1 cup butter or margarine, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla
2 eggs
2 1/4 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup old-fashioned or quick-cooking oats
1/2 cup coconut
1/2 cup coarsely chopped macadamia nuts

Steps:

  • Heat oven to 375°F. In large bowl, beat butter, granulated sugar and brown sugar with electric mixer on medium speed until light and fluffy. Beat in vanilla and eggs until well blended. On low speed, beat in flour, baking soda, cinnamon and salt until well blended. Stir in oats, coconut and nuts.
  • On ungreased cookie sheets, drop dough by rounded teaspoonfuls 2 inches apart.
  • Bake 8 to 10 minutes or until golden brown. Cool 2 minutes; remove from cookie sheets to cooling racks.

Number Of Ingredients 10

1 cup all-purpose flour
1 cup quick or regular oats
1 cup packed brown sugar
1/3 cup flaked sweetened coconut
1/4 cup chopped macadamia nuts
1/2 teaspoon baking soda
1/4 cup margarine, melted
1/4 cup maple syrup
Zest and juice of lemon
1 teaspoon lemon extract

Steps:

  • Preheat oven to 325 degrees. Combine flour and the next six ingredients (flour through baking soda). Combine the margarine with the remaining ingredients and stir to combine. Add to the flour mixture, and stir well. Drop by tablespoon onto a baking sheet lined with parchment paper. Bake for 10 minutes, or until almost set. Cool on pan 2 to 3 minutes or until firm. Remove cookies from pan and cool on racks.

1 cup butter, room temperature
1 cup tightly packed brown sugar
1/2 cup sugar
1 egg, room temperature
2 1/4 cups flour
1 teaspoon baking soda
1 cup flaked coconut
1 (3 1/2 ounce) jar macadamia nuts, coarsely chopped

Steps:

  • Preheat oven to 375 degrees.
  • In a mixing bowl, combine the butter, sugars, and egg.
  • Stir in the flour and baking soda.
  • Dough will be very stiff.
  • Stir in the coconut and nuts.
  • Using a spoon or cookie scoop, drop dough onto parchment-lined baking sheets, about 2 inches apart because cookies will spread during baking.
  • Bake until lightly browned, about 8-10 min.
  • The centers should still be soft.
  • Allow to cool 1 min.
  • on the baking sheet, then remove and allow to cool completely.

1 cup all-purpose flour
1 cup oats
1 cup packed brown sugar
1/3 cup golden raisin
1/3 cup sweetened flaked coconut
1/4 cup chopped macadamia nuts
1/2 teaspoon baking soda
1/4 cup butter, melted
3 tablespoons water
2 tablespoons honey
cooking spray

Steps:

  • Preheat oven to 325 degrees.
  • Lightly spoon flour into a dry measuring cup; level with a knife.
  • Combine flour and the next 6 ingredients (flour through baking soda).
  • Combine butter, water, and honey, stirring well to combine.
  • Add butter mixture to flour mixture, stirring until well-blended.
  • Drop by level tablespoons 2" apart onto baking sheets coated with Pam.
  • Bake at 325 for 10 minutes or until almost set.
  • Cool on pan 2-3 minutes or until firm.
  • Remove cookies from pan, and cool on wire racks.
  • Makes 2-1/2 dozen.

I first made these cookies for St. Patrick's Day. Green food coloring was added for fun. This is a family favorite and requested often.

2 c flour
3/4 c sugar
1 c brown sugar, firmly packed
1/2 c butter ( cold, salted)
1/2 tsp salt
2 eggs
1 tsp baking powder
1 tsp almond extract
2 tsp vanilla extract
1 c toasted shredded coconut
1 c toasted macadamia nuts, coursely chopped
1 Tbsp pineapple juice concentrate
food coloring optional

Steps:

  • 1. Preheat oven at 375 degrees. Mix brown and cane sugars with butter until well blended. Add extracts, eggs and pineapple juice. Beat well.
  • 2. Sift flour, salt and baking powder. Slowly add it to the butter and sugar mixture. Beat until smooth. Mix in coconut and macadamia nuts.
  • 3. Scoop onto baking sheet with a spoon and bake from 10-15 minutes until lightly browned on the edges. Remove from baking sheet and place on cooling racks.
