COCA-COLA BARBEQUE SAUCE

1 cup Coca-Cola
1 cup ketchup
1/4 cup Worcestershire sauce
1 teaspoon liquid smoke
1/4 cup A-1 steak sauce
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon black pepper

Steps:

  • Combine the ingredients in a heavy saucepan and gradually bring to a boil over medium heat. Reduce the heat slightly to obtain a gentle simmer. Simmer the sauce until reduced by 1/4, 6 to 8 minutes. Transfer the sauce to clean jars and let cool to room temperature, then refrigerate until serving. The sauce will keep for several months, refrigerated.
  • Use as you would any sauce, noting the strong affinity this sauce has for chicken, ribs, and pork.

I use the Country Style Pork Ribs and I prefer cooking them on the grill using indirect heat for hours, but I have used the oven as well. I mop the sauce on often and generously. 1 cup Coca-Cola
1/2 cup A.1. Original Sauce
1 cup ketchup
1/2 teaspoon garlic powder
1 teaspoon liquid smoke
1/2 teaspoon fresh ground black pepper

Steps:

  • Combine all the ingredients in a heavy, non-reactive saucepan and gradually bring to a boil over medium heat.
  • Reduce the heat slightly to obtain a gentle simmer.
  • Simmer the sauce until reduced by a quarter, 6-8 minutes.
  • Use right away or transfer to a large jar, cover, cool to room temperature, and refrigerate.

PORK LOIN WITH COCA-COLA BBQ SAUCE

2 1-pound trimmed pork loin
1 tbsp garlic salt
1 pinch black pepper
1 tbsp Cajun spice
Olive oil
1 tbsp fine brown sugar
2 tbsp canola oil
3 tbsp diced jalapeno
2 tbsp diced garlic
3 cups ketchup
1/4 cup chicken stock
1 cup orange juice
1/2 cup molasses
1/4 cup Coca-Cola
1/2 cup brown sugar
1 tbsp liquid smoke
1 tsp garlic salt

Steps:

  • For the pork loin: Start by seasoning the pork really well all over with the garlic salt, Cajun spice, and the brown sugar. Then using your hand, pat the pork with the oil. On the grill or grill pan and medium heat cook for 8 to 12 minutes, rotating every couple of minutes. After the pork is five minutes from done, add the barbeque sauce and rotate so that the sauce sticks.
  • Remove and slice. Serve with Sauce.
  • For the sauce: In large sauce pan add the oil, heat the oil just a little and add the garlic, shallots, jalapeno; saute for 2 minutes, then add the remaining ingredients. Mix well and bring to a low simmer until sauce is combined. Check the flavor and adjust the sweetness if you like.

This is an awesome Barbecue Sauce. The taste is "just perfect". A lot of the bottled sauces are too tangy, too strong, etc. This does not get super thick and it has more of a mild flavor. You can use it on anything but the author highly recommends it on Chicken, ribs and pork. The recipe is from Steven Raichlen, author of The "Barbecue Bible".

2 Tbsp. extra-virgin olive oil
1 shallot, peeled and minced
2 cloves garlic, smashed and minced
2 Tbsp. ground New Mexico chili powder
1 Tbsp. ground Chipotle chili powder
1 tsp. ground cumin
1 tsp. dried thyme, rubbed between your fingers
1/2 tsp. red pepper flakes
1 C. Coca-Cola (or other cola)
1 C. tomato ketchup
2 Tbsp. fresh lime juice
1/4 c. molasses
3 Tbsp. honey
1 Tbsp. Dijon mustard
3 Tbsp. Balsamic vinegar

Steps:

  • In a medium saucepan, heat the oil over low heat. Add the shallot, garlic, chili powders, cumin, thyme, and red pepper flakes. Cover, and cook, stirring a few times, for about 10-12 minutes. The object is to sweat, not saute the shallots. Stir in the Coke, ketchup, lime juice, molasses, honey, Dijon mustard, and Balsamic vinegar, and bring to a simmer. Cook the sauce, uncovered, for about 15 minutes. Stir the sauce occasionally. Cook the sauce longer for more reduction, if you'd like a thicker sauce. Cool the sauce to room temperature before using. This will keep for about five days under refrigeration and covered.

1 Tbsp olive oil, extra virgin
1 medium onion, finely chopped
3 clove garlic, minced
2 c ketchup
1 can(s) coca cola
1/2 c apple cider vinegar
2 Tbsp brown sugar
1/2 Tbsp ground black pepper, i use coarse ground. i like to see it
2 Tbsp dijon mustard
1/2 tsp lemon juice
1 Tbsp worcestershire sauce

Steps:

  • 1. In a medium saucepan, over medium heat, add oil. Once heated, add the onion and garlic and saute until tender. Add all the remaining sauce ingredients and bring to a boil. Reduce heat to a simmer and cook uncovered, stirring frequently, for 1 hour 15 minutes.

1 -2 minced jalapeno (optional)

Steps:

  • Melt butter in a medium saucepan over medium high heat and saute the onion until translucent.

4 - chicken thighs
- salt and pepper
3 tablespoon(s) olive oil
8 ounce(s) mushrooms cut into pieces
2 small shallots diced
4 clove(s) garlic minced
5 tablespoon(s) flour
2 can(s) coca cola
1 cup(s) chicken stock
1 - bay leaf
- fresh parsley chopped

Steps:

  • Pat the chicken dry and season with salt and pepper. Place a large skillet on stove over medium high heat. Add the oil. Place the chicken in pan and cook until golden on one side then turn and cook until golden on other side. Remove from pan and set aside.
  • Add the mushrooms and onions to the pan. Saute until they are softened. Add the garlic. Saute one minute. Whisk in the flour and then add the coke and chicken stock. Whisk until smooth. Add the bay leaf.
  • Place the chicken back in the pan and turn heat to medium low and simmer for 25 to 30 minutes until chicken are no longer pink.
  • Serve over noodles, pasta or rice and top with parsley.
