MINI CHOCOLATE LOAF CAKES
This easy-to-make mini chocolate loaves get their richness from Dutch process cocoa and a touch of sour cream.

Steps:
- Preheat the oven to 350 degrees F. Butter the insides of an 8-cup mini loaf baking pan.
- Put the butter, cocoa, coffee and milk in a small microwave-safe bowl. Cover and microwave until the butter melts, about 3 minutes. Whisk to combine and set aside.
- Whisk the flour, granulated sugar, baking soda, cinnamon, baking powder and salt in a large bowl. Whisk the sour cream, vanilla and eggs until blended in a small bowl. Whisk the hot cocoa mixture into the flour mixture and then stir in the sour cream mixture until just combined. Divide the batter equally among the loaf cups.
- Bake until a toothpick inserted in the center comes out clean, about 30 minutes. Cool the loaves in the pan on a wire rack for 10 minutes and then remove from the pan and cool completely on a rack. Dust the tops of the loaves with confectioners? sugar.
COFFEE CAKE MINI LOAVES
I was wondering what to do with the "left over" coffee yogurt from the Double Coffee Chocolate Cake recipe I posted a couple of days ago so I went to work in my kitchen! I only prepared a half recipe of the Double Coffee Chocolate Cake, hence the reason I had left over yogurt.

- 1. Preheat oven to 350. Prepare mini loaf pans.
- 2. In a medium size mixing bowl cream butter and sugar (3-5 min.) Add extract and egg; mix well.
- 3. In a small bowl combine spice(s), cinnamon, baking powder, baking soda and flour. Set aside. In another bowl combine sour cream and coffee yogurt. Set aside. Prepare topping mixture-set aside.
- 4. Alternate adding flour mixture and yogurt mixture to the creamed butter, beginning and ending with the flour mixture. Beat well after each addition.
- 5. Sprinkle 1 teaspoon of the topping mixture in each mini loaf pan. Add 1 tablespoon batter to each loaf pan, sprinkle with 1 teaspoon topping. Divide remaining batter between loaves and top with remaining topping mixture.
- 6. Bake at 350 for 23-25 min. Allow to cool 2-3 min before removing from pans. Serve hot.

Combine the flour, pudding mix, baking powder and salt; gradually add to the creamed mixture alternately with milk, beating well after each addition. - In a bowl, combine the flour, 1°C sugar, baking powder, 1 1/2 teaspoons cinnamon and salt.
- In another bowl, combine the eggs, buttermilk, oil and vanilla; stir into dry ingredients just until smooth.
- Pour half the batter into a greased 9x5x3-inch loaf pan. In a small bowl, combine the remaining sugar and cinnamon; stir in butter. Drizzle half over batter; cut through with a knife to swirl. Top with remaining batter. Drizzle with remaining cinnamon-sugar mixture; swirl with a knife.
- Bake at 350° for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
