Baked doughnuts have basically taken over the Internet. I understand. The opportunity to indulge in a homemade doughnut, without having to heat up a big pot of oil, is appealing. That said, I think that baked doughnuts are in a completely separate category than regular doughnuts. They're wonderful, but more in line with cakes and cupcakes than a true doughnut. Baked doughnuts are incredibly easy to whip up. The batter comes together in minutes, bakes quickly and makes just enough doughnuts to enjoy for brunch without leftovers.

6 tablespoons unsalted butter, melted, plus more for the pan
1 1/4 cups all-purpose flour
1/2 cup toasted sweetened flaked coconut (see Cook's Note)
1/2 cup granulated sugar
1 1/4 teaspoons baking powder
1/2 teaspoon kosher salt
1/2 cup whole milk
1/2 teaspoon almond extract
1 large egg
1 cup confectioners' sugar
1/4 cup natural cocoa powder
4 to 6 teaspoons whole milk
1/2 cup toasted sweetened flaked coconut (see Cook's Note)
1/2 cup toasted sliced almonds (see Cook's Note)

Steps:

  • For the batter: Preheat the oven to 350 degrees F. Butter a 6-cup doughnut pan.
  • In a large bowl, whisk together the flour, coconut, granulated sugar, baking powder and salt. In a small bowl, whisk together the milk, melted butter, almond extract and egg. Fold the wet ingredients into the dry ingredients and stir just until combined.
  • Transfer the batter to a plastic ziptop bag and cut the corner to make about a 1/2-inch opening. Squeeze the batter evenly into the depressions of the prepared pan. Bake until a toothpick inserted into a doughnut comes out clean, 12 to 14 minutes. Transfer the pan to a rack to cool slightly, then carefully tip the doughnuts out onto the rack to cool completely, about 45 minutes.
  • For the glaze and toppings: In a shallow bowl, whisk together the confectioners' sugar and cocoa powder. Add 4 teaspoons of the milk and whisk to make a smooth glaze. Add a little more milk if necessary.
  • Dip the top of each cooled doughnut in the glaze. Top with the toasted coconut and almonds.

3 tablespoons granulated sugar
1/2 cup shredded unsweetened coconut
2/3 cup milk
1 egg
1 teaspoon vanilla
1/2 teaspoon coconut extract
1/2 cup powdered sugar
1 tablespoon milk
1/2 teaspoon coconut extract
1/4 cup shredded unsweetened coconut

Steps:

  • Heat oven to 425°F. Spray mini doughnut pan with cooking spray.
  • In medium bowl, mix all doughnut ingredients with spoon until blended. Spoon batter into pan, using about 1 tablespoon for each doughnut.
  • Bake 6 to 8 minutes or until toothpick inserted near center comes out clean. Remove doughnuts from pan to cooling rack; cool 5 minutes.
  • Meanwhile, in small bowl, mix powdered sugar, 1 tablespoon milk and 1/2 teaspoon coconut extract with whisk until smooth. In another small bowl, place 1/4 cup coconut.
  • Dip tops of doughnuts in glaze, then dip in coconut. Serve warm.

¾ cup rice flour
¼ cup garbanzo flour
¼ cup potato starch
¼ cup arrowroot powder
1 ½ teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon xanthan gum

½ cup So Delicious® Dairy Free Vanilla Coconut Milk
1 cup organic raw cane sugar
⅓ cup coconut oil
1 cup unsweetened applesauce
1 teaspoon vanilla extract
½ cup unsweetened coconut flakes
½ cup powdered sugar
1 tablespoon hot water, plus additional if needed
½ cup unsweetened coconut flakes, or more as needed

Steps:

