1 cup sweetened shredded coconut, chopped
3 large eggs, beaten
2-1/2 cups 2% milk
2/3 cup sugar
3 tablespoons all-purpose flour
1 teaspoon vanilla extract
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
Toasted sweetened shredded coconut, optional

Steps:

  • Preheat oven to 450°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim and flute edge. Line unpricked crust with a double thickness of heavy-duty foil. Bake 10 minutes. Remove foil; bake 5 minutes longer. Sprinkle coconut over crust; set aside. Reduce oven setting to 350°., In a large bowl, combine the eggs, milk, sugar, flour, vanilla and salt. Pour over coconut; sprinkle with nutmeg., Bake, uncovered, until a knife inserted in the center comes out clean, 45-50 minutes. Cool on a wire rack 1 hour. If desired, top with toasted coconut to serve. Refrigerate leftovers.

1/2 cup sweetened shredded coconut
1 refrigerated pastry shell (9 inches)
4 large eggs
1/2 teaspoon salt
1-3/4 cups fat-free milk
Sugar substitute equivalent to 1/2 cup sugar
1-1/2 teaspoons coconut extract
1/2 teaspoon vanilla extract

Steps:

  • Place coconut in an ungreased 9-in. pie plate. Bake at 350° for 4 minutes, stirring several times; set aside. (Coconut will not be fully toasted.), Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 4-6 minutes longer. Cool., In a bowl, beat the eggs and salt for 5 minutes. (Mixture will be lemon-colored and slightly thickened.) Add the milk, sugar substitute, coconut extract and vanilla. Transfer to crust. (Crust will be full.), Bake at 350° for 30 minutes. Sprinkle with coconut. Bake 8-10 minutes longer or until a knife inserted in the center comes out clean and coconut is lightly browned. 1 recipe Basic Pie Crust, rolled and fitted into a 9-inch pie plate
1/2 cup sugar
1/3 cup cornstarch
1/4 teaspoon salt
1 cup whole milk
1 can (14 ounces) coconut milk
4 large egg yolks
1/2 cup sweetened shredded coconut, toasted

Steps:

  • Preheat oven to 400 degrees. Press a sheet of aluminum foil onto crust, draping over rim of pie plate. To blind-bake: Fill with dried beans or pie weights. Bake until crust is lightly browned, about 45 minutes. Remove beans and foil; let crust cool completely, and set aside.
  • While crust is baking, place a fine-mesh sieve over a large bowl; set aside. In a medium saucepan (off heat), whisk together sugar, cornstarch, and salt. Gradually whisk in whole milk, making sure to dissolve cornstarch. Whisk in coconut milk and egg yolks.
  • Whisking constantly, cook over medium heat until the first large bubble sputters, about 5 minutes. Reduce heat to low; cook, whisking constantly, 1 minute. Remove pan from heat; immediately pour custard through sieve into bowl.
  • Pour custard from bowl into cooled crust; smooth top with a rubber spatula. Refrigerate until chilled, at least 4 hours (or loosely covered, up to 1 day). To serve, let stand at room temperature 30 minutes, then sprinkle with coconut.

1 large, fresh coconut, about 1 1/2 pounds
2 cups milk
3/4 cup sugar
1 teaspoon vanilla extract
4 large eggs
Tiny pinch freshly grated nutmeg
1 1/4 cups all-purpose bleached flour
1/4 cup sugar
1/4 teaspoon baking powder
1/8 teaspoon salt
4 tablespoons (1/2 stick) cold unsalted butter
1 large egg
Two-crust pie, about 1 1/4 pounds dough:
2 1/2 cups all-purpose bleached flour
1/2 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
8 tablespoons (1 stick) cold unsalted butter
2 large eggs

Steps:

