COCONUT NATURAL DAIQUIRI

1/2 cup sugar
1/2 cup coconut water, preferably fresh
12 ounces white rum
6 ounces coconut rum liqueur
3 ounces freshly squeezed lime juice plus 6 lime wedges
2 cups shaved or crushed ice

Steps:

  • Bring the sugar and coconut water to a boil in a small saucepan over medium heat. Simmer until the sugar is completely dissolved, about 2 minutes. Remove from the heat and let the coconut simple syrup cool completely. (This recipe makes approximately 3/4 cup coconut simple syrup, which can be used to sweeten other things if not used for making daiquiris.)
  • Add the white rum, coconut rum liqueur, lime juice, 3 to 5 ounces of the cooled coconut simple syrup (depending on desired sweetness) and the shaved ice to a large martini shaker or pitcher. Shake or stir the ingredients until thoroughly mixed. Strain into 6 chilled martini glasses and garnish the rims of the glasses with lime wedges.

Juice of 1 lime
2 tablespoons Coco Lopez cream of coconut
7 1/2 ounces Bacardi light rum
20 ice cubes

  • Combine the ingredients in a blender and whiz until smooth. Serve immediately without garnishes.

1 large banana, sliced
1/2 cup white rum (or coconut water)
1/3 cup canned cream of coconut (such as Coco López)
1/4 cup fresh lime juice (from 2 limes)
Maraschino cherries, for garnish

Steps:

  • Freeze the banana slices on a plate until firm, at least 3 hours or overnight.
  • Transfer the banana slices to a blender. Add the rum, cream of coconut, lime juice and 3 cups ice. Blend until smooth and thick, adding more ice if needed. Pour into large glasses; garnish each with a cherry.