  • Grease a 6-donut pan with coconut oil and preheat oven to 350 degrees F.
  • Sift together all the flour ingredients: rice, garbanzo, potato starch, arrowroot, baking powder, baking soda, xanthan gum and salt. Whisk together in a bowl and set aside.
  • In a medium pot, add in milk and coconut oil and allow to warm over low heat until the coconut oil melts (do not allow to boil). Mix gently with a wooden spoon while it's warming. Once the coconut oil is melted, remove from heat and add in the sugar. Stir together to allow the sugar to dissolve completely. Add in apple sauce and vanilla extract and stir to combine.
  • Pour the liquid mixture into the dry ingredients and mix gently to combine together well. (If clumps still develop, you can use an immersion blender and mix the batter for a few minutes until you see a very smooth consistency in the batter.)
  • Add in coconut flakes and mix with a wooden spoon to combine. Pour into pre-greased donut pan and fill about halfway to allow for rising of the batter.
  • Bake for 15 minutes at 350 degrees F. Remove from the oven and allow to cool 15 to 30 minutes. Gently scrape the sides of each well and flip the pan over to remove. You can use a toothpick to help the donuts lift out of the pan.
  • To coat the donuts in coconut flakes: Make a glaze by adding the powdered sugar into a small bowl and adding in 1 tablespoon at a time of hot water. Mix well to combine. Coat the donuts thinly with the glaze and drop onto a plate with coconut flakes to coat all over. Makes 6-8 donuts.

300g strong white bread flour
25g golden caster sugar
1 tsp fast-action dried yeast
2 eggs
75g butter or coconut oil, melted
vegetable or sunflower oil, for greasing any frying
80ml coconut milk
350g icing sugar
various shades of food colouring
coconut shavings (optional)

Steps:

  • Weigh the flour, sugar and 1 /2 tsp salt into a large bowl or the bowl of a tabletop mixer. Add the yeast, 100ml warm water, the eggs and the butter or coconut oil, then mix with a wooden spoon until it becomes a smooth, sticky dough.
  • Tip the dough onto a work surface and knead for 10 mins or until it feels stretchy and silky - if it sticks to your hands at first, add a little extra flour, but don't be tempted to add too much as this will make the dough heavy. Clean the bowl and oil it lightly, return the dough and turn over until coated in oil. Wrap the bowl in cling film and set aside in a warm place for 2-3 hrs until doubled in size. Alternatively, mix in a tabletop mixer for 5-8 mins until the dough starts to pull away from the sides of the bowl.
  • Once the dough has risen, tip it onto the work surface and punch out any air bubbles. Roll it out to a rectangle roughly 2cm thick. Using an 8cm biscuit cutter, stamp out as many circles as you can - you should get 12 if you scrunch up and re-roll the trimmings. Use a smaller biscuit cutter (about 2cm) or a large piping nozzle to stamp out a hole in the middle of each doughnut. Arrange the doughnuts and the doughnut holes over two baking trays, cover with lightly oiled cling film and leave to rise for 1 hr or until almost doubled in size again.
  • While the doughnuts rise, make the icing by combining the coconut milk and icing sugar in a bowl. Divide the icing into as many bowls as the number of colours you'd like to use, then add a drop of food colouring to colour each one a vivid shade.
  • Half-fill a deep fryer or large pan with oil and heat to 180C. If you don't have a thermometer, check the temperature with a piece of bread - it'll turn golden brown in about 45 secs when the oil is ready.
  • When you're ready to fry, have a plate lined with kitchen paper to hand. Drop one or two ring doughnuts and a few doughnut holes into the pan at a time, making sure you don't overcrowd it. Cook the doughnuts for 2-3 mins each side until deep golden brown, then flip over and cook for another 2-3 mins. When the doughnuts are cooked, drain on kitchen paper.
  • When all the doughnuts and doughnut holes have been cooked, dip into the coloured icings. Top some of the doughnuts with coconut shavings, if you like. Best served on the day, but will keep for 2 days in a tin.

Mini Maple-Glazed Doughnuts with Coconut

You may not know this about me, but I'm not one to gravitate towards doughnuts if there are other sweet treats available. That was, until I made these mini doughnuts. They are sooo good-salty and sweet at the same time, which is my favorite flavor combo of all.