  • Prepare and chill the dough.
  • Set a rack at the middle level of the oven and preheat to 350 degrees.
  • Use a large nail or an ice pick to puncture one of the three eyes on the coconut (only one can be punctured so you will need to try each until you find it). Drain the coconut milk out over a bowl. Strain it to remove any flecks of shell and reserve it.
  • Place the coconut on the oven rack and bake it until it cracks, about 10 to 15 minutes.
  • Remove the coconut from the oven and let it cool slightly. Remove shell (it will come away easily), then cut the coconut meat into 8 or 10 pieces. With a vegetable peeler, remove brown skin. Coarsely grate 1 cup coconut, either by hand or in the food processor, and reserve it for the filling. Process the remaining coconut until it is very fine.
  • In a large saucepan over low heat, scald the milk until there are bubbles around the edges. Add the finely processed coconut. Remove from the heat and allow the mixture to cool completely. Pour it through a fine strainer into a bowl; press coconut to extract as much moisture as possible.
  • In 3 or 4 batches, place coconut in the corner of a clean dish towel and wring out over bowl to extract all remaining liquid. (If you wish, you can toast the wrung out coconut, though it will have very little flavor remaining after soaking in the milk.) Measure the coconut flavored milk and add more milk, if necessary, to make 2 cups. (This may be done earlier in the day or even the day before and set aside tightly covered in the refrigerator.) Pour into a bowl and whisk in sugar, eggs, vanilla and nutmeg and the reserved coconut milk. Stir in the reserved coarsely grated coconut.
  • Set a rack in the lowest level of the oven and preheat to 350 degrees. Roll out the dough for the bottom crust and arrange in pan.
  • Pour filling into pie crust. Bake the pie for about 45 minutes, until the crust is baked through and the filling is set, but not over-cooked. After the pie has baked for 30 minutes, check it frequently so it does not over-cook. Once the pie is wobbly textured when the pan is gently shaken, remove it from the oven; it will continue to cook for a few minutes longer after it is removed from the oven. If the pie is over baked, it will be heavy and watery. Cool the pie on a rack.
  • To mix the dough by hand, combine flour, sugar, salt and baking powder in a medium mixing bowl and stir well to mix. Cut butter into 1-tablespoon pieces and add to dry ingredients. Toss once or twice to coat pieces of butter. Then using your hands or a pastry blender, break the butter into tiny pieces and pinch and squeeze it into the dry ingredients. Occasionally reach down to the bottom of the bowl and mix all the ingredients evenly together. Continue rubbing the butter into the dry ingredients until the mixture resembles a coarse-ground cornmeal and no large pieces of butter remain visible. Beat the egg(s) in a small bowl and pour over the flour and butter mixture. Stir in with a fork until the dough begins to hold together, but still appears somewhat dry. Scatter a teaspoon of flour on the work surface and scrape the dough out onto it. Press and knead the dough quickly 3 or 4 times, until it is smooth and uniform.
  • To mix the dough in the food processor, combine flour, sugar, salt and baking powder in work bowl fitted with metal blade. Pulse 3 times at 1-second intervals to mix. Cut butter into 1 tablespoon pieces and add to work bowl. Process, pulsing repeatedly at 1-second intervals, until the mixture is fine and powdery, resembles a coarse-ground cornmeal and no large pieces of butter remain visible, about 15 pulses in all. Add the egg(s) to the work bowl and pulse ten times or so, until the dough forms a ball. Scatter a teaspoon of flour on the work surface and scrape the dough out onto it. Press and knead the dough quickly 3 or 4 times, until it is smooth and uniform. Press the dough into a disk (two equal disks for the larger amount of dough). Sandwich the disk(s) of dough between two pieces of plastic wrap and press it into a 6-inch circle. Refrigerate the dough until firm, or until you are ready to use it, at least 1 hour.
  • Storage: Keep the dough in the refrigerator up to two days, or freeze it double-wrapped in plastic. Because the dough is thin, it will defrost quickly at room temperature when you intend to use it.

2 c half and half
1 Tbsp cornstarch
3 large eggs
1/2 c sugar
1/2 stick butter, melted
pinch sea salt
1 tsp vanilla
1-1/4 c coconut, flaked or shredded
9 inch deep dish pie crust

  • 1. Preheat oven to 350 degrees.
  • 2. Mix eggs and sugar well with hand mixer.
  • 3. Dissolve cornstarch in 1/4 cup of the half and half; add back to remaining half and half, and stir until well combined.
  • 4. Add half and half mixture slowly to the egg/sugar mix, while continuing to beat on low speed; add salt. Stir in the melted butter by hand. Add vanilla and coconut.
  • 5. Pour into pie crust; bake for 45-60 minutes, depending on your oven.

As a Low Carber, I am always looking for a goodie that I can have without nudging my glucose into the stratosphere. While not an original recipe, I have changed a few ingredients out. You honestly cannot tell the difference!

