Got this one from Kellogg's about 8 years ago. If you prefer, you can use all mashed banana rather than one mashed and one sliced. I've also tried adding 1/2 cup of chocolate chips to make this a real treat

Number Of Ingredients 11

2 medium ripe bananas
1 1/4 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup all-bran cereal
1 cup skim milk
1 egg
1/4 cup melted margarine

Steps:

  • Preheat oven to 400F and lightly grease muffin tin.
  • Set aside.
  • Peel bananas; mash one and slice the other.
  • Set aside.
  • Stir together flour, sugar, cocoa, baking powder, baking soda, and salt.
  • Set aside.
  • In a large mixing bowl, combine cereal and milk.
  • Let stand 2-3 minutes or until cereal is softened.
  • Add egg, margarine and mashed bananas.
  • Mix well.
  • Mix in sliced banana.
  • Add the flour mixture, stirring just until combined.
  • Portion into muffin tins evenly.
  • Bake for 20-22 minutes, or until tops spring back when lightly touched.

Number Of Ingredients 11

1 cup all-purpose flour
1/2 cup sugar
2 tablespoons baking cocoa
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup bran flakes
2 large eggs, room temperature
1 cup mashed ripe bananas (about 2 medium)
1/3 cup canola oil
1/4 cup buttermilk

Steps:

  • Preheat oven to 400°. In a large bowl, whisk the first six ingredients. Stir in bran flakes. In another bowl, whisk eggs, bananas, oil and buttermilk until blended. Add to flour mixture; stir just until moistened., Fill foil-lined muffin cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 12-14 minutes. Cool 5 minutes before removing from pan to a wire rack. Serve warm.

I met this muffin on the Christine Cushing Live show and had to try it. For my money this is the ultimate banana muffin when it comes to the health aspect and just plain good taste. This can be made with some chopped nuts in place of the blueberries (or a small amount in addition to the berries). The nuts will add fat but nuts are heart healthy fat, you know the good kind.

Number Of Ingredients 13

2 -3 bananas, mashed (about 1 cup/250 ml)
1/4 cup no sugar added apple butter (60 ml)
1 teaspoon vanilla (5 ml)
2 tablespoons splenda brown sugar (30 ml)
3/4 cup low-fat buttermilk (175 ml)
2 tablespoons vegetable oil (30 ml)
1 1/2 cups whole wheat flour (375 ml)
2 teaspoons baking soda (10 ml)
1/2 teaspoon salt (2 ml)
1/4 cup oat bran (60 ml)
freshly grated nutmeg, to taste
1/4 teaspoon ground allspice (1 ml)
1/2 cup blueberries (fresh or still frozen (125 ml)

Steps:

  • Preheat oven to 350 degrees F.
  • Prepare a medium muffin tin by lining with muffin paper or brushing/spraying with oil.
  • Sift flour, baking soda and salt in a bowl and add oat bran, nutmeg and all spice.
  • Stir well to combine and set aside.
  • Mash banana in a bowl.
  • Add apple butter, vanilla, Splenda brown sugar, buttermilk and vegetable oil, stir to combine.
  • Pour the wet ingredients into the flour mixture.
  • Stir with a wooden spoon until just combined (some of the flour may still remain visible) but do not over mix or the muffins will be tough.
  • Fold in the blueberries.
  • Spoon batter evenly into prepared muffin tins.
  • Put in the middle rack of oven.
  • Bake until golden, about 18-23 minutes (or until a tester comes out clean).
  • Makes 12 medium muffins.

DIABETIC BRAN MUFFINS



Diabetic Bran Muffins image

This is my version of a Company's Coming recipe I made suitable for a diabetic diet. Oil may be replaced with more applesauce if you're watching your fat intake. You can also add rasins, blueberries, apples and cinnamon or anything else you can think of.

Number Of Ingredients 11

1 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup natural bran
1 cup buttermilk or 1 cup sour milk
1/3 cup cooking oil
1/4 cup unsweetened applesauce
1 egg
1/4 cup Splenda granular
1/2 teaspoon vanilla

Steps:

  • In a large bowl combine flour, baking powder, soda and salt. Stir well. Push up around sides of bowl making well in cetner.
  • In another bowl stir buttermilk with bran. Let stand 5 minutes.
  • Add remining ingredients to bran mixture in order given. Beat with spoon until mixd. Pour into well in flour mixture and stir to moisten. Batter will be lumpy.
  • Fill greased muffin cups 3/4 full.
  • Bake at 375 for 20-25 minutes.
  • Let stand 5 minutes.
  • Remove from pan.