1 cup large unsweetened coconut chips
1 tablespoon low-sodium soy sauce
1 teaspoon liquid smoke
1 teaspoon maple syrup
1/4 cup vegan butter
1/2 cup almond milk
2 tablespoons coconut oil
Peanut or canola oil, for frying
2 cups all-purpose flour
1/4 cup vegan cane sugar
1 teaspoon baking powder
1/4 teaspoon kosher salt
1 cup vegan confectioners' sugar
1/2 cup maple syrup
1/2 teaspoon maple extract
Pinch kosher salt

Steps:

  • For the coconut "bacon": Preheat the oven to 350 degrees F.
  • Mix together the coconut chips, soy sauce, liquid smoke and maple syrup in a medium bowl. Spread in a single layer on a parchment paper-lined baking sheet. Bake, stirring halfway through, until the coconut is golden brown, 8 to 10 minutes. Set aside to cool. The "bacon" will crisp up as it cools.
  • For the doughnuts: Melt the butter in a medium saucepan over medium heat. Add the almond milk and coconut oil. Remove from the heat and set aside.
  • Pour the peanut or canola oil halfway up the sides of a cast-iron skillet and heat to 350 degrees F.
  • Whisk together the flour, cane sugar, baking powder and salt in a medium bowl. Make a well in the center and pour the hot milk mixture in the well. Mix until a thick dough forms. Roll portions of dough into 12 balls and use your thumb to make holes in the centers.
  • Fry the doughnuts, in batches, until golden brown, 3 to 5 minutes on each side. Let drain on paper towels.
  • Meanwhile, make the maple glaze: Stir together the confectioners' sugar, maple syrup, maple extract and salt in a small bowl. Dip the doughnuts in the glaze and sprinkle with the coconut "bacon" before serving.

2 eggs, at room temperature
1/2 cup (100 g) natural cane sugar
1 1/4 cups (310 ml) unsweetened coconut milk
2 tablespoons freshly squeezed lemon juice
2 teaspoons coconut extract
1/4 cup (60 ml) coconut oil, melted
1 1/4 cups (175 g) superfine brown rice flour, plus more for dusting
1 cup plus 1 tablespoon (110 g) almond flour
1/2 cup (80 g) potato starch
1/2 cup (60 g) coconut flour
1/4 cup (30 g) tapioca starch
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
Vegetable oil, for frying
Coconut glaze
2 cups (240 g) powdered sugar, sifted
1/4 cup plus 1 tablespoon (75 ml) unsweetened coconut milk
Pinch of salt
2 cups (165 g) unsweetened shredded coconut

Steps:

  • Make the doughnuts
  • 1. In a medium bowl, whisk together the first six ingredients. In a large bowl, whisk together the superfine brown rice flour, almond flour, potato starch, coconut flour, tapioca starch, baking powder, baking soda, and salt. Add the wet ingredients to the dry and whisk until the dough comes together. Knead it with your hands a couple of times. It will be soft.
  • 2. Dust a work surface with a generous amount of superfine brown rice flour. Turn the dough out onto your work surface and dust another bit of flour on top of the dough. Pat the dough down a bit. As the dough sits, it will start to get a bit more compact and will be easier to work with. If it feels too soft, you can refrigerate the dough for 15 minutes. Roll the dough to a 3/4-inch thickness.
  • 3. Dust a 2-inch cookie cutter or doughnut cutter with additional flour. Cut out circles and place them on a baking sheet lined with parchment paper. If you are using a cookie cutter, cut out 1/2-inch holes from the center of the disks. You can re-roll the scraps once to make more doughnuts.
  • 4. Chill the doughnuts in the refrigerator for 15 minutes. Meanwhile, fill a shallow cast-iron pan with 2 inches of vegetable oil. Heat the oil until it reads 340°F (170°C) on a candy thermometer or instant-read thermometer.
  • 5. Carefully add the doughnuts to the oil in batches; do not overcrowd the pan. The doughnuts will sink and then rise when they are almost done. Cook to golden brown, turning the doughnuts once. Transfer to a baking sheet lined with paper towels. Repeat the frying process with the doughnut holes. Let them cool slightly.
  • Make the glaze and finish the doughnuts
  • In a medium bowl, whisk together all the glaze ingredients. Dip the doughnuts in the glaze and cover with the shredded coconut.

