1/2 cup cocoa
1/4 cup cornstarch/or arrowroot powder (or 1/2 cup all purpose flour)
3 egg yolks
1 1/2 cup sugar
1/4 teaspoon salt
2 cup milk
1 teaspoon vanilla
9 " pre-baked pie shell

Steps:

  • Mix cocoa, cornstarch, beaten egg yolks; sugar and salt, then add milk gradually, while stirring in a pot over med-high heat. Cook until thick, beating it smooth. While stirring, mix in the vanilla. Cream pies take some time to thicken, so stir... and stir (10 to 15 minutes). Using a heavy bottom pan really helps. Just keep it up until it thickens. Pour into a pre-baked pie shell. Put in the fridge to chill for several hours before serving. Add whipped cream, cool whip, or a baked meringue for the topping if you like :)

3 cups cocoa crispy rice cereal
1 cup semi-sweet chocolate chips
4 tablespoons unsalted butter, 1/2 stick
nonstick cooking spray, for greasing
½ cup chocolate hazelnut spread
1 ½ cups heavy cream, cold
¼ cup sugar
⅓ cup sugar
1 tablespoon unsalted butter
½ cup cocoa crispy rice cereal
½ cup toasted hazelnuts, coarsely chopped
¼ teaspoon kosher salt

Steps:

  • Make the crust: Add the crispy rice cereal to a zip-top bag, seal, and crush into crumbs with a rolling pin. Transfer the crumbs to a large bowl.
  • In a medium bowl, combine the chocolate chips and butter. Microwave in 30-second intervals, stirring between, until melted and smooth, about 1 minute total.
  • Pour the melted chocolate mixture over the cereal crumbs and stir to combine.
  • Grease 9½-inch (24-centimeter) pie dish with nonstick spray. Pour the crust mixture into the dish and press into an even layer against the bottom and up the sides of the pan.
  • Chill in the refrigerator while you make the mousse.
  • Make the chocolate hazelnut mousse: Microwave the chocolate hazelnut spread for 30 seconds. Set aside.
  • In a large bowl, beat the cold heavy cream with an electric hand mixer until soft peaks form. Add the sugar and beat to incorporate.
  • Using a rubber spatula, fold the warm chocolate hazelnut spread into the whipped cream until incorporated.
  • Remove the crust from the refrigerator and pour in the mousse. Spread in an even layer.
  • Cover the pie with plastic wrap and freeze for at least 6 hours, or overnight.
  • Make the crispy rice topping: Line a baking sheet with parchment paper.
  • Add the sugar to a medium nonstick skillet over medium-high heat. Cook without stirring for 1-2 minutes, until the sugar begins to caramelize. Swirl it around in the pan to help caramelize evenly.
  • Once the sugar is light amber in color, reduce the heat to low and add the butter. Use a rubber spatula to stir until the butter is melted, then turn off the heat. Add the crispy rice cereal and toasted hazelnuts and quickly stir to coat.
  • Transfer the topping to the prepared baking sheet and sprinkle with the salt. Use two forks to separate the mixture into smaller chunks, being careful not to touch the hot sugar with your hands. Let cool completely, about 15 minutes. The topping can be made 1 day ahead. Store in an airtight container once cooled.
  • When ready to serve, remove the pie from the freezer. Decorate the top with the crispy rice topping. Let the pie sit at room temperature for 10 minutes before slicing with a sharp knife. Warm the blade in hot water and wipe between each cut for clean slices.

1 c sugar
3 Tbsp cornstarch
3 Tbsp hershey's cocoa
1/8th tsp salt
2 egg yokes, beaten (save the egg whites for later use)
2 c whole milk
2 Tbsp butter (doesn't have to be melted)
1 tsp vanilla
1 9" deep pie crust, baked (375 to 400 degrees for 10 to 15 minutes)
1 egg white (discard the egg yolk) to be included with the other two egg whites for the meringue.
1/4th tsp cream of tarter (optional) for making meringue enter stiff peak faster.
1/2 c sugar (for meringue)

Steps:

