1 medium head cabbage (about 2 pounds), cut into thin strips
1 cup dried cranberries
1 cup sweetened shredded coconut
1/3 cup minced fresh cilantro
1/4 cup sugar
1 cup coconut milk
1 cup mayonnaise
1/2 cup cider vinegar
1/2 cup plain yogurt
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large bowl, toss cabbage, cranberries, coconut, cilantro and sugar. In a small bowl, mix remaining ingredients. Pour over cabbage mixture; toss to coat. Refrigerate until serving.

1 jar (15 oz.) CLASSICO Light Asiago Romano Alfredo Pasta Sauce
1 can (13.5 oz.) coconut milk
1/4 cup rice wine vinegar
2 Tbsp. sugar
2 Tbsp. lite soy sauce
2 pkg. (16 oz. each) coleslaw blend (cabbage slaw mix)
1 small red onion, cut into thin slices, separated into rings
1 cup PLANTERS Dry Roasted Peanuts
4 green onions, sliced
1/2 cup BAKER'S ANGEL FLAKE Unsweetened Coconut, toasted

Steps:

  • Mix pasta sauce, coconut milk, vinegar, sugar and soy sauce until blended.
  • Combine all remaining ingredients except coconut in large bowl. Add pasta sauce mixture; mix lightly.
  • Refrigerate 1 hour.
  • Sprinkle with coconut just before serving.

1/2 green cabbage, medium, thinly sliced
1/4 purple cabbage, small, thinly sliced
1/2 cup Mayo
1/4 cup Coconut milk (original, unsweetened)
2 teaspoons granulated sugar
2 teaspoons apple cider vinegar or lemon juice
1 teaspoon Horseradish cream sauce

Steps:

  • In a small bowl, which together mayo, coconut milk, horseradish sauce, sugar, vinegar/lemon juice.
  • In a medium bowl, combine the cabbage slices.
  • Once the dressing is creamy and smooth, pour it over the cabbage and stir well.

This creamy coconut coleslaw is a "copycat" of the famous "France's Coleslaw" we tried in Coconuts Fish Cafe on the island of Maui. Re-creating this was fun. I should have taken a picture of my test kitchen. I had ramekins everywhere! The results were amazing. I think you'll love this coleslaw! It is delicious in any sandwich, over tacos or just in leu of your average coleslaw.

1/2 medium green cabbage, thinly sliced
1/4 small purple cabbage, very thinly sliced
1/2 cup Real Mayo
1/4 cup Coconut milk (Original, unsweetened)
2 tsp granulated sugar
2 tsp apple cider vinegar or lemon juice (both work great!)
1 tsp Horseradish cream sauce

Steps:

  • In a small bowl or measuring cup, whisk together ½ cup mayo, ¼ cup coconut milk, 1 tsp horseradish sauce, 2 tsp sugar, 2 tsp apple cider vinegar (
  • or lemon juice - honestly I tested both and liked them. My husband liked the vinegar slightly more so I went with that one for this batch).
  • In a medium bowl, combine thinly sliced green cabbage with very thinly sliced purple cabbage. I like the contrast of larger green cabbage pieces with thinner purple mixed in.
  • Once the dressing is creamy and smooth, pour it over your prepared cabbage and stir well. Just before serving, give it a quick stir to make sure any dressing at the bottom coats the cabbage. So yummy!