VEGAN COCONUT DOUGHNUTS

4 1/2 cups unflavored soy milk
2/3 cup agave syrup
1/2 cup neutral-flavored oil, plus additional for greasing and frying
2 1/2 ounces fresh yeast
4 pounds all-purpose flour
1/2 ounce salt
Flaked coconut, for garnish
One 98-ounce can coconut milk
2 pounds confectioners' sugar
1/2 vanilla bean, scraped

Steps:

  • Whisk together the soy milk, agave, oil and yeast. Add the flour and salt and beat on low with an electric mixer until the dough just comes together. Turn up to medium and beat 3 minutes more. Cover and let rise in a warm place, 45 minutes.
  • Meanwhile, preheat the oven to 350 degrees F. Spread some flaked coconut on a baking sheet and toast in the oven until golden brown, about 6 minutes. Set aside to cool.
  • Fold the dough and continue to let it rise until it doubles in size, about 45 minutes. Lightly grease several baking sheets. Tear off a 1-ounce piece of dough and roll it into a ball; poke a hole in the center with your finger and stretch it out a little. Place on one of the greased baking sheets and continue with the remaining dough. Let rise until puffy, about 20 minutes.
  • For the glaze: Stir together the coconut milk, sugar, and vanilla bean in a large pot and heat over medium heat until thick.
  • Meanwhile, bring several inches oil to 350 degrees F in a large Dutch oven. Fry several doughnuts at a time until golden brown, 2 to 3 minutes per side. Transfer to a rack. Dip one side of each warm doughnut in the glaze, then sprinkle with toasted coconut. Serve immediately.

These are the best cream filled yeast doughnut this side of the South... This recipe tweaked from the Southern Living Magazine - I can't remember when, because it was cut from the book and has turned a bit yellow around the edges.

2 pkg active dry yeast( .25 oz. each)
1/2 c warm water
1/2 c granulated sugar
1 1/4 tsp salt
1 1/2 c warm milk
1/3 c butter
2 large eggs, beaten
6 c sifted all purpose flour about
1 tsp grated lemon zest
3 c palm shortening, for frying(can use crisco solid)
1 c coconut oil , for frying
FILLING:
2 pkg 3 oz. each-- instant coconut cream pudding
1 tsp coconut extract
3 1/2 c cold milk
COCONUT CREAM GLAZE:
1/4 c coconut cream concentrate
1/4 c butter
1/2 c powdered sugar
2 tsp vanilla extract
1/4 c heavy cream, more if needed

Steps:

  • 1. Scald milk in saucepan; stir in sugar, salt and butter. Remove from heat and cool to lukewarm. Measure warm water into a large mixing bowl; sprinkle in the yeast and stir until dissolved. Stir in milk mixture, eggs, and half of the flour; beat until smooth. Stir in lemon zest and remaining flour to make a soft dough; mix well.
  • 2. Turn dough onto floured surface and knead for about 8 minutes, until smooth and elastic. Place into a coconut oil greased bowl and cover with a damp towel Set in a warm place to rise until double, about 45 minutes.Punch down and turn out onto lightly floured surface. Divide dough in half. Roll out half the dough into a large square, 1/2 inch in thickness. Cut dough into 3-inch squares with a pizza cutter or sharp knife.
  • 3. Place squares on parchment paper lined cookie sheets.. Repeat with remaining half of dough. Cover and let rise in a warm place, free from draft, about 30 minutes.Heat palm oil and coconut oil in a deep pot or fryer at 365^. Using a wide metal spatula, place doughnuts into oil and fry on each side until golden brown. Turning once. Drain on paper towels.
  • 4. Filling: Make this while doughnuts are raising and chill until ready to use. Combine ingredients and whisk until blended. Chill 10 minutes. Spoon filling into a pastry tube with a wide nozzle and pipe into the doughnuts.
  • 5. Coconut Cream Glaze: Place all ingredients except heavy cream into a small saucepan over low heat. Whisk until butter is melted, slowly add heavy cream until desired consistency is reached. Mixture will look curdled at first but keep adding the heavy cream until all is in and it will come together. Dip the tops of each doughnut into the cream glaze or brush on with pasty brush.. Sprinkle tops with coconut or hazelnut shreds. Refrigerate doughnuts until ready to serve.