  • 1. Bake the pie shell on 375 to 400 degree temp. This should take approximately 10 to 15 minutes so begin watching your pie shell that last 5 minutes due to varying ovens.
  • 2. In a microwaveable mixing bowl, mix cornstarch, cocoa, sugar and salt thoroughly-- breaking up all cornstarch lumps; stir in slightly beaten egg yolks. With an electric mixer, mix all together as you add a tablespoon of the whole milk. (Scrape down the sides of the mixing bowl with spatula to blend all thoroughly.) Add another tablespoon of whole milk and mix all very thoroughly and then add another tablespoon of the milk until the pie filling is very creamy and without any lumps. Now slowly add a 1/2 cup of milk at a time until all milk is thoroughly blended in.
  • 3. Place mixing bowl of uncooked pie filling in the micorwave and cook on high for 3 minutes. Stir using a spatula, raking down the sides of the bowl. Cook on HIGH for 3 more minutes, stopping around the 1 1/2 minute mark to blend the chocolate pie filling together. Continue to cook on high for another 1 1/2 minutes or until the chocolate pie filling is thick like pudding. *TIP* (Sometimes, I pull the bowl out of the microwave oven around the 4th to 5th minute to mix the pie filling very thoroughly with the electric mixer.)
  • 4. Once it is cooked, which it should be cooked around the 6th to 7th minute, add two tablespoons of butter and then 1 teaspoon of vanilla; stir and allow to cool at room temperature an hour or two.
  • 5. Add cooked and cooled pie filling to cooked pastry pie shell.
  • 6. *Meringue* To make meringue, beat the 3 egg whites until stiff (approximately 4 to 5 minutes. (When you begin beating on high speed of mixer, add your 1/4th tsp of Cream of Tarter and then slowly add a tablespoon of sugar at a time until 1/2 cup of sugar is blended.) Bake in oven @ 375 to 400 degrees for several minutes to 5 minutes, until meringue is light golden brown. Chill in refrigerator for several hours before serving. 6 large egg yolks

4 teaspoons cornstarch
4 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped

Steps:

  • For crust:
  • Preheat oven to 350°F. Butter 9-inch-diameter glass pie dish.
  • Mix melted butter, sugar, and salt in medium bowl. Add flour and mix until well blended. Press dough onto bottom and up sides of prepared dish; crimp edges decoratively. Bake crust until golden brown and cooked through, about 18 minutes. Cool crust completely on rack. Maintain oven temperature.
  • For cocoa nib praline:
  • Line rimmed baking sheet with parchment paper. Whisk first 5 ingredients in medium bowl to blend. Stir in cocoa nibs and chopped pecans. Drop mixture by tablespoonfuls onto prepared sheet, spacing 1 inch apart. Bake until mixture spreads and is deep golden brown, about 18 minutes (mixture will flow together into 1 piece on baking sheet). Remove from oven; cool completely on sheet. Break praline into irregular pieces or shards. (Can be prepared 1 day ahead. Store airtight in single layer at room temperature.)
  • For chocolate filling:
  • Bring 2 cups milk to simmer in heavy medium saucepan; remove from heat. Whisk egg yolks, brown sugar, vanilla, and remaining 1/4 cup milk to blend in medium bowl; whisk in cocoa powder and cornstarch until smooth. Gradually whisk in hot milk mixture. Return mixture to saucepan. Whisk constantly over medium heat until mixture thickens and boils. Remove from heat. Add chocolate and butter; whisk until melted and smooth. Pour filling into cooled pie crust. Refrigerate until filling is cold and set, about 4 hours. (Can be prepared 1 day ahead. Cover and keep chilled.)
  • Using electric mixer, beat cream and powdered sugar until soft peaks form. Cut pie into wedges. Serve with whipped cream and praline pieces.

From the Hershey's Cookbook. This is a family favorite at Christmas and Thanksgiving. I usually top it with merangue instead of whipped cream, but it is delicious either way!

8 inches pastry shells, baked
3/4 cup sugar
1/4 cup cocoa, Hershey's
3 tablespoons cornstarch
1/4 teaspoon salt
2 cups milk
2 egg yolks, beaten
1 tablespoon butter
1 teaspoon vanilla extract
sweetened whipped cream
strawberry, halved (optional)

Steps:

  • Prepare pastry shell; cool.
  • In medium saucepan, stir together sugar, cocoa, cornstarch, and salt.
  • Gradually stir in milk.
  • Cook over medium heat, stirring constantly, until mixture is thickened and bubbly.
  • Boil 1 minutes; remove from heat.
  • Gradually stir about half of the hot filling into yolks.
  • Return all to saucepan; bring to gentle boil.
  • Cook and stir 1 minute. Remove from heat; stir in butter and vanilla.
  • Pour into pastry shell.
  • Press plastic wrap directly onto surface.
  • Cool.
  • Refrigerate until set.
  • Garnish with whipped cream and strawberries, if desired.

