2 tablespoons white sugar
½ beaten egg
2 tablespoons sour cream
2 drops vanilla extract, or more to taste
¼ cup all-purpose flour
⅛ teaspoon baking powder
2 tablespoons all-purpose flour
1 tablespoon brown sugar
1 teaspoon cinnamon
1 tablespoon butter

Steps:

  • Stir 1 tablespoon softened butter and white sugar together in a coffee mug until fluffy; stir egg, sour cream, and vanilla extract into the butter mixture. Add 1/4 cup flour and baking powder into the mixture; stir until smooth.
  • Mix 2 tablespoons flour, brown sugar, and cinnamon together in a bowl. Mash 1 tablespoon butter into the flour mixture with a fork or pastry cutter until mixture is crumbly; sprinkle over the cake batter in the mug.
  • Cook in microwave oven on high for 1 minute. Continue cooking in 10-second intervals until a toothpick inserted into the middle comes out clean.

1 teaspoon brown sugar
¼ teaspoon ground cinnamon

Steps:

  • Heat 1 tablespoon butter in a microwave-safe mug until softened, about 10 seconds. Stir white sugar into butter until dissolved. Mix 1/4 cup flour, applesauce, baking powder, vanilla extract, and salt into butter-sugar mixture until batter is smooth.
  • Mix 2 teaspoons flour, 1 teaspoon butter, brown sugar, and cinnamon together in a bowl using your hands until the texture of lumpy sand is reached; sprinkle over batter.

I was wanting a small serving of cake, but didn't want to make the whole box. This is what I came up with. It came out light and fluffy and hit the spot. I think it could be used with any boxed cake, but I used a Betty Crocker brand. Also, if you decide to use the real egg try beating the whole egg in a separate bowl and then pouring off about half.

7 tablespoons cake mix (Save the rest of the mix in a sealed container for later use.)
nonstick cooking spray
3 tablespoons oil
6 tablespoons water
2 tablespoons liquid egg substitute or 1/2 egg, lightly beaten

Steps:

  • Using a 10 to 16 ounce microwave safe coffee mug, spray the insides with the non stick spray.
  • Add 7 TBS of the box cake mix. (Save the rest of the mix in a sealed container for later use.).
  • Next add the oil and water to the cup and mix thoroughly.
  • Finally, add the egg and mix well.
  • Place in microwave and microwave on high for 3 minutes. The cake may rise above the top of the cup, but don't worry. When finished, check center with a toothpick. If pick comes out clean, then the cake is done.
  • Allow to cool for several minutes and then turn cake out onto a dish or serve right in the coffee mug.
  • Remember microwave strengths may vary and this might alter your time.

I've tried it with semi-sweet chocolate chips, can't wait to try it with peanut butter chips and white chocolate chips. Great for an afternoon snack for the kids and it's simple enough that they can make it themselves.

4 tablespoons sugar
2 tablespoons cocoa powder
1 egg

  • Required: 1 coffee mug.
  • Add dry ingredients to coffee mug and mix well.

1 Tbsp butter
2 Tbsp sugar
2 Tbsp sour cream
1 dash(es) vanilla extract
1/4 c king arthur gluten free flour mix
1/8 tsp baking powder
CRUMB TOPPING
1 Tbsp butter
2 Tbsp king arthur gluten free flour mix
1 Tbsp brown sugar
1 tsp cinnamon

Steps:

  • 1. Using a 12 ounce microwave safe mug, soften 1 tablespoon butter in the microwave. Just 10 seconds. Stir in sugar until creamy, then add sour cream and just a few drops of vanilla extract. Mix well, then add the gluten free flour mix and the baking powder.
  • 2. In a separate ramekin or small bowl, combine crumb topping ingredients. Mix with your fingers until it resembles coarse crumbs. Add the crumb topping to the mixture in the mug.
  • 3. Start with 1 minute on high, adding 10 seconds and checking until it looks done to you. My microwave is 1100 watts, and it took 1 minute 20 seconds for this cake to cook. HERE IS THE IMPORTANT BIT! It's going to be very hot when you take it out of the microwave, so let the cake sit for a minute and cool down. Then go ahead and dig in!

1 pkg small box of instant pudding mix (not sugar free), any flavour

Steps:

  • 1. Place dry cake mix and dry pudding mix into a large bowl and blend well with a whisk. This will be about 4 to 4 1/2 cups dry mix and will make 8 or 9 coffee cup cake mixes. Place 1/2 cup dry mix into a sandwich bag. Place mix into a corner of the bag and tie it there with a twist tie. Continue making packets until all your dry mix is used. Suggested Flavor Combinations: Lemon cake mix - lemon pudding Yellow cake mix - chocolate pudding Devils food cake mix - chocolate pudding Pineapple cake mix - coconut pudding Butterscotch cake mix - butterscotch pudding Select a large coffee mug. Make sure that it contains no metallic paint as it will be used in the microwave. Check it to ensure that it holds 1 1/2 cups of water.
  • 2. Decorating the cups: (optional) Paint on the cup if you like. DecoArt Ultra Gloss Acrylic Enamel is one brand of craft paint that can be made dishwasher safe by baking the painted cup in the oven (instructions are on the bottle of paint). Glaze Mix: 1/3 cup confectioners sugar 1 1/2 teaspoons dry flavoring* * powdered lemonade mix, powdered orange breakfast drink mix, cocoa powder, vanilla powder (sold by coffee flavorings) NOTES Select the flavoring appropriate to the cake you are making. For the pineapple coconut cake include flaked coconut in a separate bag with instructions to sprinkle it over the frosted cake. Place the glaze mix ingredients into a sandwich bag and tie into corner of bag. Label this bag Glaze Mix and attach it to the other bag with a twist tie. Place one baggie cake mix and one baggie glaze mix in each coffee cup. Now attach the following baking instructions to each coffee cup: Bake a cake in a coffee cup. Generously spray inside of coffee cup with cooking spray. Empty contents of large packet into cup. Add 1 egg white, 1 tablespoon vegetable oil and 1 tablespoon water to dry mix. Mix for 15 seconds, carefully mixing in all the dry mix. Microwave on HIGH for 2 minutes.( you may not get satisfactory results in a low wattage small microwave). While cake is cooking , place ingredients from Glaze Mix into a very small container and add 1 1/2 teaspoons water. Mix well. When cake is done, pour glaze over cake in cup. Enjoy while warm.

Why this recipe works:These individual chocolate cakes are cooked in coffee mugs in the microwave for a nearly instant dessert. To keep our cakes from overflowing, we had to supplement bittersweet chocolate with cocoa powder; cocoa powder has less fat, which produces less steam, thus less chance of an overflow. Microwaving the cakes on 50 percent power was the key to cooking them gently, helping create a light, tender crumb, and stirring the batter halfway through ensured even cooking. Finally, a few chunks of bittersweet chocolate added to each cake created a gooey, molten center.
