whisk in mayonnaise and celery seed until smooth dressing forms.
  • Pour dressing over shredded cabbage. Toss to coat cabbage with dressing.

1 pound white cabbage (1/2 small head)
3/4 pound red cabbage (1/2 small head)
5 carrots
2 cups good mayonnaise
1/4 cup Dijon mustard
1 tablespoon sugar
2 tablespoons cider vinegar
2 teaspoons celery seeds
1 teaspoon celery salt
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Fit a food processor with the thickest slicing blade. Cut the cabbages into small wedges and place horizontally into the feed tube. Process in batches. Next, fit the food processor with the grating blade. Cut the carrots in half and place in the feed tube so they are lying on their sides. Process in batches and mix in a bowl with the grated cabbages.
  • In a medium bowl, whisk together the mayonnaise, mustard, sugar, vinegar, celery seeds, celery salt, salt, and pepper. Pour enough of the dressing over the grated vegetables to moisten them. Serve cold or at room temperature.

My family loves cole slaw. Cole slaw can be healthy, but some has a lot of sugar & chemicals. We try to eat as clean as possible & limit our refined sugar intake, so I came up with this super healthy cole slaw. Low in sugar & high in fiber & nutrients. Our family & friends LOVE it! 2 bag(s) shredded cabbage & carrots (cole slaw mix)
1/2 medium onion, finely chopped or minced
1/2 medium apple, finely chopped or minced
DRESSING
3/4 c mayo with olive oil
1/4 c plain greek yogurt
1 Tbsp apple cider vinegar
1 tsp lime juice
1 Tbsp orange juice
1 tsp salt
3/4 c stevia or ideal
1 tsp cayenne pepper or louisiana hot sauce

Steps:

  • 1. Empty one bag of cabbage, onion & apple into a LARGE bowl. You need a LARGE bowl in order to mix everything up well. It will look like a lot, but after it sits for awhile, it shrinks way down.
  • 2. DRESSING - Add all dressing ingredients to a medium bowl& whisk together until completely smooth. If dressing is a little thick, add a couple of teaspoons of milk to think it out.
  • 3. Pour dressing over cabbage & mix until thoroughly coated. Add the remaining bag of cabbage & mix until all is thoroughly coated.
  • 4. Refrigerate at least a few hours before serving, preferable overnight. Taste better the longer it sits.

12 oz bag coleslaw blend
1/2 c real mayonaise (no sugars)
1 1/2 Tbsp apple cider vinegar (braggs is good)
1 tsp ground black pepper
1/2 tsp ground sea salt
1/2 tsp celery seed
1/2 tsp stevia or other sweetner
1/4 c chopped spring onion (optional)

Steps:

  • 1. Whisk Mayonnaise, Apple Cider Vinegar, Pepper, salt, celery seed and Stevia in a large mixing bowl.
  • 2. Add 1/2 Coleslaw Cabbage mix, fold until all cabbage looks soaked.
  • 3. Now add the other 1/2 of coleslaw mix and mild chopped onions if you opted for the. Fold again until all cabbage has been gently moistened. (It may look dry, but it won't be)
  • 4. Refrigerate and stir it again in 2 hours. Then let it refrigerate for a minimum of 12 hours. Serve cold.
