3 ⅓ cup AP flour (Measured by spoon and level method, into a cup)
1⅔ cup shredded desiccated coconut
1 ¼ tsp sea salt
1 medium red onion (Finely chopped (generous ½ cup))
3 long, green chili
½ cup coconut milk
½ cup water

Steps:

  • Place the flour, desiccated coconut, salt, onion, and chili in a large bowl. Mix to combine well.
  • Mix the water and coconut milk in another bowl or jug.
  • Add the liquid to the flour mixture, a little at a time, while stirring the flour with your fingertips (or with a fork).
  • After adding about ½ of the liquid, gently stir the mixture. You will have some clumps and dry spots of flour. Drizzle the liquid over the dry parts of the flour, while mixing, to form a dough.
  • Add 1 or 2 more tbsp of water ONLY if needed. The dough should come together, but still have dry spots on the surface. This is OK.
  • If you add too much water, sprinkle in a little extra flour and lightly knead it into the dough (don't over-knead!). Shape the dough into a rough ball.
  • Cover the dough (or the bowl) with plastic wrap and let the dough rest for at least 4 hours, or up to 12 hours (room temperature is fine). If you want to store the dough for up to 24 hours, then refrigerate it.
  • The dough should become really soft after it has rested. If it's very sticky, generously flour the dough and the work surface to prevent it from sticking to your counter.
  • Transfer the dough to your floured work surface. Cut the dough into 8 wedges. Lightly roll up each section into a rough ball. See pictures in the post.
  • Take each dough ball and sprinkle some flour on top and on the work surface. Flatten it to a disc, and then roll it out to a circle using a rolling pin. The roti should be about 0.4 - 0.5 cm thick, and about 12 -15 cm (5 - 6 inches) in diameter. Cover the rolled out roti with a cloth napkin or plastic wrap (so that it doesn't dry out), and repeat rolling out all of the dough portions.
  • Preheat a cast iron skillet or non-stick skillet over medium or medium high heat.
  • When the pan is heated, transfer a roti onto the skillet and cook for about 2 - 3 minutes, until the bottom starts to develop brown spots.
  • Flip the roti over and cook the other side for 2 - 3 minutes, until you get brown spots on that side too.
  • Place the cooked roti on a wire rack to cool down. Repeat with the rest of the roti.
  • Eat the roti warm or at room temperature.

This Honduran staple, known as "pan de coco," is really a plump dinner roll. It's delicious served alongside a meal of rice, beans and fried plantains. Or enjoy a roll simply with a cup of coffee in the morning or afternoon. There's just enough of a nutty punch added to the rolls. This recipe was inspired by Euceria Bernandez, a baker and Whole Planet Foundation microcredit client. I found unsweetened shredded coconut at Walmart in the frozen section. Prep time is rising time.

1/2 cup unsweetened finely grated coconut
2 tablespoons sugar
1 (1/4 ounce) package active dry yeast
1/2 cup warm water
3 1/2 cups flour, plus more for kneading
3/4 teaspoon salt
1 cup coconut milk
3 tablespoons butter (or non-hydrogenated vegetable shortening, melted or use coconut oil)

Steps:

  • Put coconut, sugar, yeast and water into a small non-reactive bowl and stir briefly. Set aside until mixture is swollen and bubbly, about 15 minutes.
  • Mix flour and salt together in a large bowl. Add yeast mixture, coconut milk and butter. Using your hands or a wooden spoon, stir until well combined.
  • Turn dough out onto a well-floured surface and knead, dusting with more flour as necessary, until soft and elastic, 5 to 6 minutes. Form dough into a ball, dust generously all over with flour and transfer to a clean large bowl. Cover bowl with a kitchen towel and set aside in a warm spot to let rise until doubled in size, about 1 1/2 hours.
  • Divide dough into 8 pieces and roll each into a ball. Arrange balls of dough on a large greased baking sheet, spacing them 3 to 4 inches apart. Set aside in a warm spot, uncovered, to let rise until doubled in size again, about 45 minutes.
  • Preheat oven to 350°F Bake bread until deep golden brown and cooked through, 20 to 25 minutes.
  • Serve warm or set aside to let cool to room temperature.

