This is another refreshing slushie drink that my sis and me came up with. It is very healthy and reminiscent of those frozen coffee drinks you can get at starbucks only much better for you and cheaper. I hope youll enjoy it as much as we do!

250 ml coffe-flavour soymilk (or use vanilla plus 1 ts instant coffee, ~1 cup)
1/8 teaspoon vanilla bean seeds (or 1/2 ts vanilla extract)
18 ice cubes (or try frozen coffee cubes for even more coffee flavour)

Steps:

  • Crush ice cubes in your blender or in a freezer bag using a rolling pin or any other heavy instrument you have handy (I actually use my maglite torch ;)).
  • Add soy milk and vanilla and blend on high until slushie like in consistency.
  • Enjoy!

This make-ahead frozen beverage made with coffee and half and half is perfect for teas and showers. Simple yet delicious! Save coffee from the day before in the fridge. Everyone will want your recipe!

3 pints half-and-half cream
3 cups cold brewed coffee
2 cups white sugar
2 tablespoons vanilla extract

Steps:

  • Mix cream, coffee, sugar, and vanilla extract together in a freezer-safe container. Cover container and freeze until coffee mixture is solid, at least 3 hours.
  • Remove container from freezer and defrost in room temperature for 1 hour. Break coffee mixture apart with a fork creating a slush-like consistency. Transfer to a punch bowl or large pitcher.

¼ cup brewed coffee, cooled
½ medium banana, frozen
1 tablespoon peanut butter
1 tablespoon instant coffee granules

  • Combine soy milk, coffee, banana, peanut butter, coffee granules, vanilla, stevia powder, and ice cubes in a blender; blend until smooth.

olive oil flavored cooking spray
1 small onion, finely chopped (about 1/2 cup)
1 (12 ounce) package of frozen soy crumbles, thawed
1 cup frozen corn, thawed
2 green onions, chopped (about 1/4 cup)
1/2-3 teaspoon thai red chili paste
1 tablespoon low sodium soy sauce (optional) or 1 tablespoon Braggs liquid aminos (optional)
1 large buch spinach leaves (separated from the stem- at least 12 leaves)
1 cucumber, seeded and diced (about 1 1/2 cups)
1/4 cup roasted and unsalted peanuts, finely chopped
3 tablespoons seasoned rice vinegar
1 tablespoon fresh basil, chopped (optional)
1 tablespoon of fresh mint, chopped (optional)

Steps:

  • To make Filling:.
  • Heat oil in a large nonstick skillet over medium-high heat. Add onion, and cook 5 to 7 minutes, or unil softened. Stir in soy crumbles, corn, and green onions, and saute 1 minute. Add chili paste, and cook 3 minutes more. Season with salt and pepper, and transfer to a serving bowl.
  • To make Relish:.
  • Combine cucumber, peanuts, and vinegar in medium bowl.
  • Have guests make their own cups by placing small amount of filling into one spinach leaf and topping it with small spoonful of relish.

2 whole lemons, peeled (freeze the peeling to use as zest in other dishes)
1/2 cup Splenda sugar substitute
2 1/2-3 cups ice cold water

Steps:

  • After peeling the lemons, either juice the meat with an electric juicer or place in a blender and then strain the juice.
  • Add in Splenda, stir well.
  • Add in cold water.
  • Pour into 1/2 cup serving dishes or cups.
  • Freeze.
  • (Foods containing Splenda seem to freeze harder than naturally sweetened foods. If you don't want it to freeze super hard, add 1/2 teaspoons of salt to the ice cold water before mixing in with the lemon juice).