1 13 oz can coconut milk (not cream of coconut)
enough milk/cream added to coconut milk to make 2 cups
1/2 c unsweetened shredded coconut
1/4 c butter, softened
1/2 c splenda
1/2 c carbquik ( similar to bisquick, but low low carb)
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350 degrees F. Spray pie plate (9" is fine) with nonstick spray. Toss all ingredients into mixing bowl & beat with hand mixer, or a whisk, or toss in blender. Once all ingredients are incorporated, pour into pie plate. Bake 45 minutes, check doness by inserting knife blade in center. If it comes out clean, it is done. Remove to rack & let cool. Serve with whipped cream. At 6 slices, my guesstimate of carbs comes to about 3.
  • 2. You may purchase CarbQuik from online providers, unsweetened shredded coconut can be found in most grocery stores, check the organic section; & coconut milk is found in all grocery stores, with Asian foodstuff. I have no image to show, I'm working from an iPad & have yet to learn how to get some things from there to here! We really like this recipe, have served it to company & have tripled it for covered dish suppers. Should you triple it, you may used a 9 x 13 Pyrex dish. No worries! Okay, I think I'm ready for the onslaught. Fire when ready! ;D

1 sheet refrigerated pie dough (half of a 14-ounce box)
2 tablespoons all-purpose flour, plus more for dusting
2 large eggs
1/4 cup coconut oil, melted
1 1/4 cups half-and-half
1 1/4 cups plus 1 tablespoon sweetened shredded coconut
3/4 cup sugar
Finely grated zest of 2 limes, plus the juice of 1 lime
1/2 cup cold heavy cream
1 teaspoon pure vanilla extract

  • Preheat the oven to 350 degrees F. Roll out the pie dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch pie plate; fold the overhanging dough under itself and crimp as desired.
  • Whisk the eggs in a large bowl. Stir in the coconut oil, half-and-half, 1¼ cups shredded coconut, the sugar, flour, lime juice and all but ½ teaspoon lime zest. Pour into the prepared crust. Bake until the filling is set and the crust is golden brown, 50 to 55 minutes. (Tent the crust with foil if it is browning too quickly.) Transfer to a rack and let cool completely, 1 to 2 hours.

4 eggs
½ cup white sugar
¼ teaspoon salt
1 teaspoon vanilla extract
2 ½ cups milk
1 cup flaked coconut
1 (9 inch) unbaked pie crust
¼ cup packed brown sugar
2 tablespoons butter, softened

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Beat eggs slightly, stir in white sugar, salt and vanilla. Gradually stir in milk. Add 1/2 cup coconut to filling, and reserve remaining 1/2 cup for the top. Pour filling into pie shell.
  • Bake at 400 degrees F (200 degrees C) for 25 to 30 minutes, or until knife inserted into center of pie comes out clean. Cool pie completely.
  • Before serving, mix 1/2 cup coconut with butter and brown sugar. Sprinkle on top of pie. Broil, about 3 or 4 inches away from heat, for 2 to 4 minutes.

4 eggs
1 (3.5 ounce) package flaked coconut
1 (12 fluid ounce) can evaporated milk
1 ½ cups white sugar
2 teaspoons cornstarch
½ cup butter, melted
1 teaspoon vanilla extract
2 unbaked 9 inch pie crust

Steps:

  • Blend the eggs, sugar, and cornstarch. Add the melted butter, milk, and vanilla; stir well. Pour filling into pie shells. Sprinkle with coconut.
  • Bake at 350 degrees F (175 degrees C) for 35 to 45 minutes, or until firm.

This pie is so easy and delicious. My grown children fight over this pie everytime I make one. I have actually started making 4 of these pies at a time. One for everyone to share, then one for each of my girls to take home.

4 eggs
2 c milk
1/2 c flour
1 tsp vanilla
1 3/4 c sugar
6 Tbsp butter
1 c coconut

Steps:

  • 1. Add all liquid ingredients directly into blender.
  • 2. Then add flour, sugar and coconut.
  • 3. Blend 15 seconds in blender.
  • 4. Pour into greased and floured pie pan. Bake at 350 degrees. Bake time might be shorter or longer depending on oven. Bake till a golden brown.

½ cup butter
1 ½ cups white sugar
2 tablespoons all-purpose flour
2 eggs
1 cup milk
1 cup flaked coconut
1 teaspoon vanilla extract
1 recipe pastry for a 9 inch single crust pie
1 tablespoon flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, beat together butter or margarine, sugar, and eggs with an electric mixer on low speed. Blend in flour. Mix in 1/2 cup of milk at a time. Add 1 cup coconut and vanilla, and mix well.
  • Pour filling into unbaked pie shell. Sprinkle top with additional coconut before baking, just enough to lightly cover the top. Bake for 40 to 50 minutes, or until set.
