COCONUT MASALA CHAI SOURDOUGH (SPICE TEA BREAD)

Coconut Masala Chai Sourdough (Spice Tea Bread) image

One of my frequent food-brain thought patterns goes like this: "Wow, I love this blend of flavors. Hmm. I wonder if it can it be made into a bread." This recipe is bold on the spices and coconut, and subtle on the tea and wheat flavors.

Provided by Melissa Johnson

Categories     Recipes

Time 1h35m

Number Of Ingredients 14

(in order of use)
320g brewed black tea (1 1/3 cup)
40g shredded coconut dry unsweetened (1/2 cup)
50g honey (2 1/2 Tbsp)
9 g salt (1 1/2 tsp)
1 1/2 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground cardamom
5-6 cloves crushed
1/4 tsp black pepper (20-30 turns of pepper mill)
300g bread flour (2 1/4 cups)
120g sprouted hard red wheat berriesor whole grain hard red spring wheat (scant 1 cup)
80g sourdough starter (1/3 cup)
Additional coconut for lining the proofing basket

Steps:

  • Brew 16 ounces of tea with two black tea bags. (Boil water, steep for five minutes, remove tea bags.)
  • Add all of the ingredients except the flour and starter to 320g of tea. You will have some unused tea that you can drink. Let the spices and coconut soak while your starter builds.
  • Add your ripe starter and flour to your coconut-spice-tea, mix to incorporate and cover.
  • After the dough has rested 20-30 minutes begin four rounds of stretching and folding about 30 minutes apart. Cover between folds.
  • The bulk fermentation should be complete about 5-10 hours from when you mixed in the starter and flour, depending on tea temp, ambient temp and starter strength. Look for puffy edges and approximate doubling. The gritty texture of the dough makes large bubbles unlikely.
  • Flour your counter and scrape out the dough onto it. Preshape the dough and let it rest for 20-30 minutes.
  • Shape your dough into a boule, batard or oblong tube, depending on your intended baking vessel.
  • Sprinkle your counter with shredded coconut, roughly in the shape of your loaf. Lightly dampen the top of your dough (spray or wet hand), and flip the damp side onto the coconut, rolling it a bit to coat the surface, then place the dough coconut-side down into your proofing basket.
  • Proof in the refrigerator 10-16 hours, or at room temperature 1-2 hours, or combine cold and warm proofing in countless ways. Preheat your oven to 500F 30 minutes before the end of the proof.
  • Flip your dough into the hot baking vessel (or onto parchment paper first), score, cover the vessel, and put it in the oven.
  • Bake at:
  • 500F for 15 minutes covered
  • 450F for 10 minutes covered
  • 450F for 10 minutes uncovered
  • The internal temperature should be around 205-210F. Let the bread cool before slicing.

COCONUT CHAI TRAYBAKE

Coconut chai traybake image

This simple traybake is inspired by one of our favourite brews - chai. Spiced with cinnamon, nutmeg and cardamom, this moist coconut sponge is the perfect accompaniment to a cuppa

Provided by Cassie Best

Categories     Dessert, Treat

Time 55m

Yield Cuts into 15 squares

Number Of Ingredients 17

100ml vegetable oil , plus a little for greasing
300ml coconut milk (not low-fat) - if the cream has separated in the can, give it a good mix before measuring
4 large eggs
2 tsp vanilla extract
280g light brown soft sugar
250g self-raising flour
75g desiccated coconut
1 tsp ground ginger
1 tsp ground cinnamon
¼ nutmeg , finely grated
¼ tsp ground cloves
10 cardamom pods , seeds removed and crushed using a pestle and mortar
4 tbsp ginger syrup
3-4 tbsp coconut milk
140g icing sugar
2 balls stem ginger , finely chopped
chopped pistachios and coconut flakes (optional)

Steps:

  • Grease a 20 x 30cm baking tin with a little oil, and line the base and sides with baking parchment. Heat oven to 180C/160C fan/gas 4. Measure the coconut milk and oil into a jug. Crack in the eggs, add the vanilla and whisk with a fork to combine.
  • In a large bowl, mix the sugar, flour, coconut, spices and a pinch of salt. Squeeze any lumps of sugar through your fingers, shaking the bowl a few times so they come to the surface. Pour in the wet ingredients and use a large whisk to mix to a smooth batter. Pour into the tin, scraping every drop of the mixture out of the bowl with a spatula.
  • Bake on the middle shelf of the oven for 25 mins or until a skewer inserted into the middle comes out clean. If there is any wet mixture clinging to it, bake for a further 5 mins, then check again. Leave to cool for 15 mins in the tin, then transfer to a wire rack and drizzle over the ginger syrup.
  • To make the icing, mix the coconut milk with the icing sugar until smooth. Drizzle the icing over the cake in squiggles, then scatter with the chopped ginger, pistachios and coconut flakes, if using. Eat warm or cold. Will keep for 3 days in an airtight container.

COCONUT CHAI

Coconut Chai image

I love a good chai, but had yet to run across anything like this version which looked too good not to share. Adapted from Kimmie at beyonddiet.com.

Provided by Sandi From CA

Categories     Beverages

Time 20m

Yield 8 serving(s)

Number Of Ingredients 9

2 quarts water
2 cinnamon sticks
8 -10 cardamom pods
8 -10 whole cloves
6 -8 peppercorns
3 tablespoons loose leaf black tea (or 3 tea bags)
1 (14 ounce) can coconut milk
1/4 cup coconut palm sugar
1 vanilla bean, seeds extracted and reserved

Steps:

  • In a large pot bring 2 quarts of water to a boil over high heat.
  • While the water is heating, take the cinnamon sticks, cardamom pods and cloves and roughly grind or chop them. Use a coffee grinder designated for spices for a couple of pulses.
  • Add the spices to the boiling water, along with the peppercorns and simmer for 10 minutes.
  • In the meantime pour the coconut milk, coconut sugar and vanilla bean and seeds into a small saucepan simmering over medium-low heat, stirring occasionally, until the sugar has melted. Do not let the mixture boil. Remove the vanilla bean pod.
  • After ten minutes remove the water from heat and add the tea. Let sit for 4-8 minutes (depending on how strong you like your tea) and strain out the tea into a pitcher. Add in the coconut milk mixture and serve.
  • TIPS: for a stronger chai, grind the spices finer and for a mild chai leave the spices whole. To extract the beans from a vanilla pod, take a sharp paring knife and run it down the center of the pod to open up the bean. Scrape the bean with the knife and add the beans to the coconut milk. If you can't have caffeine then substitute a rooibus tea for the black tea.

BANANA COCONUT CHAI CREAM PIE

Banana Coconut Chai Cream Pie image

If you can't find chai spice, a combination of cinnamon, cardamom, nutmeg, and cloves gives the same warm flavors to this banana pie.

Provided by Dan Churchill

Categories     Pie

Time 50m

Yield 1 9 inch pie

Number Of Ingredients 15

1/4 cup plus 2 tablespoons liquid coconut oil, divided, plus additional for greasing pan
1 1/2 cups old fashioned oats, divided
1 cup flaked coconut, toasted, divided
3 tablespoons flaked coconut, toasted, divided
1/4 cup plus 1 tablespoon pure maple syrup
1/4 cup plus 1 tablespoon liquid coconut oil
kosher salt
1 cup coconut cream
3 tablespoons honey
1 1/2 teaspoons chai spices, plus additional for garnishing pie
1 teaspoon pure vanilla extract
6 large egg yolks
1/2 cup unsalted grass-fed butter, cut into tablespoons
4 ripe bananas
3 tablespoons coarsely chopped pecans, toasted

Steps:

  • Preheat oven to 350 degrees. Grease a 9-inch (not deep dish) pie plate with coconut oil and set aside.
  • In the bowl of a food processor, combine 1 cup plus 2 tablespoons oats and 1 cup coconut chips. Process until very finely ground, about 1 minute. Transfer to a large bowl and add remaining 1 cup plus 2 tablespoons oats, maple syrup, 1⁄4 cup plus 1 tablespoon coconut oil, and 1/4 teaspoon salt. Mix until well-combined. Transfer to prepared pie plate and using the base of a measuring cup, press mixture into an even layer, going up the sides of the plate and slightly over the edges. Place on a parchment-lined baking sheet and transfer to oven. Bake until edges are lightly golden brown, rotating halfway through, about 20 minutes. Transfer to a rack until cooled completely.
  • Meanwhile, in a medium pot over medium-high heat, combine coconut cream, honey, chai spice, vanilla, and 1/4 teaspoon salt. Cook, whisking, until smooth and quite warm to the touch, about 2-3 minutes. Place egg yolks in a medium bowl. Whisking continuously, gradually pour coconut cream mixture into yolks to temper. Return mixture to pot over medium heat and cook, whisking continuously and scraping the sides of the pot as necessary with a heatproof plastic spatula, until mixture bubbles and thickens. Let continue to cook at this stage for two minutes. Remove from heat and add butter. Whisk until smooth and let cool slightly.
  • Cut 2 bananas into thin slices on the bias. Shingle one layer on the bottom of the cooled crust. Spread half of the coconut-chai cream on top, and then top with another layer of bananas (using one more if necessary). Spread remaining coconut-chai cream on top and transfer to freezer until well-chilled, about 2 hours. Do not let freeze completely. (Alternatively, pie can be placed in refrigerator until chilled, about 4-5 hours or up to overnight.) To finish, cut remaining banana(s) into thin slices and shingle around the outside perimeter of pie in a circular pattern. Top with pecans and remaining 3 tablespoons coconut chips.
  • in the center and sprinkle with additional chai spice. Cut into wedges and serve immediately. (This final step can be completed up to 30 minutes in advance of serving. Keep chilled until ready to serve.).

Chai coconut & mango creams image

Vegan, dairy, gluten and nut-free - and delicious - this fruity, delicately spiced dessert will go down a storm at any dinner party

Provided by Cassie Best

Categories     Dessert, Treat

Time 50m

Number Of Ingredients 14

4 allspice berries
4 cardamom pods
1 cinnamon stick
3 cloves
1 vanilla pod , split, or 1/2 tsp vanilla extract
2 x 400ml cans full-fat coconut milk
200g caster sugar
a little vegetable or sunflower oil , for greasing
1 ripe mango , 1 cheek cut into small dice and set aside to serve, remaining 140g/5oz roughly chopped
juice 0.5 lime
4 tbsp agar-agar flakes
2 crinkly passion fruits , to serve
mint leaves , to serve
toasted coconut shavings , to serve

Steps:

  • Put the allspice berries and cardamom pods in a large saucepan. Use the end of a rolling pin to gently split open the cardamom pods and crack the allspice into a few pieces. Add the remaining spices, coconut milk and 140g of the caster sugar to the pan. Set over a gentle heat and simmer for 5 mins. Cool, then chill overnight.
  • Grease 4 x 200ml pudding moulds, ramekins or pretty glasses with a little oil (you can skip this if you don't want to turn the creams out once set). Put the remaining sugar, mango, and lime juice in a food processor and blend to a purée. Sieve the purée into a saucepan, sprinkle 1 tbsp agar agar flakes over the surface and leave to stand for 5 mins or until the agar agar has dissolved. Stir the agar agar into the purée and bring to a gentle heat, then simmer for 3-5 mins, stirring now and then, until the purée has thickened slightly. Divide between the moulds and chill for at least 2 hrs or until set.
  • Sieve the infused coconut milk into a clean pan and discard the spices. Sprinkle over the remaining agar agar flakes and leave for 5 mins until the agar agar has dissolved. Heat gently for 3-5 mins, stirring now and then. Divide the mixture between the moulds and chill for at least 4 hrs, or overnight.
  • To serve, dip the base of each mould into hot water for 10 secs or so, then turn out onto a plate. Top each dessert with a little chopped mango, some passion fruit seeds and a small sprig of mint, then sprinkle the coconut flakes around the plate.
