BEEF STIR FRY WITH RICE



Beef Stir Fry with Rice image

This Asian-inspired Beef Stir Fry with Rice has rice, beef, vegetables and a homemade stir fry sauce that combine to form a comforting dinner filled with flavor.

1/2 cup water
1/4 cup ketchup
1/4 cup reduced sodium soy sauce
4 teaspoons cornstarch
2 teaspoons honey
pinch of crushed red pepper
2 cups water
1 cup long grain rice
1 tablespoon vegetable oil
1 lb flank or flat iron steak, cut into very thin slices
1/2 cup chopped carrots
1 cup frozen peas
1/4 cup sliced green onions
1/2 cup chopped peanuts

Steps:

  • In a saucepan over medium heat, combine the 1/2 cup water, ketchup, soy sauce, cornstarch, honey and red pepper. Cook until a thick sauce is formed, stirring very frequently. (This should happen pretty quickly.)
  • In another saucepan, bring the 2 cups of water to a boil. Add the rice, reduce the heat to a simmer and cover the pan. Cook until the rice is tender and the water has been absorbed, 16-18 minutes. Let it sit for a few minutes, then fluff with a fork.
  • Heat the oil in a large skillet over high heat. Add the steak in batches, being careful not to overcrowd the pan. Cook until the steak is browned. Remove the meat to a plate or bowl.
  • Add the carrots to the pan and cook until tender, 4-5 minutes. (You may need to add another touch of oil.) Return the meat to the skillet along with the peas and green onions and cook just until heated through. Stir in the cooked rice and the stir fry sauce and stir to combine.
  • Serve topped with the chopped peanuts.

1 14-ounce can unsweetened coconut milk
1 stalk lemongrass, thinly sliced, or 3 to 4 slices peeled fresh ginger
1 cup jasmine rice
1/4 cup plus 1 teaspoon low-sodium soy sauce
Juice of 2 limes
1 tablespoon sugar
2 Persian cucumbers, quartered lengthwise, then halved
1 cup packed fresh basil, roughly chopped
2 tablespoons vegetable oil
1 pound ground beef
1 red bell pepper, finely chopped
3 cloves garlic, minced

Steps:

  • Bring the coconut milk, 3/4 cup water and the lemongrass or ginger to a boil in a medium saucepan. Add the rice and return to a boil. Stir, then cover and reduce the heat to low. Simmer until the liquid is absorbed and the rice is tender, about 15 minutes. Remove from the heat and let sit, covered, 10 minutes. Fluff with a fork.
  • Meanwhile, whisk 1/4 cup soy sauce, the lime juice and sugar in a small bowl. Toss the cucumbers with 1 tablespoon basil and the remaining 1 teaspoon soy sauce in a medium bowl. Set aside.
  • Heat 1 tablespoon vegetable oil in a medium skillet over high heat.
  • Add the beef and cook, breaking up the meat, until browned and cooked through, about 5 minutes. Transfer to a bowl; set aside.
  • Reduce the heat to medium high. Add the remaining 1 tablespoon vegetable oil to the skillet. Add the bell pepper and cook, stirring occasionally, until golden, about 5 minutes. Add the garlic and cook until golden, 2 minutes. Increase the heat to high and return the beef and any accumulated juices to the skillet. Stir in the soy sauce mixture and cook until the liquid evaporates, 2 minutes. Add the remaining basil and cook, stirring, until just wilted, about 1 minute. Serve the beef and cucumber salad over the rice.

2 c rice, instant, cooked and drained
1 bunch green onions, chopped
1 1/2 lb flank steak or patio steaks
1/2 Tbsp tumeric
1/2 Tbsp chili powder
2 tsp vegetable oil
1 tsp dark sesame oil
1 Tbsp powdered ginger
2 clove garlic, chopped or granules to taste
1 large onion, sliced into strips
1/2 c coconut milk, unsweetened
1/2 tsp crushed red pepper

Steps:

  • 1. Cut steak diagonally across the grain into thin strips. Place in a shallow glass or metal pan. Sprinkle with turmeric and chili powder, tossing to coat. Cover and chill 30 minutes. Pour oils into a nonstick skillet. Heat over medium-high heat until hot. Add steak; stir fry until browned. Remove and set aside.Add ginger, garlic, and onion; stir fry until crisp tender. Stir in coconut milk. Cook, stirring often, 2-3 minutes or until slightly thickened. Stir in steak and red pepper. Put over cooked rice and sprinkle with green onion.

1 dash ground red pepper
1 (14 ounce) can light coconut milk
1 cup uncooked jasmine rice
1 teaspoon dark sesame oil, divided
1 (1 lb) flank steak, trimmed and thinly sliced across the grain
1 cup vertically sliced onion
1 cup red bell pepper, strips
3 cups sliced bok choy
2 tablespoons chopped fresh cilantro
1 tablespoon chili-garlic sauce (such as Lee Kum Kee)
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
4 lime wedges

Steps:

  • To prepare rice, bring first 4 ingredients to a boil in a medium saucepan; stir in rice. Cover, reduce heat, and simmer 15 minutes or until liquid is absorbed.
  • To prepare stir-fry, heat 1/2 teaspoon oil in a large nonstick skillet over medium-high heat.
  • Add half of beef; stir-fry 4 minutes or until done. Remove from pan; cover and keep warm. Repeat procedure with remaining oil and beef.
  • Add onion and bell pepper to pan; stir-fry 5 minutes. Add bok choy; stir-fry 3 minutes or until vegetables are tender.
  • Add beef, cilantro, chili garlic sauce, 1/4 teaspoon salt, and black pepper; cook 2 minutes or until thoroughly heated. Serve with rice and lime wedges.
