1/2 cup butter, softened
1-1/3 cups sugar
1/2 cup Nutella
4 large eggs, room temperature
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup whole wheat flour
2/3 cup Dutch-processed cocoa
1/2 cup flaked coconut
1/2 cup old-fashioned oats

Steps:

  • Preheat oven to 350°. In a large bowl, beat butter, sugar and Nutella until blended. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk flours and cocoa; gradually beat into butter mixture, mixing well. Fold in coconut and oats. Spread into a greased 13x9-in. baking pan., Bake until a toothpick comes out with moist crumbs (do not overbake), 22-25 minutes. Cool completely in pan on a wire rack. Cut into bars.

1/2 cup(s) dark cocoa powder
4 - eggs
2 cup(s) sugar
2 teaspoon(s) vanilla extract
1 teaspoon(s) salt
1 1/2 cup(s) flour
1/2 teaspoon(s) baking powder
3/4 cup(s) nutella
FOR THE FROSTING
1/2 cup(s) coconut oil
1/2 teaspoon(s) coconut extract
1/2 teaspoon(s) rum extract
1/4 teaspoon(s) salt
2 1/2 cup(s) powdered sugar
1/2 cup(s) heavy whipping cream
1 1/2 cup(s) shredded coconut

Steps:

  • Place the coconut oil in a small sauce pan over low heat and stir until melted. Whisk in the cocoa powder. Let cool slightly. Beat the eggs until frothy. Add the sugar and extracts and beat again. Slowly add the melted coconut oil and chocolate mixture and beat again.
  • Stir together the salt, flour, and baking powder. Add to the egg mixture slowly. Add the Nutella and stir in gently. Spread the mixture in a greased 9x13 baking pan. Bake at 350 degrees for 32-35 minutes. Let cool completely.
  • Beat the coconut oil, extracts, and salt until creamy. Slowly add the powdered sugar and whipping cream until everything is mixed in. Beat on high until light and fluffy. Spread on the cooled brownies. Top with coconut. Cut into 24 squares. Store in a sealed container.
