COLBY JACK CHEESY BREAD
This savory bread is a must for any cheese fan. It can be served with anything from spaghetti to barbecue. Enjoy it fresh from the oven, toast it with a bit of butter or add a little garlic bread on top for cheesy garlic bread. The amount of Colby Jack in this bread is perfect. Yum!

Steps:
- 1. In large bowl dissolve yeast in the 3/4 cup warm water.
- 2. Add the cheeses, milk, sugar, butter, salt, and 3 cups of flour.
- 3. Beat by hand or mixer for about 3 minutes. Stir in enough remaining flour to make a firm dough. DO NOT KNEAD!!!
- 4. Cover and let rise in warm place until doubled about 1-2 hours.
- 5. Punch dough down.
- 6. Transfer to two greased loaf pans.
- 7. Cover and let rise until doubled about 30 minutes.
- 8. In a small bowl, combine egg white and water.
- 9. In another bowl, combine topping ingredients.
- 10. Brush loaves with egg white/water mixture.
- 11. Sprinkle with topping.
- 12. Bake at 375F for 25-30 minutes or until golden brown. (Exactly 27 mins in my oven.)
- 13. Remove from pans and place on a wire rack to cool.
SHMUNKY'S COLBY JACK CHEDDAR BISCUITS
These biscuits have an amazing aroma and taste that will turn any grump into a jolly lad! They are crispy on the outside, yet soft and puffy in the center. They freeze well too, for making large batches. This recipe is best when hand made, so try not to be tempted by your mixers. Trust me, it will pay off in the end. Buy block cheese and grate it by hand for best quality. I use a medium size grate. I do NOT recommend using fine grated cheeses.

- Preheat oven to 400 degrees F (200 degrees C). Using olive oil, grease a baking sheet.
- With a fork, mix together the flour, baking powder, parsley, thyme, salt, sugar, Colby-Monterey Jack cheese, and white Cheddar cheese together in a bowl. Cut the butter into the flour mixture in coarse chunks, then use the fork to further cut the butter into the flour-cheese mixture until the mixture resembles coarse crumbs. Lightly stir in the milk just until the dough holds together.
- Drop the batter by heaping 1/8-cup measuring cup onto the prepared baking sheet, and bake in the preheated oven until risen and golden brown, 20 to 30 minutes.

- Preheat oven to 350°. Cut bread into 1-in. slices to within 1/2 in. of bottom of loaf. Repeat cuts in opposite direction. Insert cheese in cuts., Mix all remaining ingredients except chives; drizzle over bread. Wrap in foil; place on a baking sheet., Bake 20 minutes. Unwrap; bake until cheese is melted, about 10 minutes. If desired, sprinkle with chives.
