COCOA BANANA MUFFINS

One of my favourite muffins, sweeter than most breakfast muffins but still a long way from being cupcakes in disguise which too many muffins are. NOTE: I have adjusted the quantity of flour thantks to my reviewers.

Yield 12 muffins

Number Of Ingredients 11

2 cups mashed ripe bananas
2 large eggs
3/4 cup buttermilk
3 tablespoons vegetable oil
1 teaspoon vanilla
1 2/3 cups whole wheat flour
1/2 cup cocoa, sifted
3/4 cup dark brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Preheat oven to 350°F.
  • Butter or put paper cups in muffin pan.
  • Mash bananas.
  • Whisk in eggs, buttermilk, vegetable oil and vanilla.
  • Mix the dry ingredients.
  • Be sure to sift the cocoa.
  • Mix wet and dry ingredients until just blended.
  • Spoon the batter into the muffin cups.
  • Bake for 20-25 minutes, until done.
  • If you like, lay a slice of banana over each muffin before baking.

Thanks to Luv4food for posting her fabulous muffin recipe. My husband was recently diagnosed with diabetes so I made a few alterations to help lighten the sugar load. I did take her suggestion to add chocolate chips as the small amount is worth the yummy surprise when eaten.

Number Of Ingredients 12

2 medium ripe bananas
1 1/4 cups whole wheat flour
1/4 cup Splenda sugar substitute
1/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup all-bran cereal
1 cup skim milk
1/4 cup egg substitute
1/4 cup oil replacement (prune puree)
1/4 cup semi-sweet chocolate chips

Steps:

  • Preheat over to 400f and lightly grease muffin tin or line with paper.
  • Set aside.
  • Peel bananas and mash (or slice one).
  • Set aside.
  • Sift together flour, cocoa, baking powder, baking soda, and salt.
  • Set aside.
  • In a large mixing bowl, combine cereal and milk.
  • Let stand 2-3 minutes or until cereal is softenened.
  • Add egg, fat substitute, and mashed bananas.
  • Mix well.
  • Mix is sliced bananas (if one was sliced).
  • Add the flour mixture, stirring just until combined.
  • Portin into muffin tins evenly.

2 eggs, at room temperature
2 cups flour
1 cup mashed overripe banana
1/2 cup old fashioned rolled oats
2/3 cup light brown sugar
2/3 cup plain Greek yogurt, at room temperature (I used 0%)
1/4 cup butter, at room temperature
3 tablespoons cocoa nibs
1 1/2 teaspoon baking powder
1 teaspoon vanilla
1 teaspoon Saigon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon baking soda
optional: one sliced banana

Steps:

  • Preheat oven to 350. Grease, spray with baking spray or line 18 wells in a muffin tin. In a large bowl, whisk together the spices, baking powder, cocoa nibs, baking soda, flour and oatmeal. Set aside. In another large bowl, cream together the butter and sugar. Beat in the eggs and vanilla. Stir in the yogurt then add the dry ingredients. Mix to combine. Fold in the mashed banana. Divide evenly into wells. Top each with a slice of banana, if desired. Bake about 20 minutes or until a toothpick inserted into the center of the center muffin (but not through a banana slice, go in through an angle) comes out with just a few moist crumbs. Remove from the tin and cool on a wire rack.

Got this one from Kellogg's about 8 years ago. If you prefer, you can use all mashed banana rather than one mashed and one sliced. I've also tried adding 1/2 cup of chocolate chips to make this a real treat

1/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup all-bran cereal
1 cup skim milk
1 egg
1/4 cup melted margarine

Steps:

  • Preheat oven to 400F and lightly grease muffin tin.
  • Set aside.
  • Peel bananas; mash one and slice the other.
  • Set aside.
  • Stir together flour, sugar, cocoa, baking powder, baking soda, and salt.
  • Set aside.
  • In a large mixing bowl, combine cereal and milk.
  • Let stand 2-3 minutes or until cereal is softened.
  • Add egg, margarine and mashed bananas.
  • Mix well.
  • Mix in sliced banana.
  • Add the flour mixture, stirring just until combined.
  • Portion into muffin tins evenly.
  • Bake for 20-22 minutes, or until tops spring back when lightly touched.