Unsalted butter, for the pan
1 cup all-purpose flour, plus more for dusting
1 1/2 cups granulated sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
4 large eggs, separated, plus 2 egg whites, all at room temperature
1/2 cup vegetable oil
1/2 cup coconut milk, at room temperature
1 1/2 teaspoons coconut extract
Pinch of cream of tartar
Confectioners' sugar, for dusting
1 tablespoon white rum
6 large egg whites, at room temperature
1 cup plus 2 tablespoons granulated sugar
3 sticks unsalted butter, at room temperature, cut into pieces
3 tablespoons white rum
4 cups sweetened shredded coconut

Steps:

  • Make the cake: Preheat the oven to 350 degrees F. Butter an 11-by-17-inch rimmed baking sheet and line the bottom with parchment paper. Lightly butter the parchment and dust with flour, tapping out the excess.
  • Whisk 1 cup each flour and granulated sugar, the baking powder, baking soda and salt in a medium bowl. In a large bowl, whisk the 4 egg yolks, vegetable oil, coconut milk and coconut extract. Whisk in the flour mixture in 2 batches.
  • Beat the 6 egg whites and cream of tartar in a large bowl with a mixer on medium speed until foamy. Increase the speed to medium high; gradually add the remaining 1/2 cup granulated sugar and beat until stiff, shiny peaks form. Fold one-third of the beaten egg whites into the egg yolk mixture with a rubber spatula, then gently fold in the rest.
  • Spread the batter on the prepared baking sheet and bake until the cake is golden and springs back when pressed, 15 to 20 minutes. Loosen the edges of the cake with a knife; transfer the baking sheet to a rack and let the cake cool slightly. Dust a large piece of parchment paper with confectioners' sugar. Invert the cake onto the parchment and peel off the parchment on top. Brush the cake with the rum.
  • Make the frosting: Whisk the egg whites and granulated sugar in a heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water) until the mixture is warm and the sugar dissolves. Remove the bowl from the pan; cool slightly.
  • Beat the egg white mixture with a mixer on medium-high speed until stiff peaks form, 12 to 15 minutes. Beat in the butter a few pieces at a time, then continue beating until glossy and smooth, 5 to 7 more minutes. (Don't worry if the mixture looks curdled at first; continue beating.) Beat in the rum.
  • Spread about 2 cups of the frosting on the cake, then sprinkle with 2 cups coconut. Starting at a short end, roll up the cake, using the parchment to help you. Transfer to a platter, seam-side down. Cover the cake roll with the remaining frosting and sprinkle with the remaining 2 cups coconut.

I grew up in my family's restaurant. I revamped this recipe to make it a little healthier. The original recipe was one of my dad's, who was a master chef. People came from all over West Texas to eat 'Stanton's Hot Rolls' and cake doughnuts. I had gained almost 200 pounds and decided to make some changes. At 75 pounds lighter, I'm changing the recipes. Took out the bad cholesterol and added the good. I took out the eggs and cut the salt in half.

5 cups bread flour, divided
¼ cup white sugar
4 (.25 ounce) packages instant yeast
1 ½ teaspoons salt
1 ½ cups milk
1 cup water
⅓ cup coconut oil
1 tablespoon coconut oil

Steps:

  • Combine 2 1/2 cups flour, sugar, yeast, and salt in the bowl of a stand mixer fitted with a paddle attachment.
  • Heat milk, water, and 1/3 cup coconut oil in a saucepan until a thermometer inserted into the mixture reads 120 degrees F (49 degrees C), 2 to 3 minutes.
  • Pour milk mixture over flour; beat together on high speed until combined, about 2 minutes. Stir in remaining 2 1/2 cups flour until a soft, sticky dough forms.
  • Turn dough out onto a lightly floured surface and knead until smooth and elastic, about 10 minutes.
  • Place dough in a bowl; cover with a towel and let rise in a warm place until doubled in volume, about 30 minutes.

2 packages yeast
1 teaspoon sugar
1/4 cup warm water
3/4 cup warm milk
1 1/2 teaspoons salt
1 egg, lightly beaten
3 cups flour
1/2 cup butter, melted

Steps:

  • Dissolve yeast and sugar in water then stir in milk, salt and egg.
  • Add 1/2 of the flour and stir, continue to add flour until you have a dough that can be turned out of the bowl.
  • Knead the dough for 10 minutes until smooth but firm.
  • Oil a clean bowl and turn the dough in it until coated.
  • Cover with a damp towel and let it rise for 1 hours Cut into 10 portions and roll each piece into a 6 inch diameter circle.
  • Brush with melted butter then fold in 1/2.
  • Brush with more butter and fold in 1/2 again.
  • Set breads on a oiled baking sheet and let them rise until they double in size.
  • Preheat oven to 425 F set a pan of hot water on the lowest oven rack.
  • Bake for about 12- 15 minutes or until golden brown (on upper rack, set to middle).