Granny's Cocoa Cream Pie
It's simple and tasty. This really was a simple desert often used during the 30's and 40's.
½ c. cocoa
¼ cup cornstarch/or arrowroot powder (or ½ c. all purpose flour)
3 egg yolks
1 ½ c. sugar
¼ tsp. salt
2 c. milk
1 tsp. vanilla
Mix cocoa, cornstarch, beaten egg yolks; sugar and salt, then add milk gradually, while stirring in a pot over med-high heat. Cook until thick, beating it smooth. Cream pies take some time to thicken, so stir... and stir (10-15 min). Using a heavy bottom pan really helps. Just keep it up until it thickens. Pour into a pre-baked pie shell. Put in the fridge to chill, add whipped cream if you like :0 Or use the left over egg whites for a meringue topping!

1 c sugar
1/2 c cocoa
3 tbs cornstarch
1/4 tsp salt
2 c milk
2 egg yolks, beaten
1 tbs butter
1 tsp vanilla
prepared 8" graham cracker crust
whipped cream to serve

Steps:

  • Mix sugar, cocoa, cornstarch, salt and milk in heavy saucepan over medium heat to boil. Boil one minute, stirring constantly. Stir 1/2 chocolate mixture into beaten egg yolks in small bowl then return all of that mixture to saucepan. Heat to boil again. Simmer and stir for one minute. Remove pan from heat. Add butter and vanilla. Pour into prepared crust. Cover with plastic wrap touching chocolate. Refrigerate. Top with whipped cream when serving.

MY FAMILY COCOA CREAM PIE

Can't say where I first came across this but it's been made by me for, well longer than I care to admit and I'm older than I care to admit. That said, it's a keeper! It's cocoa...rich, dark, silky cocoa--'nuf said! I can't remember where I found it, or when I first made it but I've made it for half a century so I reckon it's mine to share at this point. Dig in, it's not a sin...just plain good!

1 - 9" baked pastry shell or graham cracker pie shell
1/2 cup(s) cocoa (dark or dutch)
1 cup(s) granulated sugar
1/3 cup(s) cornstarch
1/4 teaspoon(s) salt
3 cup(s) half and half
1 1/2 teaspoon(s) vanilla
- whipped cream

Steps:

  • This is a delightfully easy pie to construct. Use a store bought crumb crust for the easiest way. I make my own and I'm sure you must have a delightful family crust recipe. If not, use a baked pastry shell and save yourself some clean up.
  • Combine coca, sugar, cornstarch, and salt in a saute pan. When thoroughly combined, stir half and half into it and blend until combined. NOTE: originally had heavy cream and skim milk but tested with all half and half and it is just as good and easier to use!
  • Set over medium high heat and stir continually until mixture comes to a low controlled simmering boil. Let it low boil for 1 minute. Remove from heat. Stir in butter and vanilla and pour into prepared crust.
  • Cover filling with plastic (like Saran) and cool for a while before putting in refrigerator. When thoroughly chilled, Cut and serve with whipped cream.

½ cup all-purpose flour
⅓ cup unsweetened cocoa powder
1 cup white sugar
½ teaspoon salt
2 cups milk
4 egg yolks
1 teaspoon vanilla extract
1 (9 inch) pie shell, baked
4 egg whites
¼ cup white sugar
¼ teaspoon vanilla extract

Steps:

  • Preheat oven to 425 degrees F (220 degrees C.)
  • In a large saucepan or double boiler combine flour, cocoa powder, 1 cup of sugar, and salt. Mix well, then stir in milk and egg yolks. Whisk until all ingredients are thoroughly combined. Cook over medium heat, stirring constantly, until mixture is thickened. Remove from heat and stir in vanilla extract. Pour mixture into baked pie shell.
  • In a large glass or metal mixing bowl, beat egg whites until foamy. Gradually add 1/4 cup sugar and vanilla, continuing to beat until stiff peaks form. Spread meringue over pie, covering completely.
  • Bake in the preheated oven for 8 to 10 minutes, or until top is lightly browned. Remove and allow to cool before serving.
